    Extent of partial ice cover due to carbon cycle feedback in a zonal energy balance model

    International audienceA global carbon cycle is introduced into a zonally averaged energy balance climate model. The physical model components are similar to those of Budyko (1969) and Sellers (1969). The new carbon components account for atmospheric carbon dioxide concentrations and the terrestrial and oceanic storage of carbon. Prescribing values for the sum of these carbon components, it is found that inclusion of a closed carbon cycle reduces the range of insolation over which stable partial ice cover solutions may occur. This highly simplified climate model also predicts that the estimated release of carbon from fossil fuel burning over the next hundred years could result in the eventual melting of the ice sheets.     Microbiological quality evaluation of ready-to-eat mixed vegetable salad, food ingredients and some water samples from a restaurant in Accra: A case study

    One serious threat to public health in both developed and developing countries is the microbial contamination of food. This problem poses a great challenge and consequently has economic implications. Causes of microbial contamination are diverse and these maybe natural, environmental, or technological. The microbiological quality of most readyto- eat foods is of great significance to human  health because they require minimal or no processing when consumed. The aim of this research was to investigate the microbiological quality of some ready-to-eat mixed vegetable salad foods, ingredients as well as the wash water samples of an urban restaurant located in Accra, Ghana. A total of thirty (30) samples categorized into mixed vegetable salads, foods and water obtained from an urban restaurant in the national capital of Ghana, Accra. They were analyzed at the microbiology laboratory and food microbiology  la  Loratories of School of Allied  Health Sciences (UHAS) and Council for Scientific and Industrial Research-Food Research Institute (CSIR-FRI), Ghana, respectively. Standard microbiological methods that are per International Organization for Standardization (ISO) Methods and Nordic Committee on Food Analysis Methods (NMKL) were used in determining the presence and levels of bacteria and fungi. Data obtained were transformed from standard to logarithmic forms and reported as mean+standard deviations. The aerobic plate countsamples ranged from 0- 4.73 log 10 CFU/g. E-coli counts also ranged between 0- 2.53 log 10 CFU, while Bacillus cereus counts were very low at 0-<10 log 10 CFU/g. Clostridium perfringens and Staphylococcus aureus counts were also very low ranging from 0- 1.0 log10 CFU/g. Enterobacteriaceae counts also ranged from 0- 1.90 log10 CFU/g. Molds and yeasts counts were generally low and ranged from  0- 2.48 log 10 CFU/g and 0- 1.0 log10 CFU/g, respectively. None of the samples tested contained Listeria monocytogenes and Salmonella spp. Fungal microbial loads were minimal given the quantities, and were deleterious to the health of consumers. The study revealed that the bacterial loads on mixed vegetable salads, ingredients and water samples used and served by an urban restaurant in Accra were within safe limits according to American Public Health Association (APHA) and International Commission for MicrobiologicalSpecifications for Foods (ICMSF) guidelines and, therefore, good for human consumption.     Characterization of the dominant microorganisms responsible for the fermentation of dehulled maize grains into nsiho in Ghana

    Nsiho (white kenkey) is a type of kenkey, a sour stiff dumpling, produced from fermented maize meal in Ghana. The dominant microorganisms responsible for the fermentation of nsiho were characterized by analysing samples from four traditional production sites at Anum in the Eastern Region of Ghana. During 48 h of steeping dehulled maize grains, the pH values decreased from 6.05 to 5.93 to 3.59 to 3.55, whilst titratable acidity increased from 0.02 to 0.03 to 0.27 to 0.32%. In the subsequent 12 h dough fermentation, the pH decreased from 6.02 to 5.80 to 3.52 to 3.46, whilst titratable acidity increased from 0.25 to 0.27 to 0.35 to 0.38%. The lactic acid bacteria population increased by 2 to 5 log units to concentrations of 107 to 108 CFU/ml during steeping and by 2 to 3 log units from 105 to 106 CFU/g to 108 to 109 CFU/g during dough fermentation. Yeasts counts increased by 3 to 4 log units during steepingand by 2 to 4 log units during dough fermentation. The most frequently isolated lactic acid bacteria responsible for nsiho fermentation were identified as Lactobacillus fermentum (47.1%), Lactobacillus brevis (25%), Lactobacillus plantarum (14.42%), Pediococcus pentosaceus (8.65%) and Pediococcus acidilactici, (4.8%). The dominant yeasts species were Saccharyomyces cerevisiae (47.6%), Candida krusei (29.1%),  Debaryomyces spp., (15%) and Trichosporon spp., (8.3%).     Observable implications of geometrical and dynamical aspects of freeze-out in heavy ion collisions

    Using an analytical parameterization of hadronic freeze-out in relativistic heavy ion collisions, we present a detailed study of the connections between features of the freeze-out configuration and physical observables. We focus especially on anisotropic freeze-out configurations (expected in general for collisions at finite impact parameter), azimuthally-sensitive HBT interferometry, and final-state interactions between non-identical particles. Model calculations are compared with data taken in the first year of running at RHIC; while not perfect, good agreement is found, raising the hope that a consistent understanding of the full freeze-out scenario at RHIC is possible, an important first step towards understanding the physics of the system prior to freeze-out.Comment: 36 pages, 56 figures, 2 tables; version accepted for publication in PRC: some figures, references and discussion added; now also discusses classical versus quantum statistic

    Application of a value chain approach to understanding white kenkey production, vending and consumption practices in three districts of Ghana

    Traditional processing and street vending of foods is a vital activity in the informal sector of the Ghanaian economy and offers livelihood for a large number of traditional food processors. Kenkey is a fermented maize ‘dumpling’ produced by traditional food processors in Ghana. Ga and Fante kenkey have received research attention and there is a lot of scientific information on kenkey production. White kenkey produced from dehulled maize grains is a less known kind of kenkey. A survey was held in three districts of Ghana to study production, vending and consumption of white kenkey and to identify major bottlenecks related to production, which can be addressed in studies to re-package kenkey for a wider market. Questionnaires were designed for producers, vendors and consumers of white kenkey to collate information on Socio-cultural data, processing technologies, frequency of production and consumption, product shelf life, reasons for consumption and quality attributes important to consumers using proportional sampling. The survey was conducted in white kenkey production zones and trade centers. Results showed that production of white kenkey is done on small-scale levels by middle-aged women in households with 10-50 kg of dehulled maize processed into white kenkey, 1-3 times weekly. A third (28%) of the women processed up to 50-100 kg of maize per week. Although 62% of vendors sell 50-100 balls of white kenkey daily, 15% of them sell more than 170 balls. Majority of consumers (45.9%) liked white kenkey because of its convenience (ready-to-eat). Texture and taste were quality attributes desired by kenkey consumers. Producers did not have written records of process controls and product throughputs. Inspite of their cottage nature, production of white kenkey is a profitable employment for producers and vendors and is popular among consumers. Product improvement, process and product characteristics could offer scale-up criteria for development of white kenkey production using standardized procedures for steeping times, steeping temperature and fermentation times.Keywords: maize, white kenkey, value chain, traditional, product development, re-engineerin

    Effectiveness of the Malnutrition eLearning Course for Global Capacity Building in the Management of Malnutrition: Cross-Country Interrupted Time-Series Study.

    BACKGROUND: Scaling up improved management of severe acute malnutrition has been identified as the nutrition intervention with the largest potential to reduce child mortality, but lack of operational capacity at all levels of the health system constrains scale-up. We therefore developed an interactive malnutrition eLearning course that is accessible at scale to build capacity of the health sector workforce to manage severely malnourished children according to the guidelines of the World Health Organization. OBJECTIVE: The aim of this study was to test whether the malnutrition eLearning course improves knowledge and skills of in-service and preservice health professionals in managing children with severe acute malnutrition and enables them to apply the gained knowledge and skills in patient care. METHODS: This 2-year prospective, longitudinal, cross-country, interrupted time-series study took place in Ghana, Guatemala, El Salvador, and Colombia between January 2015 and February 2017. A subset of 354 in-service health personnel from 12 hospitals and 2 Ministries of Health, 703 preservice trainees from 9 academic institutions, and 204 online users participated. Knowledge gained after training and retention over time was measured through pre- and postassessments comprising questions pertaining to screening, diagnosis, pathophysiology and treatment, and prevention of malnutrition. Comprehension, application, and integration of knowledge were tested. Changes in perception, confidence, and clinical practice were assessed through questionnaires and interviews. RESULTS: Before the course, awareness of the World Health Organization guidelines was 36.73% (389/1059) overall, and 26.3% (94/358) among in-service professionals. The mean score gain in knowledge after access to the course in 606 participants who had pre- and postassessment data was 11.8 (95% CI 10.8-12.9; P<.001)-a relative increase of 41.5%. The proportion of participants who achieved a score above the pass mark posttraining was 58.7% (356/606), compared with 18.2% (110/606) in pretraining. Of the in-service professionals, 85.9% (128/149) reported applying their knowledge by changing their clinical practice in screening, assessment, diagnosis, and management. This group demonstrated significantly increased retained knowledge 6 months after training (mean difference [SD] from preassessment of 12.1 [11.8]), retaining 65.8% (12.1/18.4) of gained knowledge from the training. Changes in the management of malnutrition were reported by trained participants, and institutional, operational, and policy changes were also found. CONCLUSIONS: The malnutrition eLearning course improved knowledge, understanding, and skills of health professionals in the diagnosis and management of children with severe acute malnutrition, and changes in clinical practice and confidence were reported following the completion of the course

    Using the past to constrain the future: how the palaeorecord can improve estimates of global warming

    Climate sensitivity is defined as the change in global mean equilibrium temperature after a doubling of atmospheric CO2 concentration and provides a simple measure of global warming. An early estimate of climate sensitivity, 1.5-4.5{\deg}C, has changed little subsequently, including the latest assessment by the Intergovernmental Panel on Climate Change. The persistence of such large uncertainties in this simple measure casts doubt on our understanding of the mechanisms of climate change and our ability to predict the response of the climate system to future perturbations. This has motivated continued attempts to constrain the range with climate data, alone or in conjunction with models. The majority of studies use data from the instrumental period (post-1850) but recent work has made use of information about the large climate changes experienced in the geological past. In this review, we first outline approaches that estimate climate sensitivity using instrumental climate observations and then summarise attempts to use the record of climate change on geological timescales.     Targeted online liquid chromatography electron capture dissociation mass spectrometry for the localization of sites of in vivo phosphorylation in human Sprouty2

    We demonstrate a strategy employing collision-induced dissociation for phosphopeptide discovery, followed by targeted electron capture dissociation (ECD) for site localization. The high mass accuracy and low background noise of the ECD mass spectra allow facile sequencing of coeluting isobaric phosphopeptides, with up to two isobaric phosphopeptides sequenced from a single mass spectrum. In contrast to the previously described neutral loss of dependent ECD method, targeted ECD allows analysis of both phosphotyrosine peptides and lower abundance phosphopeptides. The approach was applied to phosphorylation analysis of human Sprouty2, a regulator of receptor tyrosine kinase signaling. Fifteen sites of phosphorylation were identified, 11 of which are novel
