    The influence of guar gum on textural and sensory properties of rolls made from semi-finished frozen products

    Textural and sensory properties of rolls produced from semi-finished frozen products with additions of guar gum were assessed. A commercial wheat flour T 512, ingredients such as yeast Saccharomyces cerevisiae, rapeseed oil, sodium chloride were used for preparing dough and final products. Guar gum and commercial additive Trial RC2 were used as additives for production. The textural properties of rolls were measured by a TA-XT Plus Texture Analyzer. All samples were evaluated by selected assessors. A five-point hedonic scale was used for evaluation characteristics such as taste, pliancy, texture, porosity, stickiness, gumminess, crispness and quality. The obtained data showed nonsignificant difference in moisture of rolls after baking and 3 days after baking. Control sample of rolls had higher firmness in comparison to other samples with guar gum after baking. Samples of rolls with higher addition of guar gum (10 g.kg-1 and 15 g.kg-1) had less firmness in comparison to control sample and sample with 5 g.kg-1 of guar gum. Sensory analysis showed negligible differences among all samples in monitored characteristics. Sensory assessors evaluated all samples as identical. Increased addition of guar gum in rolls led to the extension of shelf life (lower firmness) at unchanged sensory properties of the rolls

    Modulation of metabolic activity of phagocytes by antihistamines

    The purpose of the study was to investigate the effects of H1-antihistamines of the 1st generation (antazoline, bromadryl, brompheniramine, dithiaden, cyclizine, chlorcyclizine, chlorpheniramine, clemastine) and the 2nd generation (acrivastine, ketotifen, and loratadine) on the respiratory burst of phagocytes. Reactive oxygen species generation in neutrophils isolated from rat blood was measured using luminol-enhanced chemiluminescence. Changes in nitrite formation and iNOS protein expression by RAW 264.7 macrophages were analysed using Griess reaction and Western blotting. The antioxidative properties of drugs in cell-free systems were detected spectrophotometrically, luminometrically, fluorimetrically, and amperometrically. The majority of the H1-antihistamines tested (bromadryl, brompheniramine, chlorcyclizine, chlorpheniramine, clemastine, dithiaden, and ketotifen) exhibited a significant inhibitory effect on the chemiluminescence activity of phagocytes. H1-antihistamines did not show significant scavenging properties against superoxide anion and hydroxyl radical, thus this could not contribute to the inhibition of chemiluminescence. H1-antihistamines had a different ability to modulate nitric oxide production by LPS-stimulated macrophages. Bromadryl, clemastine, and dithiaden were the most effective since they inhibited iNOS expression, which was followed by a significant reduction in nitrite levels. H1-antihistamines had no scavenging activity against nitric oxide. It can be concluded that the effects observed in the H1-antihistamines tested are not mediated exclusively via H1-receptor pathway or by direct antioxidative properties. Based on our results, antihistamines not interfering with the microbicidal mechanisms of leukocytes (antazoline, acrivastine and cyclizine) could be used preferentially in infections. Other antihistamines should be used, under pathological conditions accompanied by the overproduction of reactive oxygen species

    V mé bakalářské práci se chci věnovat hodnocení zaměstnanců v organizaci. Uvedené téma jsem zvolila proto, že dnes většina lidí, zabývajících se řízením lidských zdrojů, ví a zná jeho důležitost při plnění cílů v organizacích. I přesto, že zainteresovaní jsou vzděláváni voboru personálního řízení, znají důležitost všech personálních činností, mnohdy na některé zapomínají. Jednou z těchto opomíjených činností je i hodnocení zaměstnanců. Z mé praxe na personálních odborech či odděleních mohou konstatovat, že to tak skutečně je. Nevím, zda je to z důvodu velké pracnosti při přípravě hodnocení zaměstnanců, či nechuti vedoucích pracovníků "ztrácet" čas rozhovory s podřízenými, či komplikacemi, které přijdou po ukončení hodnocení.Katedra andragogiky a personálního řízeníFilozofická fakult

    This bachelor's thesis tries to describe the economic development in Bulgaria and Romania from 2007 to 2010. The thesis is divided into three chapters. The first part describes the economic development in Bulgaria and Romania from the nineties of the 20th century, when it went through a period of transition to a market economy, to the year 2006, which was the last year before joining the European Union. The second chapter contains a detailed description of the main economic indicators in both countries in the period from 2007 to 2010. The last part is a comparison of Bulgaria and Romania by economic indicators. In some areas, the development of both countries was very similar, although some economic indicators recorded a significantly different or at least reverse trend. The very end of the thesis is focused on possible future economic development in both countries

    Bakalářská práce popisuje vývoj ekonomik Bulharska a Rumunska od roku 2007 do roku 2010. Práce je rozdělena do tří kapitol. Pro uvedení souvislostí je v první části práce, popsán ekonomický vývoj Bulharska a Rumunska od 90. let 20. století, kdy procházely obdobím transformace z plánovitých ekonomik na ekonomiky tržní, až do roku 2006, který byl posledním rokem před vstupem do Evropské unie. Druhá kapitola obsahuje podrobnější popis významných ekonomických ukazatelů obou zemí. Jedná se o období od roku 2007 do roku 2010. Poslední část práce je věnována porovnání Bulharska a Rumunska podle jednotlivých ekonomických ukazatelů. V některých oblastech byl vývoj v obou zemích velmi podobný, avšak některé ekonomické ukazatele zaznamenávaly výrazně opačný nebo alespoň rozdílný trend.     The aim of the bachelor thesis was to elaborate a research on Sorbus L. genus, focused on species and interspecies important in pomiculture. Specifically, to characterize selected species on the basis of botanical and pomological aspects, environmental demands, ecology and growing demands. Further, to describe the processing of fruits and other parts of the plant, important for food processing, health service and industry, thanks to the contents of specific substances. Part of the thesis is also focused on myths and folk superstitions, that the Sorbus L. genus can protect people from all evil. The importance of the thesis lies in returning of this almost forgotten genus to people´s awareness as well as reporting on particular species and interspecies important in pomiculture
