    Balance of protein supplements according to the criterion of convertible protein

    The main sources of vegetable protein are seeds of legumes and oilseeds, which differ as by total content as by the quality. One of the least expensive and most rapid method of assessing the quality of protein is a chemical method, based on a comparative analysis of its amino acid composition, in particular, essential amino acids (EAA), and "ideal" protein. A widespread indicator of the proximity of the protein to the ideal is the minimum period, which shows how much of it can be used by the body for plastic needs (the main exchange and ensuring of body weight gain). Obviously, the more of this (convertible) protein in the product, the better (but not more than the daily value). One of the methods of obtaining a grain product with an increased convertible protein is blending, i.e. mixing in a certain proportion of different types of protein raw materials. In this case, the content of the converted mixture may be greater than in the components, and the excess less. The article presents a methodology for calculating the proportion of convertible protein in the product, as well as a new approach to the formation of effective mixtures. On the basis of this method, the results of the calculation of such mixtures on the example of a grain product with the use of collapsed white lupine, linseed cake and ginger seeds as components are shown. In all cases, there are rational proportions of the mixture, in which its convertible protein exceeds this figure in the component.     The electrochemical synthesis of niobium, tantalum, and aluminum oxide nanolayers is studied in the melt of lithium, sodium, and potassium carbonates with various additives to a salt phase in an oxidizing atmosphere at a temperature of 773 and 873 K.     The article analyzes the poetics of F.M. Dostoevsky and A. Kondratiev, a symbolist writer of the early 20th century. The object of the research is the two works “The Dream of a Ridiculous Man” by Dostoevsky and the novel “Dreams” by Kondratiev. A great deal of attention is paid to dream as a literary device and the spatial movements of heroes who receive sacred knowledge through sleep and are attached to metaphysical reality. Both writers in the work of reality is closely connected with the space, and this determines the nature of spatial models in poetics. Sleep is equal to temporary death and allows the main characters to go beyond the ordinary, profane. The article used the typological method and folklore commenting. It draws parallels with Eastern philosophy, where there is a unity of man and nature, man and the cosmos.El artículo analiza las poéticas de F.M. Dostoievski y A. Kondratiev, un escritor simbolista de principios del siglo XX. El objeto de la investigación son los dos trabajos "El sueño de un hombre ridículo" de Dostoievski y la novela "Sueños" de Kondratiev. Se presta mucha atención al sueño como un dispositivo literario y los movimientos espaciales de los héroes que reciben conocimiento sagrado a través del sueño y están apegados a la realidad metafísica.     Concepts and сriteria for the classification of small and medium-sized business in Russia

    Purpose: The purpose of the article is to study the concepts and criteria for classifying businesses to the category of Small and Medium-sized business according to the legislation of the Russian Federation. In the course of the study, the authors analyzed the criteria by which the subjects are identified as Small and Medium-sized enterprises and, accordingly, are entitled to receive state support. Design/Methodology/Approach: The authors' analysis is based on the literature review and statistical data analysis regarding the concept of entrepreurship and its legal background. Findings: The authors presented analytical data on business entities, citizens engaged in entrepreneurial activity, state support of entrepreneurial activity and introduced a conceptual classification benchmark. Practical implications: Authors' findings could be applied in improving the legal and economic entrepreneurial frameworks of Russia. Originality/Value: The contribution of the article is the authors' approach in classifying SMEs (Small and Medium-sized entities) and their state support as well as recommendations regarding the entrepreneurial activity and its development.peer-reviewe

    The present article analyzes the individual style of the famous Russian philosopher, writer, prose writer, and journalist, Vasily Vasilyevich Rozanov. It is proved that the writer's idiostyle is unique in Russian literature of the late 19th and early 20th centuries. The formation of an individual style took place in three stages. At the first stage, the philosophical treatise “On Understanding” was created, in which the categories of knowledge, wisdom, etc. were subjected to philosophical analysis. At the second stage, Rozanov’s individual style, the critic, was formed. In this period, the individual style is characterized by inconsistency. At the third stage, Rozanov’s individual style is formed, a prose writer, the key characteristics of whose style were unsystematic, contradictory and antinomic.El presente artículo describe el estilo individual de la famosa rusa, escritor, prose escritor, y periodista, Vasily Vasilyevich Rozanov. Se trata de que el escritor de los idiostyle es único en los ríos de los Estados Unidos y de los últimos 20 años. La formación de un estilo individual tuvo lugar en tres etapas. En la primera etapa, se creó la filosofía táctica "On Understanding" en las categorías de conocimiento, sabiduría, etc. se han inscrito en el análisis filosófico. En la segunda etapa, Rozanov el estilo individual, la crítica, fue formada. En este período, el estilo individual se considera inconsistencia.     Features of micro- and ultrastructure of low-fat butter and its low-fat analogues

    The aim of the research was to study the features of the structure of low-fat butter and butter pastes, which, in terms of composition and properties, more fully meet the requirements of a healthy diet than high-fat types of butter. The objects of research were: butter with fat content of 72.5%; butter with fat content of 55% made with the addition of skimmed milk powder; butter of the same fat content with the addition of stabilizers based on guar and xanthan gums and emulsifiers based on monoand diglycerides of fatty acids; butter pastes with fat content of 45% with similar additives used to increase the stability of the process of butter formation and improve the texture. The microstructure was studied using an MBI-6 microscope, and the ultramicrostructure was studied using a Phillips electron microscope. In the first case, the sample was prepared by crushing the sample, in the second one — by the method of ultrafast freeze-fracture and etching. Researches have shown that the use of the introduced ingredients improves the homogeneity of the structure of the studied products. Due to the ability of milk proteins and stabilizers to retain moisture, it is more evenly distributed and well retained in the fat matrix of the product, formed from crystalline and liquid fat in the form of a continuous phase, which is confirmed by a sufficient penetration depth of the fat-soluble dye. Plasma droplets in butter with fat content of 72.5% and 55% are more isolated than in butter pastes, as indicated by the greater penetration depth of the water-soluble dye. The average diameter of isolated moisture droplets in low-fat products was 3.3–5.4 μm, and the average diameter of the fat globules that form the basis of the crystalline framework was 5.4–7.4 μm, depending on the composition of the product. For butter with fat content of 72.5%, the values of these indicators were 2.8 and 4.0 μm. The results of the study indicate the presence of differences in the sizes of structural elements, but at the same time confirm the uniformity of the structure of low-fat products, allowing them to be attributed to dispersions «water-in-oil»
