    Child Age and Gender Do Not Moderate the Relationship Between Parenting Styles and Child Anxiety

    The purpose of this study was to investigate whether particular parenting styles are correlated with childhood anxiety levels. The interactive effect of child age and gender on child anxiety levels was examined as well. Finally, it was hypothesized that child age and gender may moderate the relationship between parenting styles and child anxiety levels. Thus, as part of a further analysis, the effects of age and gender on the parenting style-child anxiety relationship were studied. Novel analyses were conducted on data previously collected as part of a larger study, the School-Based Treatment of Anxiety Research Study (STARS), by the child/adolescent anxiety and mood program at UConn Health. Two-hundred and sixteen children and adolescents (ages 6-18) and their parents were administered the Egna Minnen Betraffande Uppfostran (EMBU) questionnaire, which gathers information regarding parenting styles, and the Screen for Child Anxiety Related Emotional Disorders (SCARED) questionnaire, which identifies children’s anxiety levels. A moderate correlation between overprotective, rejection, and anxious rearing styles and child anxiety levels was found. In addition, female adolescents had significantly higher anxiety levels than male adolescents, male children, and female children. Surprisingly, neither child age nor gender influenced the relationship between parenting styles and child anxiety levels

    Power ultrasound in meat processing

    Ultrasound has a wide range of applications in various agricultural sectors. In food processing, it is considered to be an emerging technology with the potential to speed up processes without damaging the quality of foodstuffs. Here we review the reports on the applications of ultrasound specifically with a view to its use in meat processing. Emphasis is placed on the effects on quality and technological properties such as texture, water retention, color, curing, marinating, cooking yield, freezing, thawing and microbial inhibition. After the literature review it is concluded that ultrasound is a useful tool for the meat industry as it helps in tenderisation, accelerates maturation and mass transfer, reduces cooking energy, increases shelf life of meat without affecting other quality properties, improves functional properties of emulsified products, eases mould cleaning and improves the sterilization of equipment surfaces

    The Effect of Previous Life Cycle Phase on the Growth Kinetics, Morphology, and Antibiotic Resistance of Salmonella Typhimurium DT104 in Brain Heart Infusion and Ground Chicken Extract

    Growth models are predominately used in the food industry to estimate the potential growth of selected microorganisms under environmental conditions. The growth kinetics, cellular morphology, and antibiotic resistance were studied throughout the life cycle of Salmonella Typhimurium. The effect of the previous life cycle phase [late log phase (LLP), early stationary phase (ESP), late stationary phase (LSP), and early death phase (EDP)] of Salmonella after reinoculation in brain heart infusion broth (BHI), ground chicken extract (GCE), and BHI at pH 5, 7, and 9 and salt concentrations 2, 3, and 4% was investigated. The growth media and previous life cycle phase had significant effects on the lag time (λ), specific growth rate (μmax), and maximum population density (Ymax). At 2 and 4% salt concentration, the LLP had the significantly (p < 0.05) fastest μmax (1.07 and 0.69 log CFU/ml/h, respectively). As the cells transitioned from the late log phase (LLP) to the early death phase (EDP), the λ significantly (p < 0.05) increased. At pH 5 and 9, the EDP had a significantly (p < 0.05) lower Ymax than the LLP, ESP, and LSP. As the cells transitioned from a rod shape to a coccoid shape in the EDP, the cells were more susceptible to antibiotics. The cells regained their resistance as they transitioned back to a rod shape from the EDP to the log and stationary phase. Our results revealed that growth kinetics, cell’s length, shape, and antibiotic resistance were significantly affected by the previous life cycle phase. The results of this study also demonstrate that the previous life cycle should be considered when developing growth models of foodborne pathogens to better ensure the safety of poultry and poultry products

    The welfare of water buffaloes during the slaughter process: a review

    This paper reviews the scientific literature on water buffalo welfare in all stages of the live animal supply chain from the farm gate to slaughter (loading/unloading, markets, transportation, handling, lairage, stunning and slaughter) with the objective of identifying risk factors and potential mitigation strategies. Although in some countries legislation exists to protect the welfare of farm animals during transport and killing, the handling practices used to load and unload buffaloes and move them in livestock markets and abattoirs are often harsh. This is frequently due to inadequate equipment designed principally for cattle, and the fact that water buffaloes are considered more temperamental than cattle. Additionally, more reactive animals have increased stress responses to handling, which can lead to more negative human interventions with increased numbers of skin lesions and bruises to the carcasses. During transport, buffaloes may suffer periods of thermal stress due to overstocking, inadequate ventilation and because in many tropical climates trips are made during the hottest time of the day. The anatomical and physiological characteristics of water buffalo make them particularly susceptible to thermal stress in the absence of water for wallowing. Although water buffaloes belong to the same Bovidae family as domestic cattle, certain anatomical features of the head make effective stunning very problematic. Buffaloes have extensive sinuses and frontal bones, meaning that the penetrating captive bolt devices recommended for cattle may prove ineffective in reliably inducing unconsciousness. There is a need for further development of procedures, stunning positions and appropriate devices to improve the efficiency of buffalo stunning. Finally, in many parts of the world where buffalo are routinely slaughtered in basic conditions without prior stunning. Slaughter without stunning can result in pain and stress associated with delays in the time to loss of consciousness, pain from the cutting of the neck and potential distress associated with aspiration of blood into the respiratory tract. Specific legislation, guidelines and handler/stockman/operator training programmes should be developed to improve the welfare of buffaloes during all ante mortem stages of loading, unloading, handling, stunning and slaughter
