Rapid review of research on dietary attitudes, beliefs and practices in Ghana 1990-2020
Food-related beliefs and attitudes influence dietary behaviors and are important drivers of nutrition outcomes. Understanding beliefs and attitudes that drive dietary behaviors, as part of the process for developing Food-based Dietary Guidelines is critical for targeting messages to motivate healthy dietary diets. This rapid review was undertaken to summarize readily available local evidence on food-related beliefs, attitudes, and associated practices in Ghana. A rapid review of 39 peer-reviewed publications and graduate-level theses on the dietary behaviors of Ghanaians was conducted between November and December 2020. The study only included articles published between 1990 and 2020 involving apparently healthy populations living in Ghana. Documents were identified through a systematic literature search of Google Scholar and PubMed. Data on food-related knowledge, beliefs, attitudes, and practices were extracted into an excel template and analyzed using thematic content analysis. The sampled research included primarily cross-sectional studies of urban, rural, peri-urban and mixed localities throughout Ghana: one was a prospective research. A range of food-related taboos were identified and classified as taboos for the general population, pregnancyrelated, or child-related. Although awareness of food-related taboos was common, they were not extensively practiced. Energy-giving and nutrient-dense foods are commonly promoted during pregnancy. Culturally prescribed pre-lacteal feeds and other infant and young child feeding (IYCF) behaviors reported in the studies were not aligned with IYCF recommendations. A 3-meals-a-day pattern was observed, commonly, across all age groups; most adult meals, particularly supper, was prepared at home. However, ready-to-eat meals were regularly purchased by adults and adolescents. Adolescents frequently reported snacking and skipping meals; breakfast was the most frequently skipped meal. Fruits and vegetables were the least consumed food groups across all age groups. Muslim faith was associated with consuming more diverse diets and greater fruit and vegetable consumption. The findings of this review provide an overview of food-related beliefs and practices of Ghanaians and can inform decisions on areas to emphasize in food-based dietary guidelines and associated nutrition education messages to promote healthy diets in the Ghanaian population. Effective nutrition education is needed to dispel harmful food beliefs and practices and promote healthy food choices across the life cycle. Anemia prevalence and associated factors among school age children in Accra and Kumasi metropolis in Ghana
Anemia remains a serious public health concern, globally, affecting learning ability and physical development of children. Anemic children are at a higher risk of diminished economic productivity and low earning capacity in adulthood due to impaired school performance and reduced work capacity. Anemia contributes to about a quarter of Africa’s nutrition-related Disability Adjusted Life Years. The objective of this study was to determine the prevalence of anemia and its associated risk factors among school-aged children (SAC) between ages 9 and 15 years in urban Ghana. The analysis included a randomly selected subsample of 1,634 children from a larger study on nutrition of SAC enrolled between 2009 and 2012 in private and public basic schools in the Accra and Kumasi Metropolis in Ghana. Socio-demographic and household characteristics were collected with questionnaires. Weight and height were taken to the nearest 0.1kg and 0.1cm, respectively. Dietary information was collected using a food frequency questionnaire. Data were analyzed using IBM SPSS Statistic version 23. The relationship between hemoglobin levels and socio- demographic variables, and predictors of hemoglobin levels were determined using Chi-square and binary logistic regression. The mean hemoglobin concentration of the study participants was 12.9±1.3 g/dL. In Kumasi, SAC had higher mean hemoglobin concentration (13.1±1.2 g/dL) compared to those from Accra (12.6±1.3 g/dL; p=0.001). Mean hemoglobin concentration was significantly higher among males than females (13.0±1.4 g/dL vs 12.8±1.2 g/dL; p=0.002). Prevalence of anemia was 20.4%; mild anemia was most common (13.6% of total sample). Anemia cases were higher in public schools (24.6%) compared to private (18.2%). Two-thirds of anemia cases (64.0%) were from schools in Accra. Males had significantly higher prevalence of anemia (26.5%) than females (15.9%; p <0.05). In the adjusted logistic regression model, only city of residence (OR+1.65, 95% CI: 1.44–1.83), thinness (OR=2.60, 95% CI: 1.11-5.75), stunting (OR=1.85, 95% CI: 1.99-3.10) and overweight (OR=0.60, 95% CI: 0.36-0.94) were significantly associated with anemia. Secondary School Students’ Conceptual Understanding of Physical and Chemical Changes
In recent years, researchers have shown an interest in understanding students’ own ideas about basic chemical principles and guiding them through innovative ways to gain conceptual understanding where necessary. This research was a case study designed to assess 50 first year high school students’ conceptual understanding about changes in matter, with interpretive underpinnings. A diagnostic probe was administered to find out if discrete particles could be used to differentiate chemical changes from physical changes and to unravel the different conceptual interpretations that students had. Submissions obtained from the students were classified on levels of conceptions, and analysed using frequency counts and percentages, after which an interview was conducted to gain a deeper insight into their unscientific submissions. Findings from the study indicated that only a few students had difficulties in distinguishing between physical and chemical changes. These few did not associate the changes in states with associated physical and chemical properties, as was expected at their level. Neither did they base their explanation on the breaking nor formation of bonds, nor with changes in the constitutions of entities. They overwhelmingly intimated that physical changes were reversible whilst chemical changes were not. About 38% of participants who provided correct definitions for physical and chemical changes in two of the probes could not assign reasons for them. However, almost 79% of the participants showed an appreciable knowledge of types of changes that occur in chemistry. The adopted diagnostic probe and interview were useful in identifying students’ alternative conceptions about changes in chemistry. Diagnostic probes are recommended as a pre-requisite for conceptual change strategies

Comparison of Two School Feeding Programmes in Ghana, West Africa
Background: Malnutrition of children in Ghana continues during school years. There is limited information on how school meals meet nutrient recommendations in Ghana.
Objectives: The aim of this study was to compare energy and nutrient content of meals served by Ghana School Feeding Programme (GSFP) and Non-Governmental School Feeding Programme (NGSFP) and adherence to nutrient recommendations.
Methods: This was a cross sectional study design involving observation of school meals at two sites: GSFP and NGSFP. Average weights of a week’s meal were converted to energy and nutrient equivalence and compared with international recommendations. Differences assessed with t-tests.
Results: NGSFP provided significantly higher portion size (416 ± 96 g vs. 243 ± 50 g; p=0.007), energy (776 ± 427 kcal vs. 315 ± 24 kcal; p=0.042) and fats (17± 8 vs. 6 ± 2; p=0.019) but similar micronutrient contributions to GSFP. NGSFP met energy and macronutrient recommendation set by World Food Programme; whereas, GSFP did not meet the recommendations.
Conclusion and Recommendations: The NGSFP had more energy and macronutrients per serving size than the GSFP. Regulation of meals served by GSFP should be reviewed to ensure they contribute to the adequacy of children’s diets as well as meet recommendations set by World Food Programme
Assessment of optimal pathways for power generation system in Ghana
This study applied the Open Source Energy Modelling System (OSeMOSYS), an optimisation model for long term energy planning, which is integrated in Long-range Energy Alternatives Planning (LEAP) to develop optimal generation pathways and dispatch scheduling of selected generating technologies for power generation in Ghana. Simulating conventional and non-conventional energy technologies, the study examines the technological, economic and environmental implications of renewable energy policies from 2010 to 2040. Sensitivity analyses were undertaken to determine the effect of varied development in non-conventional renewable energy technologies investment cost as well as fuel prices. The findings suggest that, with a comprehensive implementation of energy efficiency and other strategies, renewable energy technologies can contribute more than 70% of the generation requirement in Ghana by 2040. This will result in significant economic and environmental benefits as well as sustainability of the energy sector
Sachet water quality and product registration : a cross-sectional study in Accra, Ghana
The study's objectives were to assess the extent to which packaged water producers follow product registration procedures and to assess the relationship between product registration and drinking water quality in Accra, Ghana. Following preliminary analysis of a national water quality survey, 118 packaged sachet water samples were collected by sampling all brands sold by 66 vendors. A sample of vendors was selected from two high-income and two low-income areas of Accra, Ghana. Sachet packaging and labelling details were recorded and compared to a regulatory database to assess product registration. All samples were weighed and tested for faecal indicator bacteria and selected physico-chemical parameters. Product registration numbers and brand names could be matched to regulatory records for 77 of 118 sachets (65.2%). All samples tested were compliant with national water quality standards for faecal indicator bacteria and nitrate. Brand registration was not associated with any of the quality indicators considered. The results of this study suggest that while a substantial proportion of sachet water is sold without formal product registration, the microbial quality of the unlicensed water is consistently high in Accra, Ghana. Further examination of regulatory enforcement and monitoring will be needed to ensure sustained high water quality over time
Lack of observational evidence for quantum structure of space-time at Plank scales
It has been noted (Lieu & Hillmann, 2002) that the cumulative affect of
Planck-scale phenomenology, or the structure of space-time at extremely small
scales, can be lead to the loss of phase of radiation emitted at large
distances from the observer. We elaborate on such an approach and demonstrate
that such an effect would lead to an apparent blurring of distant
point-sources. Evidence of the diffraction pattern from the HST observations of
SN 1994D and the unresolved appearance of a Hubble Deep Field galaxy at z=5.34
