The use of hydrocolloids in the modern meat industry is the one of prospective directions for improving functional and technological characteristics of meat and meat products, including poultry at long storage terms. A series of concrete requirements to functional-technological, physical-chemical and organoleptic parameters is offered for canned poultry in correspondence with minimal specifications for the quality of products of an animal origin. There is presented the study of the optimization of the process of meat products sterilization using meat of chicken-broilers, quails and hydrocolloids depending on physical-chemical and organoleptic properties. The parameters of quail meat use in recipes of canned poultry meat with hydrocolloids were considered. The influence of the sterilization process on characteristics of chicken-broiler and quail meat was established. There was revealed the essential difference in the influence on functional and technological parameters of canned quail meat using hydrocolloid mixtures comparing with canned chicken-broiler meat, manifested in changes of MKC (moisture keeping capacity), plasticity and salt content in jelly. At changing sterilization regimes, there takes place the change of physical and chemical characteristics of gels that correlates with organoleptic characteristics. For providing high quality parameters of canned poultry meat and industrial sterility, sterilization regimes for canned chicken-broiler meat must be realized for containers with the volume 500 with sterilization time no more than 90 minutes. For canned quail meat the sterilization process duration must be increased to 120 min at the temperature 115 ° Х

A method is provided for improving quality of cheese produced from a milk batch. A light beam from an incident light source impinges onto a surface of the milk batch, and light backscatter is optically detected during a coagulation process and correlated to an optimum cutting time for the milk coagulum. Next, light backscattered from a curd and whey mixture derived from the milk batch during a syneresis process is optically detected and correlated to an optimum syneresis endpoint. At least one of the backscattered light data, optical parameters developed from analysis of the backscattered light data, and whey fat dilution are correlated to at least one of a milk protein %, a milk fat %, a milk total solids content, a milk processing temperature, a curd moisture content, a curd moisture change over time, whey fat content, a whey fat loss, and a final curd yield

Includes abstract.Includes bibliographical references. This empirical study investigates the extent to which Ugandan fish and flower exporters are creating value and increasing their profitability through innovation activity and whether or not they are improving their ability to manage innovation projects effectively. It applied a mixed-methodological approach using a survey questionnaire and semistructured in-depth interviews administered on production, quality control, marketing and financial managers. It used primary and secondary data to develop financial models to estimate operating profits from different combinations of product, process and marketing innovations at industry and company levels. Empirical evidence shows that the lines of business that are associated with the highest profitability in one period change over time, thus confirming the need for and potential benefits to be gained from innovation

ANALYSIS OF QUALITY PROBLEMS IN PRODUCTION SYSTEM USING THE PDCA INSTRUMENT

    Get PDF
This model provides a framework for improving a process or system. It can be used as a guiding tool throughout the improvement project, for the development of specific projects when identified areas requiring improvement, or when anomalies or deviations from standard are detected in existing projects. The PDCA cycle has been created to be used as a dynamic model. Completing one of the stages of the cycle automatically leads to the start of the next stage. Following the principle of continuous quality improvement, the process can be reviewed at any time, and a new "change test" can begin

Evaluation of Shared Governance Implementation at a Community Hospital

    Get PDF
Shared governance is a model in which staff collaborate through a decentralized decision-making structure, sharing ownership and accountability and partnering to make decisions about clinical practice, professional development, patient experience, quality improvement, and research. The hospital shared governance project team aligned its shared governance model with the American Nurses Credentialing Center Pathway to Excellence standards. The purposes of this project were to do a process evaluation of shared governance implementation at one 64-bed community hospital in central Florida and make recommendations for continuous quality improvement. The project followed the plan-do-study-act methodology developed by Deming. Through the collection of meeting minutes and other shared governance documents, semi structured interviews with nurse leaders, and the results of an anonymous survey through SurveyMonkey, the process of shared governance implementation was evaluated. The major themes included the hospitals need to establish an effective communication system to ensure all 185 RNs are aware of its shared governance, restructure of the Nurse Practice Council, and a reinitiating of shared governance. Limitations of the project included the immaturity of the hospital at the time of implementation, nursing lack of knowledge about shared governance, lack of dedicated resources and competing priorities, and nursing leadership and unit turnover, which were barriers to shared governance implementation. Supporting shared governance contributes to social change by creating a nursing culture that promotes quality, nursing excellence, professional decision making, and a healthy work environment, ultimately improving outcomes for all stakeholders

Saving the Brain Matter(s): Improving Stroke Outcomes Utilizing a Direct to CT Workflow was a project implemented to improve outcomes for acute ischemic stroke patients arriving at a rural emergency department. The project focused on a revision of the emergency department workflow for acute ischemic stroke patients with an aim of lowering the door to needle time to under sixty minutes. An interdisciplinary team used lean methodology and the PDCA cycle to examine and revise the workflow. The workflow was revised to eliminate testing no longer required under the national clinical practice guidelines for the treatment of ischemic stroke. Within the new workflow patients arriving via the 911 system were taken directly from the ambulance to the CT scanner. Additionally, nursing care for all ischemic stroke patients eligible for potential alteplase treatment was increase from one nurse to two nurses until the decision to use or not use alteplase was made. After the interdisciplinary team developed the workflow over 140 healthcare professionals from multiple departments were educated on the process change and the workflow was implemented. After implementation the mean door to alteplase time dropped to forty-five minutes and the facility was recognized by the American Heart Association for providing rapid and quality care to acute ischemic stroke patients
