Effect of pork fat addition on the volatile compounds of foal dry-cured sausage

Three batches (10 units per batch) of dry fermented sausages with different pork back fat content (5%, 10% and 20%) were manufactured; low fat (LF), medium fat (MF) and high fat (HF), respectively. A total of 45 volatile compounds were extracted by purge-and-trap and identified by GC–MS in the headspace of the batches. The mixture comprised 11 terpenes, 15 esters, 14 hydrocarbons and 2 alcohols. Spices were responsible for the generation of 14 volatile compounds comprising terpenes and hydrocarbons. After 49days of ripening volatile compounds from spices represented 52.9, 38.9 and 31.2% of the total area for samples from LF, MF and HF batches, respectively, while lipid autooxidation was responsible for the generation of 8 volatile compounds. Use of limestone filler as a sorbent for the removal of As(V), Pb(II), Cu(II), Zn(II) and Cd(II) in contaminated sites
Many of the approaches used to treat soils contaminated by heavy metals are invasive, and do not restore the natural equilibrium of the environment [1]. For this reason, one of procedures used to stabilise heavy metal-contaminated soils in situ is to directly add amendments, which, while they may not totally eliminate toxic elements, help natural retention mechanisms, induce sorption and reduce mobility and bioavailability. In this respect, the use of calcareous materials may be an excellent, eco-friendly way for recovering this type of soils [2], and this communication reports studies made in our laboratory for such a purpose. The influence of different variables in the preparation of mixtures used to stabilize contaminated soils (soil pH, temperature and composition of the contaminated soil / limestone filler) was studied by means of a factorial experimental design. The main interaction effects of the factors obtained on different contaminated soils were used along with the results of the physicochemical and mineralogical characterization in the same data matrix to be analyzed by principal components analysis (PCA). To evaluate the optimal values of the variables, spectroscopic techniques were used to measure the level of leached metals (Pb, Cd, Cu, As, Zn and Fe). The environmental conditions were simulated and controlled by means of a climatic chamber to evaluate simultaneously the processes of geochemical alteration and passivation of the mixture. The results obtained showed that the corresponding factors of the experimental design may be an important source of information to show correlations on some of the most significant variables such as the concentration of metals and, in this way, optimize the use of the in situ stabilizer

generalización y mantenimiento de un estilo de vida basado en la satisfacción
del esfuerzo, el juego limpio, la solidaridad y el compromiso por la paz social.
Además, este tipo de periodismo ha de explotar su verdadero potencial
preservando y fomentando un uso correcto del idioma español entre la
ciudadanía. En el caso particular de la lengua española, Internet, dado su
carácter universal, aparece como el canal con mayores posibilidades para
fomentar un uso panhispánico del idioma.Nowadays online media have an special responsability for educating

Strategies for the Valorization of Date Fruit and Its Co-Products: A New Ingredient in the Development of Value-Added Foods
Date palm trees (Phoenix dactylifera L.) are traditionally cultivated in South-West Asia and
North Africa for date fruit consumption, although in recent years, its consumption has increased
worldwide, and its cultivation has spread to other areas of America, sub-Saharan Africa, Oceania,
and Southern Europe. During date fruit processing, several types of by-products are generated,
such as low-quality dates or seeds, which along with date fruit, represent an excellent source of
dietary fiber and bioactive compounds such as flavonoids, tannins, carotenoids, tocopherols, and
tocotrienols. Therefore, this review provides information on the processing of dates fruit and the
value-added by-products generated from them as well as their applications in different types of foods
for the development of foods with an enhanced nutritional and functional profile. The incorporation
of date fruit and their co-products in food formulations will help to cover the current consumer
demands for foods made with ingredients of natural origin and with health properties beyond the
