    Fermentation Of Multigrain Dough – An Approach To Reduce Glycemic Index For Healthy Bread

    The use of sourdough as the starter culture for bread making is one of the oldest processes in food fermentation and is very much prevalent in being used for the manufacture of various multigrain breads. The fermentation process of breads from mixed flours is one way, reported to reduce the glycemic index as compared to white bread. In this paper, we have discussed the use of (autochthonous) native culture vs pure culture use, in fermentation to prepare a starter culture sourdough by propagative fermentation. Since such a dough is incorporated in the sourdough bread making process (1:3), by the initial process of intermittent back-slopping (at intervals of 3.5 and 7 days) to propagate sourdough with a starter culture, as a part of the process, we observed the reduction in glycaemic index of the sourdough itself to as low as GI=40, at 3rd day of fermentation when the pure consortium and at 5th day of fermentation GI=43, when the native consortium was used. The sourdough process is thus an essential tool, aimed to make healthy breads, as it is incorporated as an ingredient in the process, to make sourdough bread

    Spectroscopy of the recurrent nova V3890 Sagittarii 18 d after the 1990 outburst

    The spectrum of the recurrent nova V3890 Sgr, obtained from the Vainu Bappu Observatory 18 d after the 1990 outburst maximum, is presented. The nova was in the coronal line phase. The spectrum is similar to that of the recurrent nova RS Oph. An extinction E(B – V) = 1.1 is derived from the B – V colours, and from Balmer and He I line ratios. From the maximum magnitude-rate-of-decline relations for a nova, M v= – 8.6 mag is estimated, which places the nova at a distance of about 5 kpc. Balmer line fluxes are used to derive the density, ∼ 10 9 cm -3, and the mass of the ejected ionized shell, ∼10 -7 M☉. The temperature and radius estimates for the ionizing source are 3 × 10 5 K and 0.06 R☉. A helium abundance of 0.23 is estimated

    An enabling framework for blockchain in tourism

    This viewpoint article proposes an enabling framework that identifies the use of various blockchain technologies in tourism and their applications (digitalization, automation, disintermediation, and intelligent environment) across the different stages of travel (pre-trip, during the trip, and post-trip). As we know, the tourism sector contributes immensely to world GDP and job creation. However, the COVID-19 pandemic, even after two years since it first appeared, continues to adversely impact the tourism prospects of countries across the world due to nationwide lockdowns and travel restrictions. As the world tries to adapt to the “new normal,“ the tourism sector is forced to re-think its ways of doing business and bring about innovations to facilitate the new norms of contactless and safe transactions. Also, the sector, more than ever, need to effectively deal with its inherent challenges such as transparency and credibility of information, fraudulent practices, opportunistic behavior of intermediaries, and foreign currency risks. Blockchain technology can transform the tourism sector by offering innovative solutions that address its pressing issues. However, our current understanding of blockchain application in tourism is quite limited, with previous work being largely fragmented and narrow in terms of both scope and application. We foresee that the insights offered in this viewpoint, including the framework, will advance both theory and practice and facilitate the implementation of blockchain-enabled solutions across different travel stages

    Chiral gauge theories in two dimensions with (0,2) supersymmetry are central in the study of string compactifications. Remarkably little is known about generic (0,2) theories. We consider theories with branches on which multiplets with a net gauge anomaly become massive. The simplest example is a relevant perturbation of the gauge theory that flows to the CP(n) model. To compute the effective action, we derive a useful set of Feynman rules for (0,2) supergraphs. From the effective action, we see that the infra-red geometry reflects the gauge anomaly by the presence of a boundary at finite distance. In generic examples, there are boundaries, fluxes and branes; the resulting spaces are non-Kahler

    It has been shown that 1,2-cyclononadiene and 1,2-cyclotridecadiene undergo 78 and 100% hydroboration respectively, with disiamylborane. 1,2-Cyclononadiene gave products which represented 83% attack of boron at the central carbon atom and 17% attack at the terminal carbon atom. 1,2-Cyclotridecadiene gave 62% central carbon attack and 38% terminal carbon attack. The reactivity and selectivity may be explained mainly in terms of steric effects on a four-centered transition state

    The main source of Bacterial contamination of Estuary waters are domestic waste water and sewage discharge. In this present investigation, Green Mussels were collected from three different stations of Chennai Coast - Ennore, Royapuram and Muttukadu. The mussels were degutted and bacteria were isolated using selective and non-selective agar medium and further confirmed by biochemical tests. The organisms were ident illed to generic or group level according to Bergey's manual of systematic Bacteriology. Different group of fecal coli forms and Vibrio spp. have been isolated. Escherichia coli, Vibrio alginolyticus, V. parahaemolyticus and V. harveyi were the dominant species. Vibrio parahaemolyticus, a facultative pathogen widely complicated in outbreaks of gastroenteritis related to the consumption of improperly processed seafood was present in the gut of Green Mussels

    Proposal of a topological M(atrix) theory

    Keeping in mind the several models of M(atrix) theory we attempt to understand the possible structure of the topological M(atrix) theory ``underlying'' these approaches. In particular we are motivated by the issue about the nature of the structure of the vacuum of the topological M(atrix) theory and how this could be related to the vacuum of the electroweak theory. In doing so we are led to a simple topological matrix model. Moreover it is intuitively expected from the current understanding that the noncommutative nature of ``spacetime'' and background independence should lead to a topological Model. The main purpose of this note is to propose a simple topological Matrix Model which bears relation to F and M theories. Suggestions on the origin of the chemical potential term appearing in the matrix models are given.Comment: 14 pages revte
