    Few farmers view livestock as a source of danger. Yet animal-related accidents cause numerous deaths and serious injuries each year. A recent National Safety Council study ranked beef cattle farms second and dairy operations third among all farming enterprises in injuries per hours of work. Seventeen percent of all farm injuries involved animals. This equaled the percentage of injuries caused by farm machinery. Removing hazards brings you one step closer to a safe work environment.     Diesel is one of the primary inputs in the transportation of goods throughout the United States. Livestock hauling is no exception. Feeder cattle are generally transported long distances in the fall as they move from summer grazing to placement in backgrounding operations or directly into feedlots. Cattle, and other livestock in general, can handle transportation stress fairly well – to a point. Trucking feeder cattle long distances can impact animal health outcomes, and improper animal handling can lead to bruised or injured cattle. These negative impacts can generally be offset by appropriate stocking densities, proper trailer ventilation, correct animal handling techniques during loading and unloading, and truck and trailer sanitation

    Students in the Department of Animal Science at Iowa State University are coming from increasingly diverse backgrounds, with little to no experience working with or handling various livestock species. In order to best accommodate these students, additional courses are being developed, one of which is Animal Science 190X: Animal Handling, Safety, and Well-Being. Through the course, students handle all major livestock species; sheep, swine, poultry, horses, beef cattle and dairy cattle, and are required to demonstrate handling knowledge and skills learned as part of a final assessment. This creates an opportunity for students lacking a livestock background to feel more confident and safer as they interact with livestock species both throughout their collegiate careers and as they enter into the animal agriculture industry

    Meat technology includes all steps from animal handling and slaughtering to production of different meat products. During animal handling, special attention is paid to animal welfare, not only to protect animals from suffering but also because of animal welfares importance for meat quality. The oldest processing methods (chilling, freezing, salting, smoking and drying) are being readjusted with respect to equipment and consumers health issues. Special attention is given to preservation of meats nutritive value (milder heat treatment) and health promoting properties of the products (functional foods). Novel methods (irradiation, high pressure, pulsed electric field, pulsed light and cold plasma) struggle with some issues such as acceptance by consumers, expensive equipment and effects on foods sensory properties. Along with novel products, demand for traditional meat products is still increasing which requires the the uniqueness and quality of these products to be preserved, along with increased production capacity
