Analysis of water activity in selected fresh vegetables庐
W artykule zamieszczono wyznaczone warto艣ci aktywno艣ci
wody i zawarto艣ci wody wybranych 艣wie偶ych warzyw, a tak偶e
dokonano analizy tych warto艣ci. Stwierdzono, i偶 aktywno艣膰
wody badanych warzyw charakteryzowa艂a si臋 wysok膮 warto艣ci膮,
przekraczaj膮c膮 poziom 0,96. Najwy偶sz膮 aktywno艣膰
wody posiada艂a kapusta g艂owiasta czerwona 0,981 卤0,001
(W = 90,11%), a najni偶sz膮 aktywno艣膰 wody stwierdzono
w pietruszce 0,963 卤0,002 (W = 77,86%). Og贸lnie, nie stwierdzono
silnej zale偶no艣ci mi臋dzy zawarto艣ci膮 wody, a jej aktywno艣ci膮
w badanych 艣wie偶ych warzywach.The article presents the determined values of water activity
and water content of selected fresh vegetables, as well as an
analysis of these values. It was found that the water activity
of the tested vegetables was characterized by a high value,
exceeding the level of 0,96. The highest water activity
was found in red cabbage 0,981 卤0,001 (W = 90,11%), and
the lowest water activity was found in parsley 0,963 卤0,002
(W = 77,86%). In general, there was no strong relationship
between the water content and its activity in the fresh vegetables

Microbiological purity assessment of cosmetics used by one and several persons and cosmetics after their expiry date
Background. Microbiological purity of cosmetics provides safety of users during their use, prevents physicochemical
changes of a preparation, infections and diseases of the skin.
Objective. The aim of this study was to assess the level of microbiological contamination of cosmetics used by one person and by
several people and cosmetics after their expiry date in relations to standards for marketed cosmetics, ensuring safety of their use.
Material and Methods. This study was conducted using 55 samples representing 19 types of cosmetics, divided into
three groups: used by one person, used by several people and after the expiry date. In cosmetic samples the general
numbers of aerobic mesophilic bacteria were determined with the spread plate method on tryptic-soy agar. The presence of
Staphylococcus aureus, Pseudomonas aeruginosa and Candida albicans were also checked.
Results. The number of aerobic mesophylic bacteria in the tested cosmetics ranged from the level below the method
detectability to 1.3脳107 cfu/g or ml. The presence of Staphylococcus spp. was found in 11 (20.0%) tested cosmetic samples
and of P. aeruginosa in one tested preparation. Yeasts C. albicans were not detected, whereas contamination with fungi
Aspergillus spp. and Penicillium spp. ranging from 0.5脳101 to 1.5脳101 cfu/g or ml was recorded in four cosmetics. The
level of microbiological contamination of cosmetics used by several people was higher than that of cosmetics used by one
person. Cosmetics after the expiry date showed the highest microbiological contamination.
Conclusions. The number of users of cosmetic and it expiry date exceeding influenced the level of microbial contamination
of preparations.Wprowadzenie. Czysto艣膰 mikrobiologiczna kosmetyk贸w zapewnia bezpiecze艅stwo podczas ich stosowania, zapobiega
zmianom fizykochemicznym preparatu oraz infekcjom i chorobom sk贸ry.
Cel bada艅. Celem pracy by艂a ocena zanieczyszczenia mikrobiologicznego kosmetyk贸w u偶ywanych przez jedn膮 i wiele os贸b
oraz kosmetyk贸w przeterminowanych w odniesieniu do norm dla kosmetyk贸w wprowadzonych do obrotu, gwarantuj膮cych
bezpiecze艅stwo ich stosowania.
Materia艂 i metody. W badaniu wykorzystano 55 pr贸bek reprezentuj膮cych 19 typ贸w kosmetyk贸w, kt贸re podzielono na trzy
grupy: u偶ywane przez jedn膮 osob臋, przez kilka os贸b oraz przeterminowane W pr贸bkach badanych kosmetyk贸w okre艣lano
og贸ln膮 liczb臋 tlenowych bakterii mezofilnych metod膮 posiewu powierzchniowego na pod艂o偶u tryptozowo-sojowym.
Sprawdzono r贸wnie偶 obecno艣膰 Staphylococcus aureus, Pseudomonas aeruginosa i Candida albicans.
Wyniki. W badanych kosmetykach liczba tlenowych bakterii mezofilnych mie艣ci艂a si臋 w przedziale od poziomu poni偶ej
wykrywalno艣ci metody do 1,3脳107 j.t.k./g lub ml. Staphylococcus spp. wykryto w 11 (20.0%) badanych pr贸bkach,
a P. aeruginosa w jednej. W 偶adnym z badanych kosmetyk贸w nie wykryto dro偶dzak贸w C. albicans, natomiast w czterech
stwierdzono zanieczyszczenie ple艣niami Aspergillus spp. i Penicillium spp. wahaj膮ce si臋 od 0.5脳101 do 1.5脳101 j.t.k./g lub
ml. Poziom zanieczyszczenia mikrobiologicznego kosmetyk贸w u偶ywanych przez kilka os贸b by艂 wy偶szy ni偶 u偶ywanych
przez jedn膮 osob臋. Kosmetyki przeterminowane by艂y najbardziej ska偶one mikrobiologicznie.
Wnioski. Liczba os贸b u偶ywaj膮cych ten sam kosmetyk oraz przekroczenie jego terminu wa偶no艣ci wp艂ywaj膮 istotnie na
poziom ska偶enia mikrobiologicznego preparatu
