    Phenolic Compounds of Grapes and Wines: Key Compounds and Implications in Sensory Perception

    Phenolic compounds are a wide family of thousands of natural bioactives well-known for their overwhelming demonstrated health benefits. Particularly in wines, polyphenols and quality are closely interconnected. Indeed, these compounds possess a critical role due to their contribution to organoleptic wine quality as color, astringency, and bitterness. The profile or the composition of certain polyphenols has been even proposed as an analytical tool for authenticity certification. In this sense, although important progress has been achieved, the understanding of the relationship between the quality of a particular wine and its phenolic composition remains one of the major challenges in enology research. But why? If there is an adjective to define wine, it is “complex.” This final complexity of a wine begins with the enormous polyphenolic variability that may be present in grapes influenced by ripening, genetic, or environmental factors, among others. Winemaking process (alcoholic and malolactic fermentation) and wine aging with or without wood contact produce endless reactions giving rise to complex transformations (copigmentation, cycloaddition, polymerization, and oxidation) of polyphenols. This chapter gathers the most relevant information about the composition, variations, and transformations of phenolic compounds from grape to wine including their influence on sensory properties

    Impact of interstitial lung disease on the survival of systemic sclerosis with pulmonary arterial hypertension

    To assess severity markers and outcomes of patients with systemic sclerosis (SSc) with or without pulmonary arterial hypertension (PAH-SSc/non-PAH-SSc), and the impact of interstitial lung disease (ILD) on PAH-SSc. Non-PAH-SSc patients from the Spanish SSc registry and PAH-SSc patients from the Spanish PAH registry were included. A total of 364 PAH-SSc and 1589 non-PAH-SSc patients were included. PAH-SSc patients had worse NYHA-functional class (NYHA-FC), worse forced vital capacity (FVC) (81.2 +/- 20.6% vs 93.6 +/- 20.6%, P < 0.001), worse tricuspid annular plane systolic excursion (TAPSE) (17.4 +/- 5.2 mm vs 19.9 +/- 6.7 mm, P < 0.001), higher incidence of pericardial effusion (30% vs 5.2%, P < 0.001) and similar prevalence of ILD (41.8% vs. 44.9%). In individuals with PAH-SSc, ILD was associated with worse hemodynamics and pulmonary function tests (PFT). Up-front combination therapy was used in 59.8% and 61.7% of patients with and without ILD, respectively. Five-year transplant-free survival rate was 41.1% in PAH-SSc patients and 93.9% in non-PAH-SSc patients (P < 0.001). Global survival of PAH-SSc patients was not affected by ILD regardless its severity. The multivariate survival analysis in PAH-SSc patients confirmed age at diagnosis, worse NYHA-FC, increased PVR, reduced DLCO, and lower management with up-front combination therapy as major risk factors. In conclusion, in PAH-SSc cohort risk of death was greatly increased by clinical, PFT, and hemodynamic factors, whereas it was decreased by up-front combination therapy. Concomitant ILD worsened hemodynamics and PFT in PAH-SSc but not survival regardless of FVC impairment

    Ellagitannin content, volatile composition and sensory profile of wines from different countries matured in oak barrels subjected to different toasting methods

    Ellagitannins and aromatic compounds evolution in Cabernet Sauvignon wines macerated in oak barrels for a year was studied. Identical barrels with different toastings (medium toasting, medium toasting with watering, Noisette) were used in French, Italian and USA cellars. Ellagitannins increased by 84-96% with aging time, as did woody volatiles, by 86-91% in French wines and 23-35% in Italian wines, while fruity aroma compounds declined by 50-57% in the French and Italian wines over a 12-months period. Nevertheless, other behaviors and different kinetics rates for these compounds were observed depending on barrel toasting, wine matrix and their interactions. Perceived overall woody intensity was closely related to trans-whiskey lactone, guaiacol and vanillin, whereas astringency and bitterness were significantly linked to ellagitannins (p<0.05). This is the first study that evaluates the toasting effect on wines from different countries matured in the same oak barrels

    A multivariate methodology to distinguish among wine Appellations of Origin

    International audienceThe legal recognition of the geographical origin of wines, named Appellation of Origin, is of great interest for both consumers and producers, since it provides decisive criteria of acceptability in terms of guaranteed quality. However, when wines are considered to differ among the viticultural regions where they are produced, it is difficult to verify if the distinction is actually linked to their provenance, or, conversely if it is merely due to the work of the winemaker. Therefore, there is a need for methods that separate the effect of the geographical location from that of the human factor. Thirteen Merlot and 14 Cabernet Sauvignon vineyards were selected from two Appellations of Origin, named Binissalem and Pla i Llevant, located in the Balearic Islands (Spain). Grapes and soils were sampled evenly over the whole surface of each vineyard. Climatic and landscape conditions were also registered at each site. Univariable analysis was performed to evaluate the effect of the Appellation of Origin on the color intensity, the color tonality and the phenolic content of grapes, the silts, sands, clays and carbonate content of soils, the rainfall, the maximum and minimum temperature, and the elevation of the vineyards in 2009 and 2010. Based on the soil, climate, and landscape characteristics, a Partial Least Square Discriminant Analysis was used to discriminate between both Appellations of Origin. Results showed that a particular agroclimatic terroir may be defined for each Appellation of Origin. Indeed, this multivariate analysis led to a correct classification rate of 95 % for both 2009 and 2010 models and a prediction accuracy higher than 85.7 %. The research here proposed a methodology suitable for evaluating the appropriateness of contiguous viticultural Appellations of Origin in terms of a whole terroir concept, without considering the human factor

    Aim: To evaluate the potential of the main winery by-products – pressed pomaces, fermented pomaces and stems –, derived from minor grape varieties (Escursac, Gorgollassa and Sabater as red varieties, Giró ros and Quigat as white varieties) native to the Balearic Islands (Spain), as raw material for the production of phenolic concentrates with antioxidant properties. Methods and results: Total phenolics, tannins and anthocyanins, as well as antioxidant capacity of winery by-products were spectrophotometrically evaluated and compared to those of Cabernet sauvignon and Chardonnay varieties. In general, stems presented higher average total phenolic (5.57 ± 1.25 g/100 g dm) and total tannin (10.26 ± 2.10 g/100 g dm) contents than the corresponding pomaces, with the landrace variety Escursac being that which exhibited the highest values (p < 0.05). For pomaces, those sampled after the fermentation process presented larger amounts of polyphenols than those collected just after the pressing process, and the fermented pomaces from the autochthonous varieties Escursac and Sabater were those with the highest potential. Conclusion: The present research demonstrated that landrace minor varieties denoted similar, or even higher, phenolic and antioxidant potential than the reference grape varieties. The characterization performed might be the basis for their integrated use and revalorization as promising sources of phenolic concentrates, despite not having still undergone the selection process that the traditional grape varieties have been subjected to as a result of decades of intensive production. Significance and impact of the study: To the best of our knowledge, this is the first time that the phenolic composition and antioxidant properties of winery by-products from grape varieties native to the Balearic Islands are examined. Due to the increasing use of these minor grape varieties in winemaking, the phenolic characterization of their by-products is of great interest for the wine sector, which could exploit these underutilized resources more efficiently and extensively so as to support sustainable agricultural production
