    Physico-chemical and grain cooking characteristics of selected rice cultivars grown in Morogoro

    A study was carried out at Sokoine University of Agriculture to characterize the local rice varieties grown in Morogoro Region basing on their physical-chemical characteristics and cooking quality parameters. Five cultivars of rice were analyzed and these included Kaling'anaula, Kihogo Red, Salama M17, Supa and Salama. The samples were collected from Crop museum, SUA. The chemical analysis was done to determine the proximate composition, gelatinization temperature and gel consistency as main determinants of cooking quality, sensory evaluation tests was done as determinants for consumer acceptance. The proximate composition results indicated protein content values between 7.94 and 9.46%, ash content between 0.55 and 0.97%, fat content between 0.57 and 0.85%, fiber content between 0.29 to 0.73%. The amylose content values were between 18.25 and 19.25%. The gel consistency results showed that all cultivars analysed were hard with the gel length values between 27.50 and 31.80 mm There was a significant differences in composition as well as acceptability between the varieties. In all aspects, Supa cultivar appeared to be the most superior with mean score of 4.30 while Kihogo Red was the least superior with mean score of 2.93. The differences in the cultivars could be from environmental as well as genetic factors. This pauses a need for more studies to be directed to these factors in order to come up with useful alternatives on how to manipulate them so as to improve the cooking quality parameters, improve production of the local rice cultivars and increase the market demand for local rice.     Physical and chemical characteristics of off vine ripened mango (Mangifera indica L.) fruit (Dodo)

    The need to develop the best off vine mango ripening technique for both consumption and processing was investigated. Some physical and chemical measurements were performed on mature Green Dodomangoes before and during a 3-day and 6-day ripening period by smoked pit ripening (SPR), ethylene (fruit generated) pit ripening (EPR), untreated pit ripening (UPR) and room temperature ripening (RTR) as a control method. The post harvest ripening changes in the quality characteristic of ripe mangoes were correlated among treatments and compared with similar changes in other mango varieties. Changes such as formation of sugars, decreased acidity, and increased carotene reflected the mostsignificant chemical changes in ripeness stage

    Food intake and dietary diversity of farming households in Morogoro region,Tanzania

    The Tanzanian economy depends heavily on agriculture and hence human labor provides much of the power needed for farming activities. This study was carried out to determine the diversity and dietary adequacy of farming households in four selected districts of Morogoro region in Tanzania. Adult household members from 140 households participated in the study. A 24-hour dietary recall, dietary diversity score and frequency of food consumption tools were used to assess and quantify nutrient intake and adequacy of consumed diets in farming households. Tanzania food composition tables were used to compute estimates of the energy intake, macro and micronutrients consumed by farming households. Analysis was done using SPSS version 18 and Microsoft excel version 10. Cereal food group was consumed in relatively large quantities compared to other food groups in the surveyed households. The contribution of cereal group to energy intake was 75-82%, protein 8-16% and fat 9-14%. Stiff porridge made of maize flour was the mostly consumed cereal dish followed by rice. The mean intake of energy per day was inadequate; the intake of energy for men was 1402 kcal/day while for female was 1347 kcal/day meeting only 52% and 72%, respectively of the recommended energy intake. Generally, the consumption of protein from the animal sources was significantly low in all districts. Ninety-nine percent of the households rarely consumed eggs; 83% rarely consumed meat and poultry. Consumption of milk and milk products was inadequate as 92% of the households indicated that they rarely consumed these products. The intake of fat was also low by 53% compared to the recommended intake for adults. The intake of iron, zinc, and calcium was 40, 53 and 64%, respectively, which was not sufficient to meet daily requirements. Low intake of nutrients was generally attributed to inadequate food intake due to low feeding frequency, poorly diversified diets and sub-optimal practices in food preparation and cooking. The results from surveyed areas indicated that all districts are rich in terms of bio-diversity and food availability, nevertheless the consumption of these foods in the study communities was inadequate with regards to quantity and quality. This situation compromises nutritional status and pre-disposes farming households to diseases and infections hence affects work output, labor productivity and wealth generation. Educating farmers on the importance of consuming diversified and adequate diets from different food groups will improve their nutrition situation and stimulate more production hence increased agricultural productivity.Key words: Dietary adequacy, Dietary diversity, Nutrition status, Tanzania farming household

    An assessment of post-harvest handling practices and food losses in a maize-based farming system in semi-arid areas of Central and Northern Tanzania was carried out in 2012. Seventeen crops were mostly cultivated by the farmers in the surveyed areas; maize (32%), sunflower (16%) and pigeon peas (12%) were the most cultivated while maize was the most stored. There are at least 7 months between two harvest seasons of each crop; while farmers sold the crops soon after harvest to cater for household expenditure (54%) and school fees (38%), the market prices increased significantly (P 0.05) within six months of storage. Most processing activities (winnowing, dehulling, drying, sorting and shelling) were carried out manually, almost entirely by women, but mechanized processing for maize, sunflower, millet, and sorghum were commonly practiced. Quantitative post-harvest losses of economic importance occur in the field (15%); during processing (13e20%), and during storage (15e25%). The main storage pests responsible for the losses are larger grain borers (Prostephanus truncatus), grain weevils (Sitophilus granarius) and, the lesser grain borer (Rhyzopertha dominica). Most of the farmers considered changes in weather (40%), field damage (33%), and storage pests (16%) as the three most important factors causing poor crop yields and aggravating food losses. However, survey results suggest that the farmers’ poor knowledge and skills on post-harvest management are largely responsible for the food losses. 77% of the surveyed farmers reported inadequate household foods and 41% received food aid during the previous year. Increasing farmers’ technical know-how on adaptation of the farming systems to climate variability, and training on post-harvest management could reduce food losses, and improve poverty and household food security.     Dry Taps? A Synthesis of Alternative “Wash” Methods in the Absence of Water and Sanitizers in the Prevention of Coronavirus in Low-Resource Settings

    Objective: Social distancing and hand washing with soap and water have been advocated as the main proactive measures against the spread of coronavirus. We sought to find out what other alternative materials and methods would be used among populations without running water and who may not afford alcohol-based sanitizers. Results: We reviewed studies that reported use of sand, soil, ash, soda ash, seawater, alkaline materials, and sunlight as possible alternatives to handwashing with soap and water. We identified the documented mechanism of actions of these alternative wash methods on both inanimate surfaces and at cellular levels. The consideration of use of these alternative locally available in situations of unavailability of soap and water and alcohol-based sanitizers is timely in the face of coronavirus pandemic. Further randomized studies need to be carried out to evaluate the effectiveness of these alternatives in management of SARS-Cov-2

    Microsatellite (SSR) Analysis on Genetic Diversity of (Coffea canephora) Germplasm in Kagera Region, Tanzania

    Coffea canephora (Robusta) is one of the two important coffee species grown in Tanzania for commercial purpose. Robusta coffee contributes 40 - 50% of the total coffee production in Tanzania. However, the production of Robusta coffee in Tanzania has been hampered by coffee wilt disease. Despites the importance of Robusta coffee in Tanzania, its genome has not thoroughly researched. A study was conducted to investigate the molecular diversity of cultivated and wild coffee found in Kagera region in Tanzania. One hundred twenty four genotypes (124) of cultivated and wild coffee were analyzed by simple sequence repeat (SSR) marker techniques using 12 microsatellite markers. Genetic diversity, similarity or dissimilarity, genetic distances between individuals and genetic differentiation between populations was analyzed. Findings indicate high genetic variations among cultivated and wild coffee genotypes ranging between 20 and 83%. Polymorphism was 80% among SSR markers with 8 loci. Two distinctive genetic groups were identified. The first genetic group comprised four distinctive genetic groups one to four.The second genetic group consisted of four genetic groups, five to eight. Wild coffee genotypes had similarities to some of cultivated C. canephora in groups one to four implying that some cultivated C. canephora originates from wild coffee. Groups’ five to eight comprise genotypes from cultivated C. canephora. Detailed study is needed to compare the identified eight (8) genetic groups of C. canephora in Kagera region in Tanzania with the already know groups worldwide

    Rain-Fed Farming System at a Crossroads in Semi-Arid Areas of Tanzania: What Roles do Climate Variability and Change Play?

    Positive changes, like adopting drought resistant crop varieties, in the rain-fed farming system (RFFS) in response to climate variability and change enhance system’s ability to support people’s living as opposed to negative changes, like lack of pastures, which put the system at risk of failure in supporting the living. Using participatory rural appraisal (PRA) and household survey, this paper examined the roles of climate variability and change in triggering changes in RFFS. Specifically, the paper: (i) assessed dominant crop and livestock farming system; (ii) assessed the change element of crop and livestock production systems; and (iii) examined factors for the changes in RFFS. A random sample of 388 households was used. Qualitative data analysis was done through content analysis. Binary logistic regression was used to assess factors that explain changes on RFFS. The results showed that dominant crops were different in each village. Secondly, some changes in crop varieties and in livestock grazing arrangements were noted in response to climate variability and change. Unlike the hypothesis (P>0.05), the results demonstrated that warming (ß = -10.61, Wald = 36.26, P ? 0.001) showed highest significant impact on likelihood of adopting new crop varieties relative to other factors. Similarly, drought (ß = 2.16, Wald = 6.82, P ? 0.009) showed highest impact on the likelihood of changing a grazing place. Yet, the changes were constrained by factors like natural resources protective policies, failure of crop varieties to withstand warming and drought, and poor land use management. Therefore, the RFFS was at a crossroads with implications on system sustainability and livelihoods. The government and private interventions should support farmers and agro-pastoralists to manage risks related to the changes in RFFS in response to climate variability and change.     African stakeholders' views of research options to improve nutritional status in sub-Saharan Africa

    Background Setting research priorities for improving nutrition in Africa is currently ad hoc and there is a need to shift the status quo in the light of slow progress in reducing malnutrition. This study explored African stakeholders' views on research priorities in the context of environmental and socio-demographic changes that will impact on nutritional status in Africa in the coming years. Methods Using Multi-Criteria Mapping, quantitative and qualitative data were gathered from 91 stakeholders representing 6 stakeholder groups (health professionals, food Industry, government, civil society, academics and research funders) in Benin, Mozambique, South Africa, Tanzania, Togo and Uganda. Stakeholders appraised six research options (ecological nutrition, nutritional epidemiology, community nutrition interventions, behavioural nutrition, clinical nutrition and molecular nutrition) for how well they could address malnutrition in Africa. Results Impact (28.3%), research efficacy (23.6%) and social acceptability (22.4%) were the criteria chosen the most to evaluate the performance of research options. Research on the effectiveness of community interventions was seen as a priority by stakeholders because they were perceived as likely to have an impact relatively quickly, were inexpensive and cost-effective, involved communities and provided direct evidence of what works. Behavioural nutrition research was also highly appraised. Many stakeholders, particularly academics and government were optimistic about the value of ecological nutrition research (the impact of environmental change on nutritional status). Research funders did not share this enthusiasm. Molecular nutrition was least preferred, considered expensive, slow to have an impact and requiring infrastructure. South Africa ranked clinical and molecular nutrition the highest of all countries. Conclusion Research funders should redirect research funds in Africa towards the priorities identified by giving precedence to develop the evidence for effective community nutrition interventions. Expanding research funding in behavioural and ecological nutrition was also valued and require multi-disciplinary collaborations between nutritionists, social scientists, agricultural and climate change scientists

    A Prospective Study of Growth and Biomarkers of Exposure to Aflatoxin and Fumonisin during Early Childhood in Tanzania

    Background: Aflatoxin and fumonisin are toxic food contaminants. Knowledge about effects of their exposure and coexposure on child growth is inadequate. Objective: We investigated the association between child growth and aflatoxin and fumonisin exposure in Tanzania. Methods: A total of 166 children were recruited at 6–14 months of age and studied at recruitment, and at the 6th and 12th month following recruitment. Blood and urine samples were collected and analyzed for plasma aflatoxin–albumin adducts (AF-alb) using ELISA, and urinary fumonisin B1 (UFB1) using liquid chromatography–mass spectrometry, respectively. Anthropometric measurements were taken, and growth index z-scores were computed. Results: AF-alb geometric mean concentrations (95% CIs) were 4.7 (3.9, 5.6), 12.9 (9.9, 16.7), and 23.5 (19.9, 27.7) pg/mg albumin at recruitment, 6 months, and 12 months from recruitment, respectively. At these respective sampling times, geometric mean UFB1 concentrations (95% CI) were 313.9 (257.4, 382.9), 167.3 (135.4, 206.7), and 569.5 (464.5, 698.2) pg/mL urine, and the prevalence of stunted children was 44%, 55%, and 56%, respectively. UFB1 concentrations at recruitment were negatively associated with length-for-age z-scores (LAZ) at 6 months (p = 0.016) and at 12 months from recruitment (p = 0.014). The mean UFB1 of the three sampling times (at recruitment and at 6 and 12 months from recruitment) in each child was negatively associated with LAZ (p < 0.001) and length velocity (p = 0.004) at 12 months from recruitment. The negative association between AF-alb and child growth did not reach statistical significance. Conclusions: Exposure to fumonisin alone or coexposure with aflatoxins may contribute to child growth impairment
