    Compliance to Dietary Guidelines in Elementary School Food Service

    The purpose of this study was to determine compliance to the Dietary Guidelines for Americans and to Recommend Dietary Allowances in Tennessee elementary school lunch programs and to determine training practices as they are related to nutrition. Fifty six of the 145 school food service supervisors in Tennessee participated in the study, a response rate 39%. A four-part questionnaire was developed for all school food service supervisors in the state of Tennessee. The first three parts of the questionnaire consisted of items about types of food products used in cooking, the school food service supervisors\u27 participation in training, and demographic information about the supervisors. In the fourth part of the questionnaire, menus were requested from each school for comparisons with Recommended Dietary Allowances (RDA) and Dietary Guidelines. Using 1/3 of the RDA as a standard of adequacy, nutritional analysis of the menus, using Nutritionist III, showed more than adequate amounts of protein, vitamin A, vitamin C, vitamin B6, folate, sodium, magnesium, calcium, iron, and zinc. Kilocalories were adequate for elementary school aged children. Fat intake was above the 30% recommended amount of kilocalories, fat represented 35.7% in this study. Sodium intake was 1000.9 ± 492.1 mg. The study identified that some of the barriers to implementing the Dietary Guidelines were financial constraints, high saturated fat content of government commodities, lack of support for training, and lack of classroom nutrition education in the schools

    The study investigates the role of media in promoting free debate in Lesotho: A case study of democratic debate on People’s Choice (PC) FM “Thahameso” and Harvest FM “Tsa Mabatooa in Lesotho. Firstly, the study looked at the democratic communication in the volatile democracy of Lesotho, by providing historical factors of pre-independence and authoritarian governments, democrocatic governments prevailing and the dependence on South Africa. Secondly, the study provided literature on the role of broadcast media in different forms of government globally. Thirdly, it provides the analysis and transcription of one month’s recordings of the two political talk shows in Sesotho and identifies the communicative strategies used in this live on-air political discussion by talk show hosts, guests and callers. In these talk shows the researcher identifies the caller, host and guest behaviour and attitudes in discussions that relate the current political situation to the historical development of democracy in Lesotho alongside the economic and political influences from South Africa. The researcher also identifies that the talk show, guests and callers in the challenging political climate use traditional figurative expressions and biblical quotations to express their views. This leads the researcher to conclude that the political talk shows indeed facilitate participatory communication

    Teachers’ Social Media Use and Its Legal Implications

    As society becomes increasingly dependent on technology, school leaders must navigate the evolution of websites, resources, and platforms, including social media, as part of their responsibility to facilitate a safe and productive learning environment for students. This article reviews both constitutional and case law as a means of informing educational leaders of their rights and duties, as well as providing a foundation upon which effective K-12 social media policies and practices for educators can be built. Specifically, we offer an analysis of landmark cases involving the First Amendment and free speech, the delicacy around teachers’s roles as both public employees and private citizens, and recent court cases involving social media use. Additionally, we propose guidelines around social media use, compiled from both practitioners in the field and relevant literature

    Landscape-Scale Implications of the Edge Effect on Soil Fauna Activity in a Temperate Forest

    Although studies on edge effects on species richness and abundance are numerous, the responses of ecosystem processes to these effects have received considerably less attention. How ecosystem processes respond to edge effects is particularly important in temperate forests, where small fragments and edge habitats form a considerable proportion of the total forest area. Soil fauna are key contributors to decomposition and soil biogeochemical cycling processes. Using the bait lamina technique, we quantified soil fauna feeding activity, and its dependence on soil moisture and distance to the edge in a broad-leaved forest in Southern England. Feeding activity was 40% lower at the forest edge than in the interior, and the depth of edge influence was approximately 75 m. A watering treatment showed that moisture limitation was the main driver of the reduced feeding activity at the edge. In England, only 33% of the forest area is greater than 75 m from the edge. Therefore, assuming that the results from this single-site study are representative for the landscape, it implies that only one- third of the forest area in England supports activity levels typical for the forest core, and that edge effects reduce the mean feeding activity across the landscape by 17% (with lower and upper 90% confidence intervals of 1.3 and 23%, respectively). Changing climatic conditions, such as summer droughts may exacerbate such effects as edges lose water faster than the forest interior. The results highlight the importance of taking edge effects into account in ecological studies and forest management planning in highly fragmented landscapes.Peer reviewe
