    Use of juvenile grape berry as antioxidant rich food ingredient

    Both grape and wine production have several useful by-products what have been discovered more and more due their important positive health effects in the last decades. The grape seed is one of them because its high antioxidant power. On the other hand, the marc is also more and more widely evaluated because of its high amount and useful chemical components. However, the grape berries what arise during cluster or grape thinning are rarely evaluated. Their positive properties and high antioxidant activity has been well known for a long time but their utilization is very rare. It is known as verjus, that is known from its sour taste as souring agent, but in Hungary it is not known. In our research we have evaluated six grape varieties in the Tokaj region during grape maturing in three stages of veraison. Clusters were collected and berries were removed from the pedicles manually and the chemical composition of whole berries, separated seeds and peel and flesh were analysed. Furthermore, dried berry parts were grinded and added to wheat flour and biscuits made from them were also analysed both chemically and sensory. We found that their use can result antioxidant rich and tasty bakery products

    The role of salt form and concentration on the rheological properties of bakery products

    The effect of different salt forms and concentrations were evaluated on the rheological properties of dough made from wheat and rye flours. Our aim was to investigate that how does the sodium chloride change the properties of gluten network and therefore the structure of bakery products and what effects can be experienced when it is substituted by other organic and inorganic salts. Different rheological tests were used to monitor the effects on dough (Farinograph, Alveograph and Extensigraph tests) and on the end-product (texture analysis, sensory analysis). It was found that all the salt forms significantly influenced the rheological parameters of dough and not the sodium chloride addition had the most favourable effect in every case

    The Structure of Hyperalkaline Aqueous Solutions Containing High Concentrations of Gallium - a Solution X-ray Diffraction and Computational Study

    Highly concentrated alkaline NaOH/Ga(OH)3 solutions with 1.18 M Ga(III)T 2.32 M and 2.4 M NaOHT 4.9 M (where the subscript T denotes total or analytical concentrations) have been prepared and investigated by solution X-ray diffraction and also by ab initio quantum chemical calculations. The data obtained are consistent with the presence of only one predominant Ga(III)-bearing species in these solutions, that is the tetrahedral hydroxo complex Ga(OH)4–. This finding is in stark contrast to that found for Al(III)-containing solutions of similar concentrations, in which, besides the monomeric complex, an oxo-bridged dimer was also found to form. From the solution X-ray diffraction measurements, the formation of the dimeric (OH)3Ga–O–Ga(OH)32– could not unambiguously be shown, however, from the comparison of experimental IR, Raman and 71Ga NMR spectra with calculated ones, its formation can be safely excluded. Moreover, higher mononuclear stepwise hydroxo complexes, like Ga(OH)63–, that have been claimed to exist by others in the literature, was not possible to experimentally detect in these solutions with any of the spectroscopic techniques used

    Automatic deployment of interoperable legacy code services

    The Grid Execution Management for Legacy Code Architecture (GEMLCA) enables exposing legacy applications as Grid services without re-engineering the code, or even requiring access to the source files. The integration of current GT3 and GT4 based GEMLCA implementations with the P-GRADE Grid portal allows the creation, execution and visualisation of complex Grid workflows composed of legacy and nonlegacy components. However, the deployment of legacy codes and mapping their execution to Grid resources is currently done manually. This paper outlines how GEMLCA can be extended with automatic service deployment, brokering, and information system support. A conceptual architecture for an Automatic Deployment Service (ADS) and for an x-Service Interoperability Layer (XSILA) are introduced explaining how these mechanisms support desired features in future releases of GEMLCA
