Front-of-pack labelling of food products: international practices and perspectives
Introduction.
A prerequisite for the development of the food market is to provide consumers with accessible and necessary information about properties of food products. Food products labeling on the front of the package is aimed at facilitating consumers’ understanding of information about their usefulness.
Problem.
A wide range of symbols, schemes and formats have been developed which would provide information about the properties of food products to the consumer in the most convenient and accessible form. However, it is important to analyze the existing options and the effectiveness of this method of informing consumers about the usefulness of food products.
The aim of the work is to analyze different approaches to food products labeling on the front of the package in terms of their informativeness and usefulness for consumers.
Methods.
The methods of comparative analysis and synthesis, selection and generalization, legislative and regulatory documents were used.
Results.
Many front-of-pack labeling systems are known today, including Multiple Traffic Lights, Reference Intakes, Health Star Rating system, Nutri-Score, etc. Each of these systems has its own peculiarities regarding the content and way of presenting information about the components of the product, in terms of their usefulness for the human body and the presence / absence of components that may have a negative impact on health.
However, the current labeling systems make it possible to compare food products without taking into account other aspects of health impact (degree of processing, added additives that make them unhealthy), which does not allow to provide a complete profile of the health benefits of the food product.
Conclusions.
The analysis of different front-of-pack nutrition labels systems proved that thanks to such information, consumers have the opportunity to choose more healthy food products.
The adoption and implementation of a single label on the front of the package can be useful for consumers and reduce the number of cases associated with the negative impact of food products on health.Вступ.
Обов’язковою умовою розвитку ринку харчових продуктів є надання споживачам доступної та необхідної інформації щодо їхніх властивостей. Етикетування харчових продуктів на передній частині паковання спрямоване на полегшення розуміння споживачами інформації про їхню корисність.
Проблема.
Розроблено широкий вибір символів, схем та форматів, які б у максимально зручній і доступній формі доводили до споживача інформацію про властивості харчових продуктів. Однак важливо проаналізувати існуючі варіанти й ефективність такого способу інформування споживачів про корисність харчових продуктів.
Метою роботи є аналіз різних підходів до етикетування харчових продуктів на передній частині паковання щодо їхньої інформативності та корисності для споживачів.
Методи.
Використано методи порівняльного аналізу та синтезу, виокремлення й узагальнення, законодавчі та нормативні документи.
Результати дослідження. Нині відомо багато систем етикетування на передній панелі паковання, зокрема системи Multiple Traffic Lights, Reference Intakes, Health Star Rating system, Nutri-Score тощо. Кожна з цих систем має свої особливості щодо змісту і способу представлення інформації про складові продукту, з погляду їхньої корисності для організму людини і наявності/відсутності компонентів, які можуть чинити негативний вплив на здоров’я.
Однак діючі системи етикетування уможливлюють порівнювати харчові продукти, не беручи до уваги інших аспектів щодо впливу на здоров’я (ступінь обробки, додані добавки, які роблять їх некорисними для здоров’я), що не дає змоги надання повного профілю корисності харчового продукту.
Висновки.
Аналіз різних систем етикетування харчових продуктів на передній частині паковання засвідчив, що завдяки такій інформації споживачі мають можливість вибирати більш корисні для організму харчові продукти.
Прийняття та впровадження єдиної етикетки на лицьовій стороні паковання можуть бути корисними для споживачів та уможливлять зменшити кількість випадків, пов’язаних із негативним впливом харчових продуктів на здоров’я
QUALITY INVESTIGATION OF FROZEN GARDEN STRAWBERRIES AT PARTIAL DEHYDRATION BEFORE FREEZING
Garden strawberry is an important berry culture, consumed fresh and frozen. But a quality of frozen berries is not always at the high level because of changing organoleptic properties, tissues structure and biological active substances losses. It motivates searches for different methods of previous processing of berries before freezing. There was used a production technology of frozen strawberry with partial dehydration before freezing for solving the problem.
Garden strawberries of varieties Rusanivka, Honey and Polka were dried on air before freezing (“control” variant), and another part was partially dehydrated in a drying chamber at temperature 40 °С during30 min (“partial dehydration” variant) with further freezing to final temperature - 18 °С, with packing in packages of polyethylene film with a mass up to 500 g and storing in a refrigerator at temperature -18 °С during 6 months. There were studied main parameters of the chemical composition of fresh and frozen strawberries: content of dry soluble substances, sugars, organic acids, ascorbic acid and sugar-acidic index. Organoleptic quality parameters of frozen strawberries were assessed by the 5-point scale. The experiment was repeated trice.
It has been established, that frozen strawberries, partially dehydrated before freezing, saved by 0.2–0.3 % more dry soluble substances, by 0.2 % – sugars, by 7.0-7.9 % – ascorbic acid at a practically equal level of organic acids.
The organoleptic mark of frozen partially dehydrated strawberries was by 0.2–0.3 points higher against the control. Among the studied varieties of strawberry, Polka berries got a mark higher by 0.2–0.9 points
Удосконалення технології джему із ягід суниці садової за додавання пюре яблучного
Strawberry jam is the most popular and valuable product of processing from strawberries, the technology of production of which involves the use of pectin solution to form the necessary jelly-like consistency, which, in turn, is accompanied by an increase in production costs and complication of manufacturing process. To solve the problem, we proposed the technology of production of strawberry jam from strawberries with the replacement of pectin solution with apple puree in the quantity of 1, 2, 3, 5, 10, 15, 20, 25, 30, 35 and 40 % of the weight of berries followed by boiling to the content of dry soluble substances of not less than 62 %, packing in a glass container with the capacity of 250 cm3, sealing, sterilization and storage at the temperature of 20±1 °C. The experiment should be repeated thrice. We studied the content of dry soluble substances, sugars, organic acids, and ascorbic acids in jams. The organoleptic indicators of jam quality were assessed by the 5-point scale. The results were analyzed by the Tukey criterion at the significance level of 5 % (p≤0.05).It is determined that by the content of dry soluble substances, jams meet the requirements of DSTU 4900, according to which mass fraction should be not lower than 62 %, of sugars – 56.2–57.2 %, titrated acids – 0.6–0.8 %, ascorbic acids – from 30.0 to 38.7 mg/100 g at its preservation at the level of 47.7–55.5 %. The study of organoleptic quality indicators showed that the addition of apple puree in the amount of 20 % and higher led to an increase in the estimate of jam consistency, which was caused by the formation of the necessary jelly-like consistency. However, the addition of puree of over 25 % resulted in a decrease in overall score due to deterioration in the appearance of jams. It was proved that 25 % of apple puree should be added in order to obtain optimum jelly-like characteristics of strawberry jamДжем земляничный – наиболее популярный и ценный продукт переработки ягод земляники, технология производства которого предусматривает использование пектинового раствора для формирования необходимой желирующей консистенции, что, в свою очередь, сопровождается увеличением производственных затрат и затруднением процесса производства. Для решения проблемы предложена технология производства джема земляничного из ягод земляники (Fragaria × ananssa Duch.), с заменой раствора пектина на пюре яблочное в количестве 1, 2, 3, 5, 10, 15, 20, 25, 30, 35, 40 % от массы ягод. Джемы уваривали до содержания сухих растворимых веществ не менее 62 %, фасовали в стеклянную тару емкостью 250 см3, герметизировали, стерилизовали и хранили при температуре 20±1 °С. Повторность опыта троекратная. Джемы исследованы на содержание сухих растворимых веществ, сахаров, органических кислот, аскорбиновой кислоты. Органолептической показатели качества джемов оценивали по 5-балловой шкале. Результаты проанализированы с помощью критерия Тьюки на уровне значимости 5 % (p≤0.05). Установлено, что по содержанию сухих растворимых веществ джемы соответствуют требованиям ДСТУ 4900, который предусматривает их содержание не ниже 62 %. Массовая доля сахаров в джемах –56,2–57,2 %, титруемых кислот – 0,6–0,8 %, аскорбиновой кислоты – 30,0 до 38,7 мг/100 г при ее сохранности на уровне 47,7–55,5 %. В результате органолептической оценки обнаружено, что добавление пюре яблочного в размере 20 % и выше приводило к повышению оценки консистенции джема, что обусловлено образованием необходимой желирующей консистенции. Однако добавление пюре более 25 % приводило к снижению общей оценки за счет ухудшения внешнего вида джемов. Доказано, что для получения оптимальных желирующих свойств джема земляничного следует добавлять 25 % пюре яблочногоДжем суничний – найбільш популярний та цінний продукт переробки з ягід суниці, технологія виробництва якого передбачає використання пектинового розчину задля формування необхідної драглеподібної консистенції, що, в свою чергу, супроводжується збільшенням виробничих витрат і утрудненням процесу виробництва. Для вирішення проблеми запропоновано технологію виробництва джему суничного із ягід суниці садової, із заміною розчину пектину на пюре яблучне в кількості 1, 2, 3, 5, 10, 15, 20, 25, 30, 35, 40 % від маси ягід з наступним уварюванням до вмісту сухих розчинних речовин не менше 62 %, фасуванням у скляну тару місткістю 250 см3, герметизацією, стерилізуванням та зберіганням за температури 20±1 °С. Повторність досліду трикратна. Джеми досліджено на вміст сухих розчинних речовин, цукрів, органічних кислот, аскорбінової кислоти. Органолептичні показники якості джему оцінювали за 5 – баловою шкалою. Результати проаналізовано за допомогою критерію Тьюки на рівні значимості 5 % (p≤0.05).Встановлено, що за вмістом сухих розчинних речовин джеми відповідають вимогам ДСТУ 4900, масова частка яких має бути не нижчою 62 %, цукрів – 56,2–57,2 %, титрованих кислот – 0,6–0,8 %, аскорбінової кислоти – 30,0 до 38,7 мг/100 г за її збереженості на рівні 47,7–55,5 %. Дослідження органолептичних показників якості показали, що додавання пюре яблучного в розмірі 20 % і вище призводило до підвищення оцінки консистенції джему, що зумовлено утворенням необхідної драглеподібної консистенції. Однак додавання пюре понад 25 % зумовлювало зниження загальної оцінки за рахунок погіршення зовнішнього вигляду джемів.
