    Comparison between carcasses of artificially suckled I.H.D.H. (Italian Heavy Draught Horse) foals slaughtered at 6 months and traditional carcasses obtained by foals slaughtered at 11 and 18 months

    Aim of the study was the evaluation of a innovative I.H.D.H. carcass production sys- tem in order to improve the conditions for mare's milk production. In the trial were used 18 foals, subdi- vided in three randomized groups of 6 animals each. Every group was slaughtered at a different age: 6 months (artificially suckled), 11 months and 18 months (naturally suckled, following traditional rearing systems). Six months old foals carcasses were characterized by 75.59 % of lean, 12.79 % of fat and 11.64 % of bone. Six months foals carcasses showed the lean end the fact respectively higher (P<0.001) end lower (P<0.001) than 18 months ones (P<0.001), and the bone higher than 11 months foals (P<0.001). Six months hind quarter incidence was 65.00 %, more than found for 18 months carcasses (P<0.001). Moreo- ver, 6 months carcasses showed an first quality cuts incidence higher than 11 months foals (P<0.01)

    Dairy buffalo life cycle assessment (LCA) affected by a management choice: the production of wheat crop

    Life cycle assessment (LCA) was performed in dairy buffalo farms representative of Southern Italian farming systems, similar due to several characteristics, with the exception of wheat production. This work evaluated the impacts derived from this management choice, comparing farms with wheat crop (WWC) or not (NWC). In agreement with the literature, economic allocation was chosen as a useful strategy to attribute equivalents to by-products, i.e., culled animals; the same criterion was also adopted to assign pollutants to wheat grain, limited to WWC farms. Environmental impacts in terms of Global Warming Potential (GWP, kg CO2 eq), Acidification Potential (AC, g SO2 eq), Eutrophication Potential (EU, g PO43- eq), Agricultural Land Occupation (ALO, m2 y) and Water Depletion (WD, m3) were estimated. The production of wheat crop significantly affected (p &lt; 0.05) the Agricultural Land Occupation (ALO) category as WWC farms need adequate land. WWC farms could allow a significant reduction in eutrophication (EU) compared to NWC farms (p &lt; 0.05)

    Evaluation of different test-day milk recording protocols by wood’s model application for the estimation of dairy goat milk and milk constituent yield

    Goats have important social and economic roles in many countries because of their ability to survive and be productive in marginal areas. The overarching aim of this study was to compare the application of Wood’s model to different test-day milk recording protocols for estimation of total milk, fat, and protein yield in dairy goats. A total of 465 goats were used (Garganica, 78; Girgentana, 81; Jonica, 76; Maltese, 77; Red Mediterranean, 76; Saanen, 77). Milk yield was recorded every 15 days throughout lactation of 210 days, for a total of 14 collection days, during both morning and afternoon milking sessions. Milk samples were collected and analyzed for protein and fat. The fat-corrected milk was standardized at 35g fat/kg of milk. Wood models showed high R2 values, and thus good fitting, in all the considered breeds. Wood model applied to first, second, fourth, and sixth month recordings (C) and ICAR estimation showed total milk yield very close to Wood’s model applied to all 14 recordings (A) (p &gt; 0.38). Differently, Wood’s model applied to the first, second, third, and fourth month recording (B) estimation showed great differences (p &lt; 0.01). This could be applied for farms that had the necessity to synchronize flock groups for kidding in order to produce kid meat. In farms that apply the estrus induction and/or synchronization for kidding, it would be possible to perform only four test-day milk recordings and to apply the Wood’s model on them in order to obtain the estimation of total milk, fat, and protein yield during lactation for animals inscribed, or to be inscribed, to the genealogical book

    Effect of increasing dietary aminoacid concentration in late gestation on body condition and reproductive performance of hyperprolific sows

    A total of 62 highly prolific Danbred sows was used to evaluate the implications of increasing dietary amino acid (AA) concentration during late gestation (from day 77 to 107 of pregnancy) on body condition and reproductive performances. Sows were assigned to one of the two treatments (n = 31, with similar number of sows in the second-, third-and fourth-cycle); control diet (containing 6 g of standardized ileal digestible lysine-SID Lys-)/kg) and high AA level (containing 10 g SID Lys/kg and following the ideal protein concept for the remaining essential AA). On day 108 of pregnancy, animals were moved to the farrowing-lactating facilities where they spent until weaning receiving a common standard lactation diet. After farrowing, litters were standardized to 13 piglets each. At 107 d of gestation, backfat depth was thicker in sows fed high AA concentration than in those fed control diet (p 0.05). Additionally, at farrowing, the litter size (p = 0.043) and weight (p = 0.017) were higher in sows fed high AA level. It can be concluded that the increase in the AA content in the feed during the last month of gestation could improve the body condition of the sows and their performance results

    Effects of Anthocyanin Supplementation and Ageing Time on the Volatile Organic Compounds and Sensory Attributes of Meat from Goat Kids

    The aim of this study was to assess the effects of dietary anthocyanin addition on volatile compounds of meat from goat kids during ageing. For this work, 60 male and female kids were divided into two groups: red orange and lemon extract (RLE group; n = 30), which received an RLE extract (90 mg/kg of live weight); and control (CON group; n = 30). The phytoextract in dry powder form was rich in bioflavonoids such as flavanones (about 16%) and anthocyanins (about 3%). After slaughtering, the longissimus thoracis et lumborum muscle was aged at 4◦C. The volatile organic compound (VOC) and sensorial analyses were carried out at 1, 3 and 7 days. A total of 10 chemical families were identified during the ageing process. Aldehydes were the most abundant VOC, followed by ketones and alcohols. Their contents increased during the process, showing after 7 days of ageing mean values of 20,498, 2193 and 1879 ng/g of meat, respectively. Regarding dietary effects, carboxylic acids, hydrocarbons and thiols presented significant differences between treatments, with higher carboxylic acid contents observed in RLE samples (437 vs. 467 ng/g of meat for CON and RLE batches, respectively; p &lt; 0.05). On the contrary, hydrocarbons (436 vs. 254 ng/g of meat for CON and RLE batches, respectively) and thiols (160 vs. 103 ng/g of meat for CON and RLE batches, respectively) displayed significantly (p &lt; 0.01) higher amounts in CON compared to the RLE group. Regarding ageing time, the tenderness, juiciness, odour and overall assessment parameters showed significantly higher scores at the end of the whole process (p &lt; 0.05). On the other hand, only odour displayed significant differences between treatments, reaching higher scores in CON samples (p &lt; 0.05). Therefore, ageing time improved the sensorial properties (tenderness, juiciness, odour and overall assessment) and the VOC content, whereas the inclusion of anthocyanins in the kids’ diet did not have a great impact on the properties of aged meat

    Responses to different feeding levels during the first month post-insemination in highly prolific multiparous sows

    Aim of study: To evaluate the impact of the feed level during the first month of gestation on body weight evolution, backfat and loin muscle depths and reproductive performances in highly prolific sows.Area of study: Galicia (Northwestern Spain).Material and methods: Thirty-six Danbred sows were assigned to three experimental groups (n=12) receiving, from day 1 to 30 of pregnancy, 2.5, 3.0 or 3.5 kg/d of a standard diet (8.83 MJ net energy and 138.5 g crude protein/kg). In each group, the number of sows in the second-, third- and fourth-cycle was the same. All animals received, of the same diet, 2.5 kg/d from day 31 to 90 and 3.0 kg/d from day 91 to 107. Seven days prior the parturition, sows were moved to the farrowing-lactating facilities where spent until weaning receiving a common standard lactation diet. At 24 h post-farrowing, litters were standardized to 13 piglets each by cross-fostering.Main results: The optimal feeding level during the first 30 days of gestation was 3.0 kg/d because a lower amount penalized their body weight gain and a higher amount did not improve their fatty reserves. It is worth considering that the increase from 2.5 to 3.5 kg/d generated advantages at birth (higher and more homogenous piglet weights) but also handicaps (lower litter size). The effects were similar irrespective of the cycle number.Research highlights: Different feeding levels during the early pregnancy were tested because it is a critical period. Suppling 3.0 kg/d carried out the best productive and reproductive implications

    Seasonal variations of carcass characteristics, meat quality and nutrition value in iberian wild red deer

    Aim of study: The effects of hunting season (autumn vs. winter) on carcass characteristics and meat quality of Iberian wild red deer were assessed. Area of study: A total of 100 males of wild red deer of Iberian genetic line (Cervus elaphus) were hunted on Ciudad Real (south central Spain). Material and methods: Yields for shoulder (with bone), neck, backbone, loin, tenderloin, leg (with bone), short plate and flank were determined. In addition, samples of Longissimus thoracis et lumborum and Rectus abdominis muscles were collected. Then, pH48, colour measurements, chemical composition, cooking loss, Warner Bratzler shear blade, fatty acid and amino acid profiles and mineral content were analyzed. Main results: Deer hunted in autumn (n=50) had higher (p&lt;0.01) yields of shoulder, backbone and short plate and higher contents of intramuscular fat (IMF), cholesterol and K, Fe and Mn but lower (p&lt;0.001) pH48 and Na, Mg, Zn and Cu contents than deer hunted in winter (n=50). Shear force tended (p=0.05) to be lower for meat collected in autumn than for meat collected in winter. However, loin yield was 59.2% higher (p&lt;0.001) for winter than for autumn carcasses. Deer hunted in winter had higher α-linoleic acid (p&lt;0.05) and long chain n-3 polyunsaturated (p&lt;0.001) percentages than deer hunted in autumn Research highlights: Autumn hunting is recommended to obtain carcasses with higher yields of shoulder, backbone and short plate and meat with higher IMF. Conversely, winter hunting is advisable for higher loin yield and for a profile richer in polyunsaturated fatty acids

    Dietary supplementation of suckling lambs with anthocyanins: Effects on growth, carcass, oxidative and meat quality traits

    The aim of this research was to assess the effect of the dietary inclusion in suckling lambs of a red orange and lemon extract rich in anthocyanins on growth performance, antioxidant status, carcass characteristics and of both dietary antioxidant addition and aging on meat fatty acids, colorimetric and antioxidant profile, and meat texture. The experiment was carried out using 44 Merino male lambs randomly assigned to two groups: one group received the red orange and lemon extract (RLE) (RLE; n = 22) and the control group (CON; n = 22) did not receive the anthocyanins. The RLE extract was orally administered (90 mg/kg of live weight) to each lamb every day from birth until slaughter (40 ± 1 days). Longissimus lumborum muscle was sampled and aged for 7 days. Rheological, colorimetric and oxidative parameters were affected by aging time and anthocyanins administration. The meat from RLE supplemented lambs had lower cooking loss and Warner-Blatzer Shear Force (WBSF) values. Moreover, thiobarbituric acid reactive substances (TBARS) and hydroperoxides were lower (P &lt; 0.01) in RLE meat along the entire aging period, although in both groups they increased during aging (P &lt; 0.01). The RLE addition affect yellowness values during aging, showing lower values in CON group at 7 d (P &lt; 0.01). The RLE feed addition in able to positively affect oxidative animal status, and consequently animal welfare, enhancing meat oxidative stability and reducing colour deterioration during aging

    Effects of different positions during transport on physiological and behavioral changes of horses

    The aim of this study was to evaluate the effect of different transport positions on some physiological parameters in racehorses and their behavior patterns during and after the journey. Twelve horses made 3-hour journeys of 200 km on the same route, with the same driver, and in 3 different positions: facing forward, backward, and sideways in relation to the direction of travel. Physiological and behavioral parameters were registered before, during, and after the journey. Horses were checked at 5 different times: at rest (TO), at loading (T1), at unloading (T2), and at 2 (T3) and 4 (T4) hours after return from the journey. At each check, heart rate, respiratory rate, and rectal temperature were measured and blood samples were collected by jugular vein puncture to assess cortisol, packed cell volume, total protein, albumin, glucose, creatinine, triglycerides, cholesterol, urea, creatine kinase, lactate dehydrogenase, alanine transaminase, aspartate transaminase, alkaline phosphatase, calcium, phosphorus, and chlorine. Loading and unloading were filmed. Behavioral patterns were recorded by direct observation, during the travel, 2 and 4 hours after arrival in a new stall. The same parameters were recorded at the same times (excluding loading and unloading) in a control group that did not travel. All data were analyzed using a repeated-measures analysis (analysis of variance). Loading produced an increase of heart rate and packed cell volume in comparison with rest values. Horses facing in the direction of travel during journey made fewer forward, backward, and sideways movements than others, whereas horses traveling sideways lost their balance and touched the stall rails less frequently. Highest serum cortisol concentration value was recorded soon after unloading horses that had faced in the direction of travel (P < 0.01). Two hours after return, horses that had traveled sideways revealed an increase of creatine kinase (P < 0.01). The traveling position in the vehicle did not appear to affect postjourney behavior. In comparison with the control group, the horses that had traveled consumed concentrate faster, spent more time eating hay, and drank more frequently in the first 2 hours after return from the journey. Front-facing position led to an increase in serum cortisol concentration, whereas the sideways position caused some muscular tension, which disappeared 4 hours after the journey. Although facing backward was the travel position that provoked the greatest number of horses' movements, it did not have a negative effect on physiological and behavioral parameters during and after the journey. We concluded that for Standardbred trotters accustomed to travel, the latter may be the less stressful position during a 200-km transport. (C) 2012 Elsevier Inc. All rights reserved
