    Recent Advances and Future Trends in Fermented and Functional Foods

    Health and wellness are among the core segments of quickly-changing consumer goods, with ever-increasing health consciousness among consumers around the globe. Functional foods and beverages, formulated from natural ingredients with targeted physiological functions, are at the heart of research and development in the food industry. The application of modern biotechnology methods in the food and agricultural industry is expected to alleviate hunger today and help avoid mass starvation in the future. Modern food biotechnology has in recent years been transforming existing methods of food production and preparation far beyond the traditional scope. Currently, at the global level, food biotechnological research has focused on traditional process optimization (starter culture development, enzymology, fermentation), food safety and quality, nutritional quality improvement, functional foods, and food preservation (improving shelf life). The fermentation of substrates considered for human consumption has been applied for centuries as a process that enhances shelf life, sensory properties, and nutritional value. Special emphasis has also been given to newly growing concepts, such as functional foods and probiotics.     Effect of Kiwifruit actinidin on the digestion of gluten proteins : a thesis presented in partial fulfilment of the requirements for the degree of Doctor of Philosophy in Nutritional Sciences at Massey University, Palmerston North, New Zealand

    Gluten proteins are resistant to complete proteolysis by the human gastrointestinal tract (GIT) enzymes, due to their high proline- and glutamine-rich peptide sequences. Proline confers resistance to proteolysis by digestive enzymes, producing indigestible proline-rich peptides, some of which can trigger immunogenic reactions that are responsible for gluten-related health disorders such as coeliac disease, wheat allergy and gluten sensitivity. At present, gluten-free diets (GFD) are the only promising therapy for gluten-related health disorders. However, maintaining a lifelong GFD is challenging. As an alternative therapy, gluten-specific enzymes to hydrolyse immunogenic peptides have shown promising results. Most of these are of microbial origin. Identification of natural alternative enzymes is desirable, with fruit-borne enzymes a possible solution. Actinidin, a cysteine protease found in most green kiwifruit (Actinidia deliciosa), is suggested as an effective exogenous enzyme, to be utilized in this category. The objective of this PhD study was to evaluate the effect of actinidin on the digestion of gluten and gluten-derived immunogenic peptides in the GIT. The effectiveness of actinidin was tested using different in vitro GIT models and an animal (pig) preclinical model with purified gluten or whole wheat bread as sources of gluten, and purified actinidin or and fresh green kiwifruit as sources of actinidin. Analytical techniques such as free amino nitrogen determination, enzyme-linked immunosorbent assay and both targeted and untargeted mass spectrometry were used to determine the degree of hydrolysis (DH), R5 gluten epitopes and immunogenic peptides respectively. Actinidin hydrolysed peptide bonds adjacent to proline residues in the 33-mer peptide, one of the most immunogenic gluten peptides. The gastric DH of gluten proteins was influenced by an interaction between pH and actinidin concentration (P 2.7 U/mL and pH > 2 during hydrolysis was considered ideal for gluten hydrolysis. Actinidin increased (P < 0.05) the rate of acceleration of DH of gluten and reduced the amount of R5 epitopes present in the small intestine using a semi-dynamic in vitro GIT digestion model. Actinidin also accelerated the gastric hydrolysis of wheat proteins in whole wheat soda bread, which was reflected in a faster reduction of R5 epitopes in the gastric conditions and the rate of reduction (P < 0.05) of most of the immunogenic marker peptides present in the small intestine. In vivo, the presence of dietary actinidin in the form of green kiwifruit significantly (P < 0.01) enhanced the gastric digestion of wheat proteins in whole wheat soda bread fed to pigs as a model of human GIT digestion. The amount of R5 epitopes was lower (P < 0.01) in the stomach, proximal and distal small intestine and terminal ileum of pigs fed diets containing green kiwifruit (P <0 .05). The number of immunogenic peptides in the proximal small intestine was low in the pigs fed green kiwifruit diet compared to that of the pigs fed yellow kiwifruit diet (control). In addition, a diet containing green kiwifruit markedly reduced (P < 0.05) the amount of seven gluten immunogenic marker peptides including the 33-mer peptide in the stomach chyme of pigs. Actinidin was able to survive peptic proteolysis and gastric pH conditions until 300 min postprandial in pigs. Taken together, these results suggest that actinidin enhanced the rate of proteolysis of both purified gluten and gluten in a food matrix and reduced the amount of immunogenic gluten epitopes reaching the small intestine during GIT digestion in vitro and in vivo. Actinidin was able to reduce both the amount of and the time of exposure to immunogenic peptides in the small intestinal lumen, therefore it is a promising candidate to be considered in oral enzyme therapy for gluten-related health disorders

    KonverentsikogumikOn behalf of both the Organising Committee and the Scientific Committee, I am pleased to welcome you in Tartu, Estonia, to participate at the XIII International Congress of the International Society for Animal Hygiene (ISAH). The ISAH (www.isah-soc.org) was founded in 1970 and has today members from 48 countries throughout the world. ISAH can be considered as a group of scientists contributing to efficient, sustainable animal farming with healthy animals, providing wholesome food in a sound environment. Veterinarians and non-veterinary academic scientists (animal science, agricultural economics, engineers, microbiologists, public health professionals, epidemiologists etc., etc) and respective professionals in animal husbandry, who work and/or do research and education in the field of animal hygiene, can apply for a membership of ISAH, and are most welcome to attend ISAH congresses. The first ISAH congress was held in Budapest in 1973. The last ISAH main congress took place in Warsaw, Poland in 2005 and the last in-between symposium in Saint-Malo, France in 2004. Starting from Warsaw congress in 2005, the ISAH, considering the need for a more flexible and frequent exchange of scientific and practical knowledge, organizes its congresses every second year. The present, XIII ISAH congress in Tartu, Estonia, in June 17–21, 2007 is organised under the device "Animal health, animal welfare and biosecurity”. The scientific programme, trying to follow the scope of the ISAH and receive the feedback from modern animal husbandry and food production, concentrates with more profoundness on the following subjects: interaction between the environment and health and welfare of individual animal and herds; managing animal health in large dairy units; ensuring animal welfare during transportation and slaughter; economical implications considering animals’ health; possibilities of precision livestock farming in maintaining good health and welfare of animals; measures for prevention the development and spread of diseases and pathogens in animals including those posing risk to human health (zoonoses); food safety relevant infections and contaminations such as residues in food derived from animals; influence of the animal production on the environment and public health. The Proceedings from the XIII ISAH Congress are herewith presented. The papers on lectures from invited speakers, oral and poster presentations from 11 parallel sessions are included in this excellent compilation. In general, the printed contribution to the ISAH-2007 congress illustrates clearly the broad scientific field of the ISAH and related to it activities. I hereby would like to express my most sincere gratitude in the address of ISAH-2007 organising and scientific committees.     The Asian Fisheries Society – Indian Branch (AFSIB) since its inception in 1986, has been providing a platform for discussion at the national level on issues related to research, development, education and policies by organizing Indian Fisheries Forum (IFF) every three years in different parts of the country. The 9th Indian Fisheries Forum (9th iff) will be hosted by the Central Marine Fisheries Research Institute (CMFRI), at Chennai during 19-23 December 2011. The main theme of the 9th iff is “Renaissance in Fisheries: Outlook & Strategies”. It would have a comprehensive look for the fisheries and aquaculture sectors, for achieving greater synergy among the stakeholders and planning strategies for capture fisheries and aquafarming to build higher levels of sustainability and profitability. The forum would also address the issues of impact of climate change and its mitigation, resource constraint and species diversification for the expansion of fish production activity; and encourage young scientists to undertake need-based and resource specific research. An international symposium sponsored by the Bay of Bengal Large Marine Ecosystem (BoBLME) is scheduled to be held during the forum on 21 December, 2011 with theme: Bay of Bengal–Ecosystem Approach to Fisheries Management
