    Rostos descartáveis: a hipótese colonial que subjaz ao massacre de 21 de março de 2020 na prisão La Modelo em Bogotá

    This document aims to show a theoretical-hermeneutical reflection about the massacre which occurred in La Modelo, prison in Bogotá, Colombia, on March 21, 2020 in the framework of the health emergency unleashed by COVID-19, put under the view of the colonial hypothesis presented by Argolo, Piza and Lustosa (2016) and the concept of necropolitics from Mbembe (2011). The reading under these theoretical perspectives will be done from some press releases of March 21, 22 and 23 of different media which covered the events in their first moments. The selection of the clippings of the written press placed in digital media will be made according to the local relevance of the media.Este documento plantea una reflexión teórico-hermenéutica sobre la masacre ocurrida en la cárcel La Modelo de Bogotá, Colombia, el 21 de marzo de 2020 en el marco de la emergencia sanitaria desatada por el Covid-19, puesta bajo los lentes de la hipótesis colonial que exponen Argolo, Piza y Queiroz (2016) y el concepto de necropolítica desde Achille Mbembe (2011). La lectura bajo dichas perspectivas teóricas se hace desde algunas publicaciones de prensa de los días 21, 22 y 23 de marzo de diferentes medios de comunicación que fueron cubriendo los hechos en sus primeros momentos. La selección de notas en medios digitales, se hizo atendiendo a la relevancia nacional del medio de comunicación.Este documento apresenta uma reflexão teórico-hermenêutica sobre o massacre ocorrido no presídio La Modelo, em Bogotá, Colômbia, em 21 de março de 2020, no marco da emergência sanitária desencadeada por Covid-19, sob a ótica da hipótese colonial de que Argolo, Piza e Queiroz (2016) e o conceito de necropolítica exposto em Achille Mbembe (2011).     International audiencePhase change in biological tissues may be affected by electrical and magnetic disturbances. Freezing under static electric field of water, aqueous solution and pork meat has been investigated by the authors, showing the ability of this process to refine ice crystals in frozen matrices. SEF affects the supercooling, which is usually reduced with SEF. SEF also triggers the nucleation. The use of radiofrequencies and microwaves has also been used recently by researchers to promote refined ice crystallization in food systems. A focus is proposed on recent experiments done on solidification of a vegetable fat mix (Vegetaline ® – France) under static electric field (SEF). Results showed that SEF affects the supercooling and the phase change temperature of the fat mix indicating a possible impact on the crystalline structure of the solidified fat

    Ohmic heating applied to the baking process: experimental and numerical approaches

    International audienceThis work aims at studying the feasibility of ohmic heating (OH) technology applied to the baking process. The method includes proofing (fermentation) and baking and leads to the production of crustless sandwich bread without the need of cutting the crust away, in a shorter time and with theoretically lower energy costs than conventional baking. An ohmic cell was made to study the electrical conductivity (EC) of bread dough under different experimental conditions. The results showed that the EC increased linearly with the temperature, except during the starch gelatinization stage (60 – 76 °C) because of the bounding of water. The EC decreased with the porosity of the dough when fermented by yeasts, and drastically decreased with the reduction of salt content in the dough, showing the need to control the product formulation. An ohmic baking oven monitored by a PLC was developed to perform both proofing and baking in the same apparatus. The results showed that using OH to quickly reach the optimal temperature of yeast activity (35 °C) significantly reduced the lag phase and shortened the total proofing time. A numerical model was developed and validated by experimental results, taking into account heat and water (vapour and liquid water) transfers. The results confirmed the importance of temperature gradients between the surface of the electrodes and the core of the product, first observed by the underbaked aspect of the bread loaf on its sides.     Modelling heat and mass transfer in bread baking with mechanical deformation

    International audienceIn this paper, the thermo-hydric behaviour of bread during baking is studied. A numerical model has been developed with Comsol Multiphysics© software. The model takes into account the heat and mass transfers in the bread and the phenomenon of swelling. This model predicts the evolution of temperature, moisture, gas pressure and deformation in French “baguette” during baking. Local deformation is included in equations using solid phase conservation and, global deformation is calculated using a viscous mechanic model. Boundary conditions are specified with the sole temperature model and vapour pressure estimation of the oven during baking. The model results are compared with experimental data for a classic baking. Then, the model is analysed according to physical properties of bread and solicitations for a better understanding of the interactions between different mechanisms within the porous matrix

    Congélation de produits alimentaires : amélioration de la cristallisation par applications de micro-ondes

    National audienceLa qualité d'un produit congelé est liée à la cristallisation ; en règle générale, plus la taille des cristaux de glace est petite, meilleure sera la qualité du produit. Un procédé innovant a été évalué dans le cadre du projet européen (FREEZEWAVE). Une assistance micro-ondes (2450 MHz) a été utilisée pour perturber le changement d'état de l'eau. Sur un prototype de laboratoire, les expériences ont confirmé que, quels que soient le mode d'application des micro-ondes et les paramètres du procédé, on observe une réduction de la taille des cristaux. Cet impact positif a été obtenu sur diverses matrices alimentaires, dont des pommes de terre. Un modèle de prédiction a par ailleurs permis de qualifier ces cinétiques.     La imagen y la narrativa como herramientas para el abordaje psicosocial en escenarios de violencia.

    En el presente trabajo tomamos la imagen y la narrativa como herramientas para el abordaje psicosocial en escenarios de violencia, donde damos a conocer la problemática de la violencia en Colombia que ha causado innumerables víctimas las cuales demandan ayuda profesional de forma inmediata. Esta ayuda se debe ofrecer en los momentos de crisis y posteriores al trauma ya que la vida del individuo y sus relaciones sociales se ven afectadas. Las víctimas de la violencia requieren intervenciones específicas que incluyan todos los sectores de la comunidad en la resolución de sus problemas; es decir, una mediación psicológica que pueda contribuir al bienestar de la salud mental de manera individual y colectiva. Las intervenciones psicosociales en el relato de Gloria y el caso Pandurí, fueron diseñadas teniendo en cuenta el tipo de violencia de la población afectada, el ímpetu y permanencia de la misma, la historia de la población y finalmente otros aspectos socioculturales; donde se evaluaron los recursos de la población y la regeneración de un sentido de unidad colectivo; garantizando un trabajo cooperativo que logre una reconstrucción integral de las víctimas a la vida social. En los casos analizados de Gloria y Panduri se identificó la importancia del psicólogo en los procesos de recuperación, brindando acompañamiento integral que incluya un análisis de la problemática social desde diferentes perspectivas; siendo un puente facilitador que genere ideas y acciones entorno al cambio, orientando a las víctimas en sus procesos de reconstrucción de identidad. Se identificó en los casos analizados una herramienta muy importante en los procesos de recuperación de las víctimas de la violencia, la cual es el enfoque narrativo como terapia que busca convertir las experiencias de victimización en historias de sobrevivencia, esperanza, y superación, permitiéndoles a la persona reconstruir sus historias, resaltar sus actos heroicos y logros, superar la adversidad, y apreciar los recursos de la experiencia, siendo esta un medio para comprender que las historias que contamos transforman nuestra identidad, generan sueños, crean nuevos propósitos, y convierten experiencias dolorosas en oportunidades de aprendizaje donde la violencia pierda el protagonismo que paraliza y afecta la vida del individuo.In the present work, we take the image and the narrative as tools for the psychosocial approach in scenarios of violence, where we present the problem of violence in Colombia that has caused innumerable victims who demand professional help immediately. This help should be offered in times of crisis and after the trauma of the individual's life and social relationships are affected. Victims of violence require specific interventions that include all sectors of the community in the resolution of their problems; that is, a psychological mediation that can contribute to the well-being of mental health individually and collectively. Psychosocial interventions in the story of Gloria and the Pandurí case, were designed taking into account the type of violence of the affected population, the impetus and permanence of it, the history of the population and finally other socio-cultural aspects; where the resources of the population were evaluated and the regeneration of a sense of collective unity; guaranteeing a cooperative work that achieves an integral reconstruction of the victims to the social life. In the analyzed cases of Gloria and Panduri, the importance of the psychologist in the recovery processes was identified, providing comprehensive accompaniment that includes an analysis of the social problems from different perspectives; being a facilitating bridge that generates ideas and actions around change, guiding the victims in their processes of identity reconstruction. In the cases analyzed, a very important tool was identified in the processes of recovery of the victims of violence, which is the narrative approach as a therapy that seeks to turn the experiences of victimization into stories of survival, hope, and improvement, allowing the person to reconstruct their stories, highlight their heroic acts and achievements, overcome adversity, and appreciate the resources of experience, this being a means to understand that the stories we tell transform our identity, generate dreams, create new purposes, and turn painful experiences in learning opportunities where violence loses the protagonist that paralyzes and affects the life of the individual
