    Propriedades físicas de misturas para sherbet de mangaba

    Viscosity, unfrozen water (wnc) and glass transition temperature of the maximally freeze-concentrated material (Tg') of sherbet mixtures and the overrum of the sherbets with different concentrations of guar gum (from 0.2% to 0.5%) and mangaba pulp (21.1%, 25.8% and 28.5%) were evaluated. Apparent viscosity ranged from 85.8 to 286.1 cP, increasing with guar gum concentration and mangaba pulp. Thermal analysis using differential scanning calorimetry of sherbets mixture showed that wnc was from 12% to 20%, decreasing with the increasing of mangaba pulp concentration. The Tg' ranged from -57.65oC to -53.45oC and was not different between the samples. The overrum was from 20.1% to 40.59%. Sherbets containing the same pulp concentration presented different values of this variable, however a relationship between the increasing of guar gum concentrations and the air incorporation was observed only for sherbets with 25.8% of mangaba pulp. The stabilizer modified the viscosity of the mixture and overrum and the pulp concentration influenced thermal properties. Higher overrum is better for product smoothness. Higher pulp concentration decreases the wnc so, the product concentrates less water available to form great ices during the changes in the temperature which may cause losses in the product quality.O objetivo deste trabalho foi avaliar a viscosidade, a quantidade de água não congelada (wnc) e a temperatura de transição vítrea da fração maximamente crioconcentrada (Tg') de misturas para sherbet, e a incorporação de ar (IAr) dos sherbets, com diferentes concentrações de goma guar (0,2% a 0,5%) e polpa de mangaba (21,1%, 25,8% e 28,6%). A viscosidade aparente variou de 85,8 a 286,1 cP, aumentando com as concentrações de goma guar e mangaba. As análises térmicas com calorímetro diferencial de varredura mostraram que a wnc variou entre 12% e 20%, diminuindo com o aumento da concentração de polpa. A Tg' variou de -57,65oC a -53,45oC e não apresentou diferença entre as amostras. A IAr foi de 20,01% a 40,59%. Sherbets com a mesma concentração de polpa apresentaram valores diferentes desta variável, mas uma relação entre o aumento da quantidade de goma guar e maior IAr foi observada somente para os sherbets com 25,8% de polpa. O estabilizante interfere na viscosidade da mistura e IAr, e a concentração de polpa influencia as propriedades térmicas. O aumento de IAr proporciona melhor maciez ao produto. Maior quantidade de polpa diminui a wnc, assim o produto terá menos água disponível para migrar e formar cristais de gelo maiores durante as oscilações na temperatura, diminuindo a qualidade do produto

    Neste artigo é evidenciada a relação entre currículo e conhecimento, abordando-se o conhecimento escolar na sua seleção, organização e transformação, a partir de uma revisão do conceito de transposição didática e da proposição dos conceitos de transformação curricular e transformação didática. Qualquer debate sobre o currículo exige a dilucidação do conhecimento e uma reflexão sobre os seus diversos significados, sobretudo quando a educação se torna num projeto amplo de questionamento da realidade social. Para além de várias questões colocadas acerca do conhecimento escolar e do modo como a sua organização pode ser realizada, procura-se centrar o debate numa reflexão sobre as fronteiras entre conhecimentos e esclarecer que, sobre essa temática, jamais poderão existir respostas fechadas.This article highlights the link between curriculum and knowledge, the approach of school knowledge’s selection, organization and transformation is based on a revision of the concept of didactic transposition and on the proposal of the concepts of curriculum and didactic transformation. Debates on curriculum demand an explanation and a reflection on the multiple meanings of knowledge mainly when education aims to be a broad project to contest social reality. It aims to focus the discussion on a reflection regarding the borders between knowledges and to show that in this subject there are never closed answers.Dans cet article est mis en évidence le rapport entre le curriculum et la connaissance, en abordant la connaissance scolaire dans sa sélection, son organisation et sa transformation à partir d’une révision du concept de transposition didactique et de la proposition des concepts de transformation du curriculum et de transformation didactique. Toute discussion sur le curriculum exige la dilucidation de la connaissance et une réflexion sur ses plusieurs signifiés, surtout quand l’éducation devient un projet plus large de mise en question de la réalité sociale. Au delà des plusieurs questions posées autour de la connaissance scolaire et de la manière comme son organisation peut être réalisée, on cherche á fixer le débat dans une réflexion sur les frontières entre connaissances et éclaircir que, sur cette thématique jamais ne pourront exister des réponses absolues.En este trabajo se pone en evidencia la relación entre el currículum y el conocimiento, abordándose el conocimiento escolar en su selección, organización y transformación desde una revisión del concepto de transposición didáctica y de la proposición de los conceptos de transformación curricular y transformación didáctica.     Hanseniase neural primaria: revisao sistematica

    The authors proposed a systematic review on the current concepts of primary neural leprosy by consulting the following online databases: MEDLINE, Lilacs/SciELO, and Embase. Selected studies were classified based on the degree of recommendation and levels of scientific evidence according to the “Oxford Centre for Evidence-based Medicine”. The following aspects were reviewed: cutaneous clinical and laboratorial investigations, i.e. skin clinical exam, smears, and biopsy, and Mitsuda's reaction; neurological investigation (anamnesis, electromyography and nerve biopsy); serological investigation and molecular testing, i.e. serological testing for the detection of the phenolic glycolipid 1 (PGL-I) and the polymerase chain reaction (PCR); and treatment (classification criteria for the definition of specific treatment, steroid treatment, and cure criteria).Os autores propuseram-se a realizar uma revisão sistemática em conceitos atuais sobre a hanseníase neural primária, consultando as seguintes bases bibliográficas on-line: MEDLINE, Lilacs/SciELO e Embase. Os estudos selecionados foram classificados conforme o grau de recomendação e o nível de evidência científica de acordo com o “Oxford Centre for Evidence-based Medicine”.     LALINET: The First Latin American–Born Regional Atmospheric Observational Network

    Sustained and coordinated efforts of lidar teams in Latin America at the beginning of the 21st century have built LALINET (Latin American Lidar NETwork), the only observational network in Latin America created by the agreement and commitment of Latin American scientists. They worked with limited funding but an abundance of enthusiasm and commitment toward their joint goal. Before LALINET, there were a few pioneering lidar stations operating in Latin America, described briefly here. Bi-annual Latin American Lidar Workshops, held from 2001 to the present, supported both the development of the regional lidar community and LALINET. At those meetings, lidar researchers from Latin America meet to conduct regular scientific and technical exchanges among themselves and with experts from the rest of the world. Regional and international scientific cooperation has played an important role for the development of both the individual teams and the network. The current LALINET status and activities are described, emphasizing the processes of standardization of the measurements, methodologies, calibration protocols, and retrieval algorithms. Failures and successes achieved in the buildup of LALINET are presented. In addition, the first LALINET joint measurement campaign and a set of aerosol extinction profile measurements obtained from the aerosol plume produced by the Calbuco volcano eruption on April 22, 2015, are described and discussed.Fil: Antuña Marrero, Juan Carlos.     In-hospital outcomes and predictors of mortality in acute myocardial infarction with cardiogenic shock treated by primary angioplasty: data from the InCor registry

    INTRODUÇÃO: O choque cardiogênico é a maior causa de morte em pacientes com infarto agudo do miocárdio com supradesnivelamento do segmento de ST (IAMCSST). O presente estudo avaliou pacientes com IAMCSST e choque cardiogênico submetidos a intervenção coronária percutânea primária com o objetivo de estabelecer seu perfil e os preditores de mortalidade hospitalar. MÉTODOS: Registro unicêntrico, incluindo 100 pacientes avaliados no período de 2001 a 2009 quanto a características clínicas, angiográficas e do procedimento, e a desfechos intra-hospitalares. Por análise multivariada foram determinados preditores independentes da mortalidade hospitalar. RESULTADOS: Com relação às características clínicas, foi observada alta prevalência de fatores de risco, sendo a taxa de sucesso angiográfico de 92%, apesar da complexidade das lesões (83,1% do tipo B2/C). A artéria mais acometida foi a descendente anterior (45%), tendo o padrão multiarterial ocorrido em 73% dos casos. A taxa de mortalidade foi de 45%, sendo seus preditores independentes o padrão multiarterial [odds ratio (OR) 2,62; intervalo de confiança de 95% (IC 95%) 1,16-5,90] e o fluxo coronário TIMI < 3 ao final do procedimento (OR 2,11, IC 95% 1,48-3,02). CONCLUSÕES: Os pacientes com IAMCSST complicado por choque cardiogênico apresentaram características clínicas e angiográficas de alto risco e, apesar do alto sucesso angiográfico do procedimento, altas taxas de mortalidade. Foram preditores independentes de mortalidade o padrão multiarterial e fluxo TIMI < 3 ao final do procedimento

    Genomic history of coastal societies from eastern South America

    Sambaqui (shellmound) societies are among the most intriguing archaeological phenomena in pre-colonial South America, extending from approximately 8,000 to 1,000 years before present (yr bp) across 3,000 km on the Atlantic coast. However, little is known about their connection to early Holocene hunter-gatherers, how this may have contributed to different historical pathways and the processes through which late Holocene ceramists came to rule the coast shortly before European contact. To contribute to our understanding of the population history of indigenous societies on the eastern coast of South America, we produced genome-wide data from 34 ancient individuals as early as 10,000 yr bp from four different regions in Brazil. Early Holocene hunter-gatherers were found to lack shared genetic drift among themselves and with later populations from eastern South America, suggesting that they derived from a common radiation and did not contribute substantially to later coastal groups. Our analyses show genetic heterogeneity among contemporaneous Sambaqui groups from the southeastern and southern Brazilian coast, contrary to the similarity expressed in the archaeological record. The complex history of intercultural contact between inland horticulturists and coastal populations becomes genetically evident during the final horizon of Sambaqui societies, from around 2,200 yr bp, corroborating evidence of cultural change

    MAMMALS IN PORTUGAL : A data set of terrestrial, volant, and marine mammal occurrences in P ortugal

    Mammals are threatened worldwide, with 26% of all species being includedin the IUCN threatened categories. This overall pattern is primarily associatedwith habitat loss or degradation, and human persecution for terrestrial mam-mals, and pollution, open net fishing, climate change, and prey depletion formarine mammals. Mammals play a key role in maintaining ecosystems func-tionality and resilience, and therefore information on their distribution is cru-cial to delineate and support conservation actions. MAMMALS INPORTUGAL is a publicly available data set compiling unpublishedgeoreferenced occurrence records of 92 terrestrial, volant, and marine mam-mals in mainland Portugal and archipelagos of the Azores and Madeira thatincludes 105,026 data entries between 1873 and 2021 (72% of the data occur-ring in 2000 and 2021). The methods used to collect the data were: live obser-vations/captures (43%), sign surveys (35%), camera trapping (16%),bioacoustics surveys (4%) and radiotracking, and inquiries that represent lessthan 1% of the records. The data set includes 13 types of records: (1) burrowsjsoil moundsjtunnel, (2) capture, (3) colony, (4) dead animaljhairjskullsjjaws, (5) genetic confirmation, (6) inquiries, (7) observation of live animal (8),observation in shelters, (9) photo trappingjvideo, (10) predators dietjpelletsjpine cones/nuts, (11) scatjtrackjditch, (12) telemetry and (13) vocalizationjecholocation. The spatial uncertainty of most records ranges between 0 and100 m (76%). Rodentia (n=31,573) has the highest number of records followedby Chiroptera (n=18,857), Carnivora (n=18,594), Lagomorpha (n=17,496),Cetartiodactyla (n=11,568) and Eulipotyphla (n=7008). The data setincludes records of species classified by the IUCN as threatened(e.g.,Oryctolagus cuniculus[n=12,159],Monachus monachus[n=1,512],andLynx pardinus[n=197]). We believe that this data set may stimulate thepublication of other European countries data sets that would certainly contrib-ute to ecology and conservation-related research, and therefore assisting onthe development of more accurate and tailored conservation managementstrategies for each species.
