    Factors influencingmicrobial transmission in a meat processing plant

    The review paper examines the main risk factors for microbial contamination of meat at different stages of its processing. Particular emphasis has been placed on primary animal processing being the most hazardous in terms of microbial contamination of meat. Carcass cross-contamination most frequently occurs during skinning and evisceration since hides and the digestive tract are the primary sources of microbial pathogens. It is necessary to observe stringent sanitary and hygienic rules when performing these operations. Continuous cold chain management along all following stages of meat processing and control of the sanitary status of cold chambers during meat storage are of extreme importance. An increase in the microbial counts due to the high number of manual operations was observed during meat cutting, boning, and trimming. Subsequent stages of meat processing, including mincing, curing, the addition of spices, also promote significant microbial growth. Strict control regarding detection of dangerous pathogens, especially L. monocytogenes, is needed at this stage. In general, to minimize problems linked with meat and meat product safety, it is necessary to take timely measures on sanitary treatment of meat processing facilities, including the prevention of biofilm formation

    Psychological Distress in Elite Sambo and Recreational Athletes

    Background: Previous studies suggest that engagement in any type of physical activity can be protective against mental health issues, whereas elite-level athletes can endure various mental health challenges. The aim of this study was to determine variations in the prevalence of psychological distress among elite sambo athletes and their recreational counterparts. Methods: A sample consisting of 245 athletes (127 males and 118 females) was chosen. Out of the total sample, 105 were elite-level athletes while 140 were recreational athletes. Participants were accessed via the Depression Anxiety Stress Scales-21 to determine their stress in various domains at a given time. Results: Data indicated that all tested differences between elite sambo athletes and recreational athletes were statistically significant; recreational athletes had a higher score on the depression scale, anxiety and stress, and a general distress score than sambo athletes. Although there are no gender differences in psychological distress in the total sample of athletes, elite sambo athletes achieve significantly lower scores in all tested variants than recreational ones. Women who engage in recreational activities have stood out as a vulnerable subsample in psychological stress. Conclusion: Future epidemiological and interventional studies should explore optimal strategies to identify mental health needs based on specific sport activity, especially in terms of gender.     Surface adsorption and survival of SARS-CoV-2 on frozen meat

    The first case of a severe acute respiratory syndrome caused by coronavirus-2 was reported in December 2019 in China. The disease spread globally quickly, causing the 2019–2021 COVID-19 pandemic. The meat industry became concerned over the possibility of transmitting the virus in the slaughterhouse environment. The level of air exchange strongly affects the distribution of SARS-CoV-2 aerosols within the slaughterhouses. The adsorption of the SARS-CoV-2 virus on the surface of the frozen meat is dictated mainly by the interplay of electrostatic forces between the virion and tissue (pH) and environmental conditions (temperature and humidity) in the vicinity of adsorption micro-location. Suppose the virus contaminates the meat surface, whereby pH is 5.5 or less. In that case, it firmly adsorbs due to bonds established by protonated amine group and a hydrogen bond between the COOH group of the viral protein and oxygen in hydroxyl groups present on meat surfaces. The meat surface, coated with a thin water film, interacts with the SARS-CoV-2 virions by establishing strong hydrogen bonds. Although there is no proof of COVID-19 contraction by food consumption, the strong surface adsorption and ability of SARS-CoV-2 to survive meat freezing indicate a potential risk of virus transmission by meat

    Patterns of rapid weight loss in elite sambo athletes

    Background: Rapid weight loss (RWL) is commonly practiced in combat sports. Both magnitude and methods used to induce RWL are largely similar among combat sports, but currently, there is no data on RWL methodology used by sambo athletes. Therefore, the aim of this study was to determine RWL procedures sambo athletes apply to lose weight rapidly. Methods: The sample consisted of 199 participants, of which 132 males and 67 females who participated in the World Sambo Championship 2020 held in Novi Sad, Serbia. Each participant received RWL questionnaire that was available in multiple languages, and every participant was instructed how to fill it out. Results: Almost 87% of sambo participants declared to have intentionally cut their weight prior to the competition, whereby 5.27 kg (SD: ±7.57) was lost. Gradual dieting, sauna use and skipping meals were the most dominant methods used to reduce weight prior to competition while more extreme methods of RWL such as the use of laxatives, diuretics, diet pills and vomiting were also implemented but by much smaller fragment of the participants involved. Conclusions: Findings from our study largely match with previously conducted RWL studies in terms of prevalence, magnitude and methods used by combat sport athletes, especially in judo and wrestling. Knowing the hazardous consequences of RWL, alternative methods of sustainable weight loss should be considered

    Meat is a perishable product with a short shelf life and therefore short selling times. Therefore, cold chain management in meat supply is of utmost importance for the maintenance of quality and safety of meat/meat products. Raw meat/meat products are likely to support the growth of pathogenic microorganisms and/or spoilage bacteria, and should be kept at temperatures that do not result in a risk to health. The cold chain should not be interrupted at all times along the meat distribution chain. The complexity of global meat supply chain, with frequently long distribution chains associated with transportation of the product within one country, from one to another country and from one to another continent, makes the solutions for the chilling and freezing regimes, as well as monitoring of time-temperature profiles, very important for the overall success in delivery of product which will be accepted by consumer for its freshness and safety levels. From recently, there are several available options for control and management of the cold chain, such as chilled and frozen storage combinations, superchilling, ionizing radiation, biopreservation, high hydrostatic pressure (HHP), active packaging, wireless sensors, supported with the software-based cold chain database (CCD).Мясо это скоропортящийся продукт с коротким сроком годности и,  следовательно, с коротким сроком реализации. Поэтому, управление холодильной цепью при поставке имеет первостепенное значение для поддержания качества и безопасности мяса и мясных продуктов. Сырое мясо и мясные продукты могут поддерживать рост патогенных микроорганизмов или микроорганизмов, вызывающих порчу, и, таким образом, должны храниться при температурах, которые исключают возникновение риска здоровью. Холодильная цепь должна соблюдаться на всех этапах реализации. В связи со сложностью глобальной цепи поставок мяса и мясных продуктов, которая нередко бывает достаточно протяженной и связанной с транспортировкой продукта, как в внутри страны, так и при поставках из одной страны в другую, или c одного континента на другой, требуется необходимость соблюдать режимы охлаждения и замораживания, отслеживать время и температуру, чтобы потребитель был уверен в свежести данных продуктов и их безопасности.     Dust Production and Particle Acceleration in Supernova 1987A Revealed with ALMA

    Supernova (SN) explosions are crucial engines driving the evolution of galaxies by shock heating gas, increasing the metallicity, creating dust, and accelerating energetic particles. In 2012 we used the Atacama Large Millimeter/Submillimeter Array to observe SN 1987A, one of the best-observed supernovae since the invention of the telescope. We present spatially resolved images at 450um, 870um, 1.4mm, and 2.8mm, an important transition wavelength range. Longer wavelength emission is dominated by synchrotron radiation from shock-accelerated particles, shorter wavelengths by emission from the largest mass of dust measured in a supernova remnant (>0.2Msun). For the first time we show unambiguously that this dust has formed in the inner ejecta (the cold remnants of the exploded star's core). The dust emission is concentrated to the center of the remnant, so the dust has not yet been affected by the shocks. If a significant fraction survives, and if SN 1987A is typical, supernovae are important cosmological dust producers.Comment: ApJL accepte

    Carbon Monoxide in the Cold Debris of Supernova 1987A

    We report spectroscopic and imaging observations of rotational transitions of cold CO and SiO in the ejecta of SN1987A, the first such emission detected in a supernova remnant. In addition to line luminosities for the CO J=1-0, 2-1, 6-5, and 7-6 transitions, we present upper limits for all other transitions up to J=13-12, collectively measured from the Atacama Large Millimeter Array (ALMA), the Atacama Pathfinder EXperiment (APEX), and the Herschel Spectral and Photometric Imaging REceiver (SPIRE). Simple models show the lines are emitted from at least 0.01 solar masses of CO at a temperature > 14 K, confined within at most 35% of a spherical volume expanding at ~ 2000 km/s. Moreover, we locate the emission within 1'' of the central debris. These observations, along with a partial observation of SiO, confirm the presence of cold molecular gas within supernova remnants and provide insight into the physical conditions and chemical processes in the ejecta.     Infrared Emission from Supernova Remnants: Formation and Destruction of Dust

    We review the observations of dust emission in supernova rem- nants (SNRs) and supernovae (SNe). Theoretical calculations suggest that SNe, particularly core-collapse, should make significant quantities of dust, perhaps as much as a solar mass. Observations of extragalactic SNe have yet to find anywhere near this amount, but this may be the result of observa- tional limitations. SN 1987A, in the process of transitioning from a SN to an SNR, does show signs of a significant amount of dust forming in its ejecta, but whether this dust will survive the passage of the reverse shock to be injected into the ISM is unknown. IR observations of SNRs have not turned up significant quantities of dust, and the dust that is observed is generally swept-up by the forward shock, rather than created in the ejecta. Because the shock waves also destroy dust in the ISM, we explore the question of whether SNe might be net destroyers, rather than net creators of dust in the universe.Comment: Published in the Springer Handbook of Supernova

    Dust in Supernovae and Supernova Remnants I : Formation Scenarios

    Supernovae are considered as prime sources of dust in space. Observations of local supernovae over the past couple of decades have detected the presence of dust in supernova ejecta. The reddening of the high redshift quasars also indicate the presence of large masses of dust in early galaxies. Considering the top heavy IMF in the early galaxies, supernovae are assumed to be the major contributor to these large amounts of dust. However, the composition and morphology of dust grains formed in a supernova ejecta is yet to be understood with clarity. Moreover, the dust masses inferred from observations in mid-infrared and submillimeter wavelength regimes differ by two orders of magnitude or more. Therefore, the mechanism responsible for the synthesis of molecules and dust in such environments plays a crucial role in studying the evolution of cosmic dust in galaxies. This review summarises our current knowledge of dust formation in supernova ejecta and tries to quantify the role of supernovae as dust producers in a galaxy.Peer reviewe
