Abstract - This study was conducted on one of the ISPs in Surabaya. The author uses operational audits to evaluate and improve the effectiveness, efficiency, and economy of the revenue cycle, particularly sales activities, receivables management, and billing. Data collection method in this research is by interview, observation, and document analysis. From this research note that the activity of sale, management of receivable, and billing at X company still not effective, efficient, and economy. This happens because the company is less assertive in applying the rules that have been made. Thus, the authors recommend to be more assertive in the application of regulations that have been made. In additions, the author also recommends to change some existing rules. This recommendation is given to the company to survive the changes and competitors that exist

Audit Operasional pada Siklus Pendapatan Internet Service Provider X di Surabaya

Penelitian ini dilakukan pada salah satu ISP yang ada di Surabaya. Penulis menggunakan audit operasional untuk melakukan evaluasi dan peningkatan efektivitas, efisiensi, dan ekonomi pada siklus pendapatan, khususnya aktivitas penjualan, pengelolaan piutang, dan penagihan. Metode pengumpulan data pada penelitian ini adalah dengan cara wawancara, observasi, dan analisis dokumen. Dari penelitian ini diketahui bahwa aktivitas penjualan, pengelolaan piutang, dan penagihan pada PT X masih belum efektif, efisien, dan ekonomi. Hal tesebut terjadi karena perusahaan kurang tegas dalam menerapkan peraturan yang telah dibuat. Sehingga, penulis merekomendasikan untuk lebih tegas dalam penerapan peraturan yang telah dibuat. Selain itu, penulis juga merekomendaikan untuk mengubah beberapa peraturan yang ada. Rekomendasi ini diberikan agar perusahaan bisa bertahan menghadapi perubahan serta pesaing yang ada

Pengaruh Penambahan Ekstrak Kulit Buah Naga Merah (Hylocereus polyrhizus) Terhadap Kualitas Sosis Ayam (Kajian Pengaruh Konsentrasi Asam Sitrat dan Ekstrak)

Sosis merupakan produk daging olahan yang umumnya menggunakan nitrit untuk memperbaiki warna daging. Salah satu upaya untuk mempertahankan warna sosis adalah dengan menambahkan ekstrak kulit buah naga merah (Hylocereus polyrhizus) serta untuk menstabilkan warna ekstrak ditambahkan asam sitrat. Tujuan dari penelitian ini adalah untuk mengetahui kualitas sosis ayam dengan penambahan ekstrak kulit buah naga merah kajian pengaruh konsentrasi asam sitrat dan ekstrak. Kulit buah naga merah (Hylocereus polyrhizus) memiliki fungsi sebagai pewarna alami karena mengandung betasianin. Penelitian ini menggunakan metode Rancangan Acak Kelompok (RAK) Faktorial dengan dua faktor. Faktor I adalah konsentrasi asam sitrat pada proses ekstraksi kulit buah naga merah (0%, 0,5%, dan 1% (b/v)). Faktor II adalah konsentrasi penambahan ekstrak kulit buah naga merah pada sosis daging ayam (20%, 30% dan 40% (v/b)), sedangkan kontrol yang digunakan untuk faktor II adalah sosis sapi merk Vitalia. Penelitian dilakukan 3 kali pengulangan. Metode Rate-All-That-Apply (RATA) merupakan metode deskriptif sensori produk pangan yang menggunakan panelis konsumen sebagai sumber data dan informasi. Hasil penelitian dilakukan analisa menggunakan ANOVA model General Linear Model (GLM) dan analisa lanjut dengan Tukey Test pada program Minitab 16. Hasil yang diperoleh pada penelitian ini adalah faktor asam sitrat dan ekstrak kulit buah naga merah (Hylocereus polyrhizus) dengan konsentrasi yang berbeda berpengaruh nyata (α=0,05) terhadap nilai pH, kecerahan (L*), kemerahan (a*), kekuningan (b*), kekerasan, kadar betasianin, aktivitas antioksidan, serta parameter sensoris antara lain warna merah, warna cokelat, warna kuning, aroma daging, aroma rempah, rasa manis, rasa asin, mouthfeel oily, dan mouthfeel chewy pada produk sosis. Perlakuan terbaik diperoleh pada produk sosis dengan penambahan ekstrak kulit buah naga merah 40% dan penambahan asam sitrat 0,5% dengan hasil aktivitas antioksidan (22,06%), rerata skor dari panelis atribut warna merah tertinggi (3,18) dan warna cokelat terendah (2,70), selain itu 72 panelis menerima sampel tersebut dari 120 panelis
