Mitochondrial functionality and beef colour: A review of recent research
The bright-red colour of meat that consumers prefer depends on the depth of oxygen diffusion into the tissue and myoglobin oxygenation. Interestingly, both processes are influenced by mitochondrial activity in postmortem muscle. The transition of muscle metabolism from aerobic to anaerobic pathways affects various cellular processes including mitochondrial functionality. Numerous studies report that even with compromised structure, mitochondria continue to influence postmortem beef colour via oxygen consumption and metmyoglobin reducing activity. Hence, an in-depth understanding of the pre- and post-harvest factors affecting mitochondrial functionality can significantly enhance existing knowledge of meat colour and colour stability. Several comprehensive reviews have discussed the biochemical factors affecting meat colour, but there are only a few that have sections on the impact of mitochondria on beef colour. Furthermore, advancement of high-throughput techniques such as metabolomics and proteomics has enabled researchers to elucidate metabolite and protein changes related to mitochondria. Therefore, the objective of this review is to provide an overview on the role of mitochondria in beef colour, with a focus on recent advances in mitochondrial research, oxygen consumption, and metmyoglobin reducing ability.Keywords: Myoglobin, metmyoglobin reducing activity, meat colour, metabolomics, oxygen consumption, proteomic
Cluster Spin Glass Distribution Functions in LaSrCuO
Signatures of the cluster spin glass have been found in a variety of
experiments, with an effective onset temperature that is frequency
dependent. We reanalyze the experimental results and find that they are
characterized by a distribution of activation energies, with a nonzero glass
transition temperature . While the distribution of activation
energies is the same, the distribution of weights depends on the process.

Investigation of a Pt containing washcoat on SiC foam for hydrogen combustion applications
A commercial Pt based washcoat, used for catalytic methane combustion, was studied supported on a commercial SiC foam as catalytic material (Pt/SiC) for catalytic hydrogen combustion (CHC). Structural and chemical characterization was performed using Electron Microscopy, X-Ray Diffraction (XRD) and X-Ray Photoelectron Spectroscopy (XPS). The reaction was monitored following water concentration by Fourier Transform Infrared spectra (FTIR). The FTIR method was compared with H2 detection by Gas Cromatography (GC) and has shown to be adequate to study the kinetics of the CHC reaction in steady state under our experimental conditions (very lean 1% (v/v) H2/air mixtures). The catalyst is composed of 5–20 nm disperse Pt nanoparticles decorating a mixture of high surface area Al2O3 and small amounts of ceria supported on the SiC foam which also contains alumina as binder. The Pt/SiC catalytic material has demonstrated to be active enough to start up the reaction in a few seconds at room temperature. The material has been able to convert at least 18.5 Lhydrogen min−1 gPt−1 at room temperature in conditions of excess of catalyst. The Pt/SiC material was studied after use using XPS and no significant changes on Pt oxidation states were found. The material was characterized from a kinetic point of view. From the conversion-temperature plot a T50 (temperature for 50% conversion) of 34 °C was obtained. Activation energy measured in our conditions was 35 ± 1 kJ mol−1.Peer reviewe
Formation and Evolution of Supermassive Black Holes
The correlation between the mass of supermassive black holes in galaxy nuclei
and the mass of the galaxy spheroids or bulges (or more precisely their central
velocity dispersion), suggests a common formation scenario for galaxies and
their central black holes. The growth of bulges and black holes can commonly
proceed through external gas accretion or hierarchical mergers, and are both
related to starbursts. Internal dynamical processes control and regulate the
rate of mass accretion. Self-regulation and feedback are the key of the
correlation. It is possible that the growth of one component, either BH or
bulge, takes over, breaking the correlation, as in Narrow Line Seyfert 1
objects. The formation of supermassive black holes can begin early in the
universe, from the collapse of Population III, and then through gas accretion.
The active black holes can then play a significant role in the re-ionization of
the universe. The nuclear activity is now frequently invoked as a feedback to
star formation in galaxies, and even more spectacularly in cooling flows. The
growth of SMBH is certainly there self-regulated. SMBHs perturb their local
environment, and the mergers of binary SMBHs help to heat and destroy central
stellar cusps. The interpretation of the X-ray background yields important
constraints on the history of AGN activity and obscuration, and the census of
AGN at low and at high redshifts reveals the downsizing effect, already
observed for star formation. History appears quite different for bright QSO and
low-luminosity AGN: the first grow rapidly at high z, and their number density
decreases then sharply, while the density of low-luminosity objects peaks more

The Effect of Convection on Disorder in Primary Cellular and Dendritic Arrays
Directional solidification studies have been carried out to characterize the spatial disorder in the arrays of cells and dendrites. Different factors that cause array disorder are investigated experimentally and analyzed numerically. In addition to the disorder resulting from the fundamental selection of a range of primary spacings under given experimental conditions, a significant variation in primary spacings is shown to occur in bulk samples due to convection effects, especially at low growth velocities. The effect of convection on array disorder is examined through directional solidification studies in two different alloy systems, Pb-Sn and Al-Cu. A detailed analysis of the spacing distribution is carried out, which shows that the disorder in the spacing distribution is greater in the Al-Cu system than in Pb-Sn system. Numerical models are developed which show that fluid motion can occur in both these systems due to the negative axial density gradient or due the radial temperature gradient which is always present in Bridgman growth. The modes of convection have been found to be significantly different in these systems, due to the solute being heavier than the solvent in the Al-Cu system and lighter than it in the Pb-Sn system. The results of the model have been shown to explain experimental observations of higher disorder and greater solute segregation in a weakly convective Al-Cu system than those in a highly convective Pb-Sn system
Examining Contextual Factors and Individual Value Dimensions of Healthcare Providers Intention to Adopt Electronic Health Technologies in Developing Countries
Part 5: Research in ProgressInternational audienceDespite substantial research on electronic health (e-Health) adoption, there still exist vast differences between resource-rich and resource-poor populations regarding Information Technology adoption. To help bridge the technological gulf between developed and developing countries, this research-in-progress paper examines healthcare providers’ intention to adopt e-health technologies from two perspectives 1) contextual factors (i.e. specific to developing world settings) and 2) individual value dimensions (i.e. cultural, utilitarian, social and personal). The primary output of this paper is a theoretical model merging both the contextual factors and value dimensions; this forms a strong baseline to examine and help ensure the successful adoption of e-Health technologies within developing countries.
