    Protein isolate and inulin: chemical, rheological and structural basis

    Soy protein isolate is typical vegetable protein with health-enhancing activities. Inulin, a prebiotic no digestible carbohydrate, has functional properties. A mashed potato serving of 200 g with added soy protein isolate and inulin concentrations of 15?60 g kg provides from 3 to 12 g of soy protein isolate and/or inulin, respectively. Currently, no information is available about the possible texture-modifying effect of this non-ionizable polar carbohydrate in different soy-based food systems. In this study, the effect of the addition of soy protein isolate and inulin blends at different soy protein isolate: inulin ratios on the degree of inulin polymerization and the rheological and structural properties of fresh mashed and frozen/thawed mashed potatoes were evaluated. The inulin chemical structure remained intact throughout the various treatments, and soy protein isolate did not affect inulin composition being a protein compatible with this fructan. Small-strain rheology showed that both ingredients behaved like soft fillers. In the frozen/thawed mashed potatoes samples,0 addition of 30 : 30 and 15 : 60 blend ratios significantly increased elasticity (G value) compared with 0 : 0 control, consequently reducing the freeze/thaw stability conferred by the cryoprotectants. Inulin crystallites caused a significant strengthening effect on soy protein isolate gel. Micrographs revealed that soy protein isolate supports the inulin structure by building up a second fine-stranded network. Thereby, possibility of using soy protein isolate and inulin in combination with mashed potatoes to provide a highly nutritious and healthy product is promising

    Extraction and characterization of antioxidant peptides from fruit residues

    Fruit residues with high protein contents are generated during the processing of some fruits. These sustainable sources of proteins are usually discarded and, in all cases, underused. In addition to proteins, these residues can also be sources of peptides with protective effects against oxidative damage. The revalorization of these residues, as sources of antioxidant peptides, requires the development of suitable methodologies for their extraction and the application of analytical techniques for their characterization. The exploitation of these residues involves two main steps: the extraction and purification of proteins and their hydrolysis to release peptides. The extraction of proteins is mainly carried out under alkaline conditions and, in some cases, denaturing reagents are also employed to improve protein solubilization. Alternatively, more sustainable strategies based on the use of high-intensity focused ultrasounds, microwaves, pressurized liquids, electric fields, or discharges, as well as deep eutectic solvents, are being implemented for the extraction of proteins. The scarce selectivity of these extraction methods usually makes the subsequent purification of proteins necessary. The purification of proteins based on their precipitation or the use of ultrafiltration has been the usual procedure, but new strategies based on nanomaterials are also being explored. The release of potential antioxidant peptides from proteins is the next step. Microbial fermentation and, especially, digestion with enzymes such as Alcalase, thermolysin, or flavourzyme have been the most common. Released peptides are next characterized by the evaluation of their antioxidant properties and the application of proteomic tools to identify their sequences

    La orientación educativa se asume como parte del conjunto de factores que favorecen la calidad de la enseñanza y es uno de los principios a los que debe atender la acción educativa. La institucionalización de la orientación plantea la presencia de nuevos profesionales en el contexto educativo y, estos profesionales de la orientación, se conciben como agentes de innovación y mejora de la calidad de la intervención educativa, por lo que se postula que docencia y orientación confluyen en una misma intervención educativa. A lo largo de los últimos tres años, en el marco del Proyecto I+D “La transición escuela obligatoria-trabajo: los Departamentos de Orientación de los IES y la inserción laboral de los alumnos que abandonan la escuela tras la Educación Secundaria Obligatoria (ESO)”, un grupo de investigación de la Universidad de Córdoba analiza las prioridades de la orientación educativa en los Institutos de Enseñanza Secundaria; la labor de los orientadores en el ámbito de la orientación académica y profesional y la percepción del alumnado saliente acerca de la información recibida en sus centros de referencia. La exploración de las opiniones del alumnado mediante encuesta, y del talante y actividades de sus orientadoras y orientadores, mediante entrevista semiestructurada, ponen de manifiesto que las trayectorias escolares y de transición laboral dependen fuertemente de los condicionantes económicos, sociales y culturales de origen. Las vocaciones, actitudes y expectativas respecto a su futuro académico y laboral se construyen en medio de un entramado de relaciones sociales con el que hay que contar y sobre el que hay que actuar.Educational orientation is assumed as part of the set of factors that promote the quality of teaching and is one of the principles that must meet the educational activity. The institutionalization of the orientation posed by the presence of new professionals in the educational context, and these professionals for guidance, are conceived as agents of innovation and improving the quality of the educational intervention, which posits that teaching and counseling at the confluence the same educational intervention. Throughout the past three years, under the R & D Project "The compulsory school- work transition: The Guidance Department of the IES and the employment of students who leave school after Secondary Education (ESO), a research group at the University of Cordova discusses the priorities of educational guidance in secondary schools, the work of counselors in the field of academic and professional orientation and perception of the outgoing students about the information received at their centers. Exploring the views of the student survey, and the mood and activities of its practitioners and guide through qualitative interviews reveal that the trajectories of transition and school work are heavily dependent on the economic, social and cultural origin. Vocations, attitudes and expectations about their future academic work and are built in a web of social relations with which we must rely on and that we must act

    Estimation of Aneurysm Wall Motion from 4D Computerized Tomographic Angiography Images

    It is widely accepted that wall shear stressis associated to aneurysm formation, growthand rupture. Early identification of potential risk factors may contribute to decide the treatment and improve patient care. Previous studies have shown associations between high aneurysm wall shear stress values and both elevated risk of rupture and localization of regions of aneurysm progression. Based on the assumption that damaged regions of the endothelium have different mechanical properties, regions with differentiated wall displacement amplitudes are expected. A previous approach based on the analysis ofbidimensional dynamic tomographic angiography images at a limited number of points during the cardiac cycle showed only small displacements in some patients using that simplified and semi-automatic low resolution methodology. The purpose of this work is to overcome some of those limitations. High time and spatial resolution four dimensional computerized tomographic angiography images of cerebral aneurysms were acquired and analyzed in order to identify and characterize wall motion. Images were filtered andsegmented at nineteentime points during the cardiac cycle.An average image was computed to generate the vascular model. Anunstructured mesh of tetrahedral elements was generated using an advancing front technique. A finite element blood flow simulationwas carried out under personalized pulsatile flow conditions. A fuzzy c-means clustering algorithm was used to estimate regions that exhibit wall motion within the aneurysm sac.     Respirometric study of optical brighteners in textile wastewater

    Optical brighteners (OBs) are colorless fluorescent dyes, widely used in industry to improve whiteness in materials. Nearly 80% of all OBs in the market are derivatives of stilbene. They absorb the near-ultraviolet light and re-emit most of it in the blue range as visible fluorescence. OBs are commonly applied on textiles, detergents, paper and plastic products, among others. OBs have a low degradation ratio. In biological plants, they can only be partially removed by adsorption into the sludge and a tertiary treatment could be required to fully remove them. Part of them may persist and can be found in river and lake waters. The current work aims to evaluate the effect of the OBs in the bacterial activity of biological wastewater treatment plants. The influence of two commercial OBs (Goldblanc BHA and Leucophor PC) on respiration rate was monitored by means of a semi-continuous electrolytic respirometer, in order to obtain information related to the growth of the biomass and the degradation of the substrate. Their acute toxicity was also determined. It was concluded that the OB effect on bacteria population is variable depending on its chemical structure.     Correlation of Plasma Protein Carbonyls and C-Reactive Protein with GOLD Stage Progression in COPD Patients

    Oxidative stress plays an important role in the pathogenesis of chronic obstructive pulmonary disease (COPD). To investigate the correlation between the progression of COPD and plasma biomarkers of chronic inflammation and oxidative injury, blood samples were obtained from healthy volunteers (HV, n = 14) and stabilized COPD patients. The patients were divided into three groups according to their GOLD stage (II, n = 34; III, n = 18; IV, n = 20). C-reactive protein (CRP), protein carbonyls (PC), malondialdehyde (MDA), susceptible lipoperoxidation of plasma substrates (SLPS), and myeloperoxidase activity (MPO) were measured. The plasma concentration of SLPS was measured as the amount of MDA generated by a metal ion-catalyzed reaction in vitro. PC, SLPS, and CPR were increased significantly (p < 0.001) in COPD patients when compared to HV. MDA concentrations and MPO activities were not significantly different from those of the HV group. In conclusion, increased oxidation of lipids and proteins resulting in a progressive increase in the amount of total plasma carbonyls and oxidative stress the presence of oxidative stress during COPD progression, concomitant with an increased oxidation of lipids and proteins resulting in a progressive and significant increase in the amount of total carbonyls formed from lipid-derived aldehydes and direct amino acid side chain oxidation in plasma, may serve as a biomarker and independent monitor of COPD progression and oxidative stress injury

    Stacking of capacitive cells for electrical energy production by salinity exchange

Each of the cells consists of a pair of parallel electrodes made of activated carbon particles, either bare or coated by a layer of polyelectrolyte. In these methods, energy is produced based on the modifications in the electrical double layer (EDL) structure in the pores of the carbon particles upon exchange of the salinity of the surrounding medium. In the case of the bare carbon particles, the electrodes are externally charged in presence of high-salt concentration, and discharged after exchanging the solution for a dilute one (sea- vs. river-water cycles). In a first stacking approach, we simply connect the electrodes side-by-side and only the outermost ones can be connected to the external source. Using a stack where potential and current between cells can be measured, it is shown that only the external electrodes seem to work, and it is suggested that this is a consequence of internal short-circuit currents between oppositely charged electrodes of different cells through the electrolyte.     Polyelectrolyte-coated carbons used in the generation of blue energy from salinity differences

Activated carbon films are coated with negatively or positively charged polyelectrolytes by well-established adsorption methods. When two oppositely charged coated films are placed in contact with an ionic solution, the potential difference between them will be equal to the difference between their Donnan potentials, and hence, energy can be extracted by building an electrochemical cell with such electrodes. A model is elaborated on the operation of the cell, based on the electrokinetic theory of soft particles. All the features of the model are experimentally reproduced, although a small quantitative difference concerning the maximum opencircuit voltage is found, suggesting that the coating is the key point to improve the efficiency. In the used experimental conditions, we obtain a power of 12.1 mW/m2. Overall, the method proves to be a fruitful and simple approach to salinity-gradient energy production.     Modeling the longitudinal latent effect of pregabalin on self-reported changes in sleep disturbances in outpatients with generalized anxiety disorder managed in routine clinical practice

    Anxiety disorders are among the most common psychiatric illnesses, with generalized anxiety disorder (GAD) being one of the most common. Sleep disturbances are highly prevalent in GAD patients. While treatment with pregabalin has been found to be associated with significant improvement in GAD-related sleep disturbance across many controlled clinical trials, mediational analysis has suggested that a substantial portion of this effect could be the result of a direct effect of pregabalin. Thus, the objective of this study was to model the longitudinal latent effect of pregabalin or usual care (UC) therapies on changes in sleep in outpatients with GAD under routine clinical practice. Male and female GAD outpatients, aged 18 years or above, from a 6-month prospective noninterventional trial were analyzed. Direct and indirect effects of either pregabalin or UC changes in anxiety symptoms (assessed with Hamilton Anxiety Scale) and sleep disturbances (assessed with Medical Outcomes Study-Sleep Scale [MOS-S]) were estimated by a conditional latent curve model applying structural equation modeling. A total of 1,546 pregabalin-naïve patients were analyzed, 984 receiving pregabalin and 562 UC. Both symptoms of anxiety and sleep disturbances were significantly improved in both groups, with higher mean (95% confidence interval) score reductions in subjects receiving pregabalin: −15.9 (−15.2; −16.6) vs −14.5 (−13.5; −15.5), P =0.027, in Hamilton Anxiety Scale; and −29.7 (−28.1; −31.3) vs −24.0 (−21.6; −26.4), P <0.001, in MOS-S. The conditional latent curve model showed that the pregabalin effect on sleep disturbances was significant (γ =−3.99, P <0.001), after discounting the effect on reduction in anxiety symptoms. A mediation model showed that 70% of the direct effect of pregabalin on sleep remained after discounting the mediated effect of anxiety improvement. A substantial proportion of the incremental improvements in anxiety-related sleep disturbances with pregabalin vs UC were explained by its direct effect, not mediated by improvements in anxiety symptom
