    Gas Chromatography in the Analysis of Compounds Released from Wood into Wine

    Wood has been used in alcoholic beverages for centuries, mainly as material for containers used for alcoholic beverages aging. Recently OIV (Organisation International de la Vigne et du Vin) approved the use of chips (Resolution oeno 3/2005) and staves as alternatives for barrels. These practices are being rapidly spread among winemakers. The increased used of these alternatives are mainly related to low investments, similar sensorial results obtained in shorter time, simplicity of use and the possibility of avoiding contamination and offflavours, too-often related to aged or contaminated barrels. Besides oak, other woods are being looked at for enological purposes, such as acacia, cherry, chestnut and mulberry. Their characteristics are commonly compared to oak. In the past, chestnut (Castanea sativa) was widely used in the Mediterranean area, because of its availability and its cheap price. Chestnut wood has higher porosity than oak. Cherry wood (Prunus avium) has high porosity and oxygen permeation, and is usually used for short aging times. Acacia wood (Robinia pseudoacacia) is hard, with low porosity. Mulberry wood (Morus alba and Morus nigra) is tender and elastic, with medium porosity, and is characterized by a low release of compounds. The lack of properties for cooperage is now overcome by their possible use as staves or chips. The aim of this work is to present an overview on volatile and semi-volatile composition of different kind of wood with oenological interest. Within this purpose, this work will be focused on a bibliographic review of the most used chromatographic methods for characterization of volatile and semi-volatile compounds, including also a brief description of the most common reported sample preparation methods for chromatographic analysis

    Cutinase activity in supercritical and organic media: water activity, solvation and acid–base effects

    We performed a comparative study on the activity of Fusarium solani pisi cutinase immobilized on zeolites NaA and NaY, in n-hexane, acetonitrile, supercritical ethane (sc-ethane) and sc-CO2, at two different water activity (aW) values set by salt hydrate pairs in situ and at acid–base conditions fixed with solid-state buffers of aqueous pKa between 4.3 and 10.6. The reaction studied was the transesterification of vinyl butyrate by (R,S)-2-phenyl-1-propanol. The transesterification activity of cutinase was highest and similar in sc-ethane and in n-hexane,about one order of magnitude lower in acetonitrile and even lower in sc-CO2. Activity coefficients (γ) generated for the two substrates indicated that they were better solvated in acetonitrile and thus less available for binding at the active site than in the other three solvents. γ data also suggested higher reaction rates in sc-ethane than in n-hexane, as observed, and provided evidence for a direct negative effect of sc-CO2 on enzyme activity. Manipulation of the acid–base conditions of the media did not afford any improvement of the initial rates of transesterification relative to the blanks (no added acid–base buffer, only salt hydrate pair), except in the case of cutinase immobilized on zeolite NaA in sc-ethane at aW = 0.7. The poor performance of the blank in this case and the great improvement observed in the presence of a basic buffer suggest a deleterious acidic effect in the medium which, an experiment without additives confirmed, was not due to the known acidic character of the salt hydrate pair used to set aW = 0.7. In acetonitrile, increasing aW was accompanied by a decrease in initial rates of transesterification, unlike in the other solvents. There was considerable hydrolysis in acetonitrile, where initial rates of hydrolysis increased about 20-fold from aW = 0.2 to 0.7. Hydrolysis was less pronounced in sc-ethane and in n-hexane, and only at aW = 0.7, and in sc-CO2 butyric acid was detected only at very long reaction times, in agreement with a generally low catalytic activity.     Z-score mapping for standardized analysis and reporting of cardiovascular magnetic resonance modified Look-Locker inversion recovery (MOLLI) T1 data: normal behavior and validation in patients with amyloidosis

    BACKGROUND: T1 mapping using modified Look-Locker inversion recovery (MOLLI) provides quantitative information on myocardial tissue composition. T1 results differ between sites due to variations in hardware and software equipment, limiting the comparability of results. The aim was to test if Z-scores can be used to compare the results of MOLLI T1 mapping from different cardiovascular magnetic resonance (CMR) platforms. METHODS: First, healthy subjects (n = 15) underwent 11 combinations of native short-axis T1 mapping (four CMR systems from two manufacturers at 1.5 T and 3 T, three MOLLI schemes). Mean and standard deviation (SD) of septal myocardial T1 were derived for each combination. T1 maps were transformed into Z-score maps based on mean and SD values using a prototype post-processing module. Second, Z-score mapping was applied to a validation sample of patients with cardiac amyloidosis at 1.5 T (n = 25) or 3 T (n = 13). RESULTS: In conventional T1 analysis, results were confounded by variations in field strength, MOLLI scheme, and manufacturer-specific system characteristics. Z-score-based analysis yielded consistent results without significant differences between any two of the combinations in part 1 of the study. In the validation sample, Z-score mapping differentiated between patients with cardiac amyloidosis and healthy subjects with the same diagnostic accuracy as standard T1 analysis regardless of field strength. CONCLUSIONS: T1 analysis based on Z-score mapping provides consistent results without significant differences due to field strengths, CMR systems, or MOLLI variants, and detects cardiac amyloidosis with the same diagnostic accuracy as conventional T1 analysis. Z-score mapping provides a means to compare native T1 results acquired with MOLLI across different CMR platforms

    Análisis sensorial y detección electrónica de aromas para comparar aceites obtenidos por diferentes métodos de extracción

    A sensorial analysis and an aroma analysis by electronic sensory devices were used to compare olive oils produced according to two different extraction methods. The extraction methods compared were the press system and two phase decanter. Samples were taken from the harvests of 2002-2004 and the olives were all from the same variety. The variety used was the Portuguese Galega sp. Olives were picked and technologically handled under predetermined and supervised conditions. Olive oils produced were better classified when the sensory analysis by a panel was applied than when an electronic sensory analysis was performed, even after sensor optimization. This observation is in accordance with the fact that olive oil has a low volatility matrix and “flavor”, rather than aroma, can give a clearer characterization than electronic sensory analysis alone, where aroma is the main characteristic evaluated.El análisis sensorial y el análisis de aromas por medio de sistemas sensoriales electrónicos han sido utilizado para comparar aceites de oliva producidos a través de dos sistemas de extracción diferentes. Los métodos de extracción comparados han sido el sistema de prensas y el decantador de dos fases. Las muestras fueron producidas durante las cosechas del periodo 2002- 2004, y las aceitunas eran todas de la misma variedad portuguesa Gallega sp. Las aceitunas fueron seleccionadas y tratadas tecnológicamente bajo condiciones predeterminadas y supervisadas. Los aceites producidos resultaron mejor clasificados cuando fue aplicado el análisis sensorial por panel que cuando se utilizó el análisis con detección electrónica de aromas, incluso después de la optimización de los sensores. Esta observación está de acuerdo con el hecho de que los aceites son una matriz poco volátil y que es el “flavour”, más que el aroma, el que junto con el gusto puede proporcionar una caracterización mejor que la detección electrónica, en la que el aroma es la principal característica evaluada

    Topological Charged Black Holes in High Dimensional Spacetimes and Their Formation from Gravitational Collapse of a Type II Fluid

    Topological charged black holes coupled with a cosmological constant in R2×XD2R^{2}\times X^{D-2} spacetimes are studied, where XD2X^{D-2} is an Einstein space of the form (D2)RAB=k(D3)hAB{}^{(D-2)}R_{AB} = k(D-3) h_{AB}. The global structure for the four-dimensional spacetimes with k=0k = 0 is investigated systematically. The most general solutions that represent a Type IIII fluid in such a high dimensional spacetime are found, and showed that topological charged black holes can be formed from the gravitational collapse of such a fluid. When the spacetime is (asymptotically) self-similar, the collapse always forms black holes for k=0,1k = 0, -1, in contrast to the case k=1k = 1, where it can form either balck holes or naked singularities.Comment: 14 figures, to appear in Phys.     Association between hospital anxiety depression scale and autonomic recovery following exercise

    The hospital anxiety depression scale (HADS) is a benchmark used to investigate possible and probable cases of psychosomatic illness. Its affiliation with autonomic recovery after exercise is unclear and, as a technique applied to evaluate cardiovascular risk. We assessed a possible link between HADS and autonomic recovery after exercise. We studied healthy subjects split into two groups: Low HADS (n = 20) and High HADS (n = 21). Subjects consented to moderate aerobic exercise on a treadmill at 60% to 65% of the maximum heart rate (HR) for 30 min. We studied HR variability (HRV) before and during 30 min after exercise. Subjects with higher HADS values presented delayed recovery of HR and root-mean square of differences between adjacent normal RR intervals (RMSSD) after submaximal exercise. RMSSD during recovery from exercise had a significant association with HADS. In summary, subjects with higher HADS presented slower vagal recovery following exercise

The observation of the photoacoustic spectra showed the transition bands associated with Fe3+ ions in octahedral or tetrahedral symmetry.     Comportamentos associados à manutenção dos resultados após cirurgia bariátrica

    A Cirurgia Bariátrica (CB) é um método de tratamento da obesidade que vem recebendo destaque principalmente devido aos resultados positivos no tratamento das comorbidades associados ao excesso de peso. No entanto, esse tipo de intervenção necessita de uma fase de adaptação e mudanças de estilo de vida principalmente devido a complicações pós-cirúrgicas relacionadas à deficiência de algumas vitaminas e minerais. Nesse sentido, o objetivo do estudo foi associar o perfil antropométrico, composição corporal e tempo desde a realização da CB com a adesão a comportamentos alimentares saudáveis de pacientes submetidos a esse procedimento. Estudo do tipo transversal realizado com 98 pacientes submetidos ao bypass gástrico em Y de Roux. Foram avaliados peso, estatura, circunferência da cintura (CC) e quadril, massa de gordura, massa muscular esquelética e o comportamento alimentar por meio do questionário Bariatric Surgery Self-management Questionnaire Seven, que possui 7 domínios referentes ao comportamento alimentar (CA), à ingestão de fluidos (IF), à atividade física (AF), à gestão da síndrome de dumping (GSD), à admissão de suplementos (AS), ao consumo de frutas, vegetais e grãos integrais (CFVGI) e à ingestão de proteínas (IP). Foi verificada associação entre adesão total dos comportamentos alimentares, CFVGI, IP com o estado nutricional e CC após a CB. Observamos também menor peso, IMC e CC e menor % e quantidade de gordura em pacientes que apresentaram boa adesão nesses domínios. Nos domínios, CA, IF e AF os pacientes com menor tempo após a realização da CB apresentaram melhor adesão a esses comportamentos. Os sujeitos mais jovens apresentaram maior adesão à AF comparados aos mais velhos. Em conclusão, a adesão aos comportamentos alimentares após a CB se associou com o estado nutricional e CC, bem como com o tempo após a realização à CB. Sugere-se a realização de estudos que proponham modelos de intervenção para o melhor controle e manutenção dos comportamentos alimentares dos pacientes submetidos a esse procedimento.Bariatric Surgery (BS) is a method for obesity treatment which has been receiving attention mainly due to the positive results in the treatment of comorbidities associated with overweight. However, this type of intervention requires a period of adaptation and change of lifestyle mainly due to post surgery complications related to vitamins and minerals deficits. In this way, the objective of this study was to associate the anthropometric profile, body composition and time since the surgery with the adherence to healthy behavior eating on patients who underwent this procedure. A cross-sectional study was conducted with 98 patients who underwent gastric bypass Roux-Y. We evaluated weight, height, waist (WC) and hip circumferences, body fat (BF), skeletal muscle mass and feeding behavior by the Bariatric Surgery Self-management Questionnaire Seven, which has 7 domains related to feeding behavior (FB), the fluid intake (FI), physical activity (PA), management of Dumping Syndrome (MDS), admission of supplements (AS), consume of fruits, vegetables and whole grains (CFVWG) and protein intake (PI).  We verify association between total adherence of eating behaviors, CFVWG, and PI with nutritional status and WC after BS. We also observed lower weight, BMI and WC, % and quantity of BF in patients who presented good adherence in these domains. In the domains FB, FI, and PA the patients who had operated in less time present better adherence. The younger subjects showed higher PA adhesion compared to the older ones. In conclusion, feeding behaviors adherence after BS was associated with nutritional status and WC, as well as time since BS. It is suggested to carry out studies that propose intervention models for the better control and maintenance of feeding behaviors in patients who underwent BS
