Used food oils: physical-chemical indicators of quality degradation

Jelgava, LLUUsed food oil (UFO), designated as frying oil, is a residue. Degradation by reuse or during storage, may occur by contacting, chemical, enzymatic and microbiological pathways, but oxidation is a major concern of the industry, as it affects sensory and nutritional quality of edible oils, with potentially toxic compounds formation. In Portugal, UFO's main destination still is the sewerage system, an environmental problem and waste of raw material, which can be re-qualified for non-food uses. However, quality control applied to UFO's, often results into expensive analysis inappropriate for small laboratories and catering industry. This project, developed with the Musketeers Group Portugal co-promotion (2012-2016), aimed to identify low-cost physicochemical parameters for further implementation as UFO's Quality Degradation Indicators (QDI) indicating defects quickly and accurately. UFO's analysis was tested on the use, for industrial frying, and by degradation induced in the laboratory (frying and heat stability tests) by applying following parameters: moisture, water activity (a(w)), total acidity, peroxide index, iodine index, colour (CIE, CIE Lab), UV absorbency, total polar compounds and microbiological indicators. Internal procedures (ESAS) were validated, redefining working ranges and test conditions, as standards procedures did not provide reliable results for the entire life cycle of oils, whose profile changes with time and reuse. Results demonstrate significant differences with quick response parameters as Total Acidity, Peroxide Index and CIE Lab colour, outlined as QDI's. Moisture, aw and CIE Lab colour proved to be inadequate for this purpose. The Boomerang Effect: How Nurses' Regulation of Patients' Affect Associates With Their Own Emotional Exhaustion and Affective Experiences
Recent research has shown that the intentional regulation of others’ affect has effects not only on the target (e.g., a patient) of the regulation, but also on the agent (e.g., a nurse). In particular, the use of intentional interpersonal affect regulation strategies has been found to predict employees’ emotional exhaustion (EEx). Use of affect-worsening strategies is associated with an increase in EEx, whereas the effect of using affect-improving strategies is less clear. Another relevant consequence of interpersonal affect regulation is its effect on affective experiences, which is one of the main determinants of job attitudes. This study tests the relationships between the interpersonal affect regulation strategies that nurses use to regulate their patients’ affect and the nurses’ EEx and affective experiences. A longitudinal 2-wave field study was conducted in sample of nurses. Participants completed a questionnaire on 2 different occasions, 2 months apart (Time 1 [T1], Time 2 [T2]). Of the 141 participants at T1, 103 also completed the survey at T2. Longitudinal hierarchical regression analyses showed that using affect-worsening strategies was a significant predictor of nurse’s EEx, whereas using affect-improving strategies did not significantly predict their EEx. For affective experiences, use of affect-worsening strategies was related to nurses experiencing low-activation negative affect (e.g., feeling depressed); whereas affect-improving strategies was related to them experiencing low-activation positive affect (e.g., feeling calm). Results support the view that intentional regulation of patients’ affect needs to be considered not only in relation to the patients’ perception of service quality but also from the perspective of nurses’ well-being

The educative process, according to the more traditional point of view, is simply the transmission of a series of data of an intelectual character. In this paper a study is made of History as Knowledge and how it is the result of a series of institutional, social and ideological events, which vary according to the historical circumstances. These events contribute to the formation of the social reality, the development of which shows us the fundamental importante of the transmission of the knowlege of History, essencial for the definition of the social and national entities from the nineteenth century on
Structure and relaxations in liquid and amorphous Selenium
We report a molecular dynamics simulation of selenium, described by a
three-body interaction. The temperatures T_g and T_c and the structural
properties are in agreement with experiment. The mean nearest neighbor
coordination number is 2.1. A small pre-peak at about 1 AA^-1 can be explained
in terms of void correlations. In the intermediate self-scattering function,
i.e. the density fluctuation correlation, classical behavior, alpha- and
beta-regimes, is found. We also observe the plateau in the beta-regime below
T_g. In a second step, we investigated the heterogeneous and/or homogeneous
behavior of the relaxations. At both short and long times the relaxations are
homogeneous (or weakly heterogeneous). In the intermediate time scale, lowering
the temperature increases the heterogeneity. We connect these different domains
to the vibrational (ballistic), beta- and alpha-regimes. We have also shown
that the increase in heterogeneity can be understood in terms of relaxations
Assuring potato tuber quality during storage: A future perspective
Potatoes represent an important staple food crop across the planet. Yet, to maintain tuber quality and extend availability, there is a necessity to store tubers for long periods often using industrial-scale facilities. In this context, preserving potato quality is pivotal for the seed, fresh and processing sectors. The industry has always innovated and invested in improved post-harvest storage. However, the pace of technological change has and will continue to increase. For instance, more stringent legislation and changing consumer attitudes have driven renewed interest in creating alternative or complementary post-harvest treatments to traditional chemically reliant sprout suppression and disease control. Herein, the current knowledge on biochemical factors governing dormancy, the use of chlorpropham (CIPC) as well as existing and chemical alternatives, and the effects of pre- and post-harvest factors to assure potato tuber quality is reviewed. Additionally, the role of genomics as a future approach to potato quality improvement is discussed. Critically, and through a more industry targeted research, a better mechanistic understanding of how the pre-harvest environment influences tuber quality and the factors which govern dormancy transition should lead to a paradigm shift in how sustainable storage can be achieved
