Microbial flora of commercially produced vacuum packaged, cooked beef roast
Commercially produced vacuum
packaged, fully cooked, microwaveable beef
roasts from four producers were purchased
from local retail markets. Salt concentration,
pH, water activity (aw), and percent moisture,
fat and protein were determined. Samples of
both package juice and homogenized beef
plus juice were analyzed for the presence of
aerobic, anaerobic and lactic acid bacteria
and clostridia-type organisms. The cooked
beef products had pH values from 5.82 to
6.19, water activity of 0.992 to 0.997, and
contained 0.34 to 1.07% salt, 61.89 to
72.39% moisture, 4.29 to 18.21% fat and
15.92 to 20.62% protein. No growth was
detected in juice for aerobic, anaerobic or
lactic acid bacteria or clostridia-type
organisms. Combined beef and juice had
less than 2 CFU/g for aerobic, anaerobic or
lactic acid bacteria or clostridia-type
organisms. Cooking and chilling schedules
used in the manufacture of the four products
we evaluated in this study limited survival
and outgrowth of microorganisms
Computers in Secondary Schools: Educational Games
This entry introduces educational games in secondary schools. Educational
games include three main types of educational activities with a playful
learning intention supported by digital technologies: educational serious
games, educational gamification, and learning through game creation.
Educational serious games are digital games that support learning objectives.
Gamification is defined as the use of "game design elements and game thinking
in a non-gaming context" (Deterding et al. 2011, p. 13). Educational
gamification is not developed through a digital game but includes game elements
for supporting the learning objectives. Learning through game creation is
focused on the process of designing and creating a prototype of a game to
support a learning process related to the game creation process or the
knowledge mobilized through the game creation process. Four modalities of
educational games in secondary education are introduced in this entry to
describe educational games in secondary education: educational purpose of
entertainment games, serious games, gamification, and game design
Design and Creative Methods as a Practice of Liminality in Community-Academic Research Projects
This paper aims to explore the types of spaces and experiences that are created by design and creative practices. More specifically, it focuses on how design and creative practices can engender transformations in the mindset, knowledge, emotions and social relations of people who participate in such practices. To do this, the paper investigates the concepts of liminality and liminal spaces, and the relationships between design/creative methods and liminal spaces using insights from four case studies. The results reveal that design and creative practices may create liminal spaces in many ways, such as neutralizing the working environments, encouraging people to experiment with new ideas and helping them express themselves more freely
Obesity as a Potential Risk Factor for Vincristine Induced Peripheral Neuropathy
Acute lymphoblastic leukemia (ALL) is the most common pediatric cancer. Vincristine is a core chemotherapeutic agent for patients with ALL; unfortunately, approximately 78% will develop vincristine-induced peripheral neuropathy (VIPN). VIPN can result in vincristine dose reductions that decrease therapeutic efficacy: making it important to understand which children are at highest risk for VIPN. We hypothesized that pediatric ALL patients who were obese at diagnosis would develop worse VIPN than healthy weight children with ALL within the first year. Our results confirmed that obese pediatric patients have significantly (p=0.03) worse VIPN than patients of healthy weight
The Virtual Sociality of Rights: The Case of Women\u27s Rights are Human Rights
This essay traces the relationship between activists and academics involved in the campaign for women\u27s rights as human rights as a case study of the relationship between different classes of what I call knowledge professionals self-consciously acting in a transnational domain. The puzzle that animates this essay is the following: how was it that at the very moment at which a critique of rights and a reimagination of rights as rights talk proved to be such fertile ground for academic scholarship did the same rights prove to be an equally fertile ground for activist networking and lobbying activities? The paper answers this question with respect to the work of self-reflexivity in creating a virtual sociality of rights
Human blood autoantibodies in the detection of colorectal cancer
Colorectal cancer (CRC) is the second most common malignancy in the western world. Early detection and diagnosis of all cancer types is vital to improved prognosis by enabling early treatment when tumours should be both resectable and curable. Sera from 3 different cohorts; 42 sera (21 CRC and 21 matched controls) from New York, USA, 200 sera from Pittsburgh, USA (100 CRC and 100 controls) and 20 sera from Dundee, UK (10 CRC and 10 controls) were tested against a panel of multiple tumour-associated antigens (TAAs) using an optimised multiplex microarray system. TAA specific IgG responses were interpo- lated against the internal IgG standard curve for each sample. Individual TAA specific responses were examined in each cohort to determine cutoffs for a robust initial scoring method to establish sensitivity and specificity. Sensitivity and specificity of combinations of TAAs provided good discrimination between cancer-positive and normal serum. The overall sensitivity and specificity of the sample sets tested against a panel of 32 TAAs were 61.1% and 80.9% respectively for 6 antigens; p53, AFP, K RAS, Annexin, RAF1 and NY-CO16. Furthermore, the observed sensitivity in Pittsburgh sample set in different clinical stages of CRC;stageI(n=19),stageII(n=40),stageIII(n=34)andstageIV(n=6)wassimilar (73.6%, 75.0%, 73.5% and 83.3%, respectively), with similar levels of sensitivity for right and left sided CRC. We identified an antigen panel of sufficient sensitivity and specificity for early detection of CRC, based upon serum profiling of autoantibody response using a robust multiplex antigen microarray technology. This opens the possibility of a blood test for screening and detection of early colorectal cancer. However this panel will require further validation studies before they can be proposed for clinical practice
