    SELEÇÃO DE JULGADORES E AVALIAÇÃO DE DIFERENÇA SENSORIAL ENTRE EXTRATOS HIDROSSOLÚVEIS DA AMÊNDOA DA CASTANHA DE CAJU (Anacardium occidentale L.)

    Aplicou-se o teste triangular em 12 julgadores selecionados para verificar diferença significativa (pp0, sendo utilizados os valores p0=0,33, p1=0,66 e para os riscos a=0,05 e b=0,05. Na avaliação de diferença significativa (p<0,001) pelo teste triangular, as amêndoas classificadas como bandas e batoques do tipo 1 não apresentaram diferença, mas diferiram das amêndoas classificadas como pedaços do tipo 1. Considerando que as amêndoas classificadas como pedaços apresentam menor percentual de integridade que as demais (estando mais suscetíveis à oxidação da fração lipídica) indica-se a utilização de bandas e batoques como matéria-prima para a elaboração de extrato hidrossolúvel

    DESENVOLVIMENTO E ACEITAÇÃO SENSORIAL DE COOKIES DE COCO ADICIONADOS DE CONCENTRADO PROTEICO DE PESCADO

    O objetivo deste trabalho foi desenvolver formulações de biscoitos do tipo cookie, sabor coco, com e sem adição de concentrado proteico de pescado, comparando-as em relação à aceitabilidade sensorial, atitude de compra e idealidade da crocância. Foram desenvolvidas três formulações de cookies, uma padrão e as outras com adição de 51% e 83% de concentrado proteico de pescado. A  aceitação sensorial dos cookies foi verificada mediante escala hedônica, avaliando-se os atributos aparência, aroma, sabor e textura, bem como a aceitação global. Avaliou-se a intenção de compra dos consumidores em relação ao produto por meio de escala de atitude de compra e o grau de idealidade da crocância com o auxílio da escala do ideal. Os cookies padrão e adicionados de 51% de concentrado proteico de pescado obtiveram aceitação, não diferindo significativamente em nenhum atributo sensorial analisado. O cookie adicionado de 83% de concentrado proteico não obteve aceitação satisfatória, tornando inviável a sua comercialização devido ao fato de modificar negativamente as características sensoriais do produto.  

    Abordagens da dermatite atópica no âmbito dermatológico atual

    A dermatite atópica seria definida como doença inflamatória cutânea crônica, de caráter genético, caracterizada pela presença de episódios recorrentes de eczema associado a prurido, muita vezes intenso, apresentando como substrato alterações imunológicas cutâneas que produzem inflamação, podendo estar eventualmente associada a doenças respiratórias, como a asma e a rinite alérgica. Trata-se de doença multifatorial, com enfoque nas alterações sistêmicas e alérgicas ou nas manifestações cutâneas, de acordo com diferentes visões da doença. A conceituação da dermatite atópica é importante, porque a conduta terapêutica pode variar segundo as diferentes formas de analisá-la. O presente estudo tem como objetivo avaliar a dermatite atópica no contexto atual da dermatologia. Trata-se de uma revisão integrativa, com uso dos descritores DeCs (Descritores em Saúde) e o Medical Subject Headings (MeSH), nos idiomas português e inglês, com os seguintes termos: “Dermatite”(dermatitis), “Pele” (skin), “tratamento” (treatment).&nbsp; Desta busca, foram encontrados 150 artigos, posteriormente submetidos aos critérios de seleção. A seleção resultou em 8 artigos que foram submetidos à análise seletiva, exploratória e interpretativa no contexto do presente estudo. A partir da revisão bibliográfica dos estudos analisados, conclui-se que, de fato, a dermatite atópica é complexa e precisa ser mais estudada

    Health-related quality of life in patients with type 1 diabetes mellitus in the different geographical regions of Brazil : data from the Brazilian Type 1 Diabetes Study Group

    Background: In type 1 diabetes mellitus (T1DM) management, enhancing health-related quality of life (HRQoL) is as important as good metabolic control and prevention of secondary complications. This study aims to evaluate possible regional differences in HRQoL, demographic features and clinical characteristics of patients with T1DM in Brazil, a country of continental proportions, as well as investigate which variables could influence the HRQoL of these individuals and contribute to these regional disparities. Methods: This was a retrospective, cross-sectional, multicenter study performed by the Brazilian Type 1 Diabetes Study Group (BrazDiab1SG), by analyzing EuroQol scores from 3005 participants with T1DM, in 28 public clinics, among all geographical regions of Brazil. Data on demography, economic status, chronic complications, glycemic control and lipid profile were also collected. Results: We have found that the North-Northeast region presents a higher index in the assessment of the overall health status (EQ-VAS) compared to the Southeast (74.6 ± 30 and 70.4 ± 19, respectively; p < 0.05). In addition, North- Northeast presented a lower frequency of self-reported anxiety-depression compared to all regions of the country (North-Northeast: 1.53 ± 0.6; Southeast: 1.65 ± 0.7; South: 1.72 ± 0.7; Midwest: 1.67 ± 0.7; p < 0.05). These findings could not be entirely explained by the HbA1c levels or the other variables examined. Conclusions: Our study points to the existence of additional factors not yet evaluated that could be determinant in the HRQoL of people with T1DM and contribute to these regional disparities

    Volatile profile and sensory quality of new varieties of Capsicum chinense pepper

    The objective of this study was to compare the sensory quality and the volatile compound profile of new varieties of Capsicum chinense pepper (CNPH 4080 a strain of'Cumari-do-Pará' and BRS Seriema) with a known commercial variety (Biquinho). Volatiles were isolated from the headspace of fresh fruit by SPME and identified by GC-MS. Pickled peppers were produced for sensory evaluation. Aroma descriptors were evaluated by Check-All-That-Apply (CATA) method, and the frequency data were submitted to Correspondence Analysis. Flavor acceptance was assessed by hedonic scale and analyzed by ANOVA. BRS Seriema showed the richest volatile profile, with 55 identified compounds, and up to 40% were compounds with sweet aroma notes. CNPH 4080 showed similar volatile profile to that of Biquinho pepper, but it had higher amounts of pepper-like and green-note compounds. The samples did not differ in terms of flavor acceptance, but they showed differences in aroma quality confirming the differences found in the volatile profiles. The C. chinense varieties developed by Embrapa proved to be more aromatic than Biquinho variety, and were well accepted by the judges

Voláteis foram isolados do headspace dos frutos in natura por SPME e identificados por CG-EM. Conservas das pimentas foram produzidas para a análise sensorial. Descritores do aroma foram avaliados pelo método Check-All-That-Apply (CATA) e os dados de frequência submetidos à Análise de Correspondência. A aceitação do sabor das amostras foi analisada por meio de ANOVA. A BRS Seriema apresentou rico perfil de voláteis, com 53 compostos identificados, sendo que cerca de 40% deles são compostos de aroma doce. A CNPH 4080 apresentou perfil semelhante ao da pimenta Biquinho, porém com compostos de odor de pimenta e notas aromáticas verdes em maiores quantidades. As amostras não diferiram entre si quanto à aceitação do sabor, contudo evidenciaram diferenças na qualidade do aroma, confirmando as diferenças encontradas no perfil de voláteis. As variedades C. chinense desenvolvidas pela Embrapa demonstraram ser mais aromáticas que a variedade Biquinho, sendo que todas as amostras agradaram aos consumidores
