Analysis of the drying kinetics of S. Bartolomeu pears for different drying systems.
Pears of the variety S. Bartolomeu (Pyrus communis L.) are used in Portugal to produce a traditional food product, which is obtained by open-air sun drying. The traditional processing has many disadvantages, namely the efficiency and the sanitary quality of the final product. For these reasons, attempts have been made to study alternative production methodologies, including the use of a solar stove, a solar drier and a drying tunnel.
In the present work pears of the variety S. Bartolomeu, were dried in the three alternative systems mentioned, and their drying kinetics was studied over a three year period of study. Eight different models from literature were tested and their performance was evaluated in terms of some statistical indicators.
From the results obtained it was possible to conclude that the equations used to describe the drying kinetics that best fit the experimental data were Henderson & Pabis, Logarithmic and Vega-Lemus. Furthermore, it was concluded that the solar drying was very dependent on the weather conditions, varying the drying time in the experiments carried out in the three years of study. It was also possible to observe that the loss of water was much more uniform in the drying tunnel system when compared to the solar dryings, because in the tunnel the operating temperature and air velocity were constant
Projeto de uma Indústria de Processamento de Néctares de Maçã e de Pera
No âmbito da disciplina de Seminário de Projeto do
curso de Licenciatura em Engenharia das Indústrias
Agro-Alimentares da Escola Superior Agrária de Viseu,
apresenta-se um extrato do trabalho realizado com vista ao projeto
de uma unidade industrial de processamento de néctares de maçã
e pêra. O estudo envolveu, entre outros, o estudo do
processamento, o projeto de equipamento, a definição do layout
fabril, o cálculo do investimento inicial e uma avaliação
económica de viabilidade do projeto.
Mediante os resultados obtidos para a projeção de uma
empresa com estas características, prevê-se que o investimento
seja recuperado antes de decorridos 10 anos
Solar drying of pears: Evolution of density and shrinkage characteristics.
Neste trabalho estudou-se a secagem de pêras da variedade D. Joaquina, pelo método tradicional de secagem solar utilizado em Portugal, tendo sido avaliadas as variações de umidade, densidade, volume e dimensões ao longo do processo. Foram também definidos modelos teóricos para representar a geometria das pêras antes e depois da operação de prensagem, a partir dos quais foram calculados valores para a área superficial e para o volume das pêras. Por fim, foi feito um estudo do encolhimento, quantificado através da definição do coeficiente de encolhimento, que foi então ajustado com sucesso a dois modelos encontrados na literatura. Dos resultados obtidos foi possível verificar que a umidade das pêras diminui exponencialmente com o tempo, e que a operação de prensagem influencia significativamente a área superficial das pêras e também, embora em menor grau, o seu volume. Concluiu-se também que os modelos geométricos usados para descrever as pêras antes e depois da prensagem são adequados ao caso em estudo. Do trabalho efetuado foi possível ainda comprovar a forte relação de linearidade entre o coeficiente de encolhimento e a razão de umidade, e ainda o seu bom ajuste aos dois modelos teóricos testados
Water solubility of copper sulphate from polymers
To study the solubility of the copper sulphate in water, different
types of tablets were prepared from different polymers with different
percentages of CuSO4. The tablets were left in water for some days and
the amount of CuSO4 released from the tablets was determined by
measuring the absorbency of the final solution.
In the first phase of this work 10 samples were prepared,
corresponding to two similar sets. The results from these two sets were
not much different, and similar samples registered approximately the
same amount of CuSO4 in the water. By the seventh day more than the
maximum amount of CuSO4 expected was already registered in the
solution, meaning that all the copper sulphate present had been
transferred from the tablets to the water.
To try to get some more information about the influence of various
factors on the solubility of the CuSO4, another experiment was carried
out and more tablets of different sizes and from different polymers were
prepared.
From the results obtained it was possible to take some conclusions
regarding the way both factors, thickness and type of polymer, influence
the release of the copper sulphate from the tablets
Projeto Industrial de uma fábrica de produção de presunto
Este trabalho foi desenvolvido no âmbito do curso de
Engenharia das Indústrias Agroalimentares da ESAV, na unidade
curricular de Seminário de Projecto. O objectivo deste trabalho é
fazer um estudo para a implementação de uma indústria de cura
de presunto que pretende laborar 120 ton/ano de presunto curado.
O método a utilizar será o processo de secagem com
controlo de parâmetros de temperatura e humidade relativa,
conciliada com o processo de salga.
Por fim é feita uma avaliação da viabilidade económica
do projecto
Study of the high temperature HYDROLYSIS of POLY(EPSILON-CAPROLACTONE)
To study the hydrolytic degradation of poly(e-caprolactone) (PCL) some
samples were kept in water for some days and were weighed daily to determine
the weight evolution. In order to accelerate the natural process of hydrolysis the
samples were maintained in a heated thermal bath.
From this work it was possible to conclude that the hydrolysation of PCL occurs
at high temperatures, around and slightly under its melting point, and that the
hydrolysation rate is slightly smaller at 50ºC than at 60ºC
Apresentação do projecto
O Projecto intitulado “Peras secadas, promoção de um produto agro-
alimentar tradicional utilizando metodologia científica”, financiado pela
Fundação para a Ciência e Tecnologia, iniciou-se em Maio de 2007 e
desenvolveu-se ao longo de 3 anos e meio, até Novembro de 2010. O
projecto em causa apresentava-se sob duas vertentes complementares, uma
de investigação fundamental que envolvia o estudo das relações entre o
estado de maturação e a cinética de secagem, bem como as transformações
(macro)moleculares e macroestruturais que se verificam durante o processo
de secagem; e outra de investigação tecnológica aplicada, com o
desenvolvimento de diferentes tipos de sistemas de secagem específicos para
este tipo de frutos
Análise das características químicas e físicas de pêras secadas
Com o presente trabalho pretendeu-se estudar a
possibilidade de utilizar uma variedade de pêras diferente da
tradicionalmente usada para a produção de “pêra passa de Viseu”, e
ainda avaliar a possibilidade de simplificação do método tradicional
de produção por secagem solar, com vista à sua aplicação industrial.
Assim, foram estudadas pêras de diferentes variedades (S.
Bartolomeu e D. Joaquina) secadas sob diferentes condições de
secagem (secagem solar e secagem contínua a temperaturas
constantes de 30, 40 e 50ºC), tendo os produtos finais sido
comparados através da avaliação das suas propriedades químicas e
físicas.
Foi então possível concluir que a variedade D. Joaquina
constitui uma boa alternativa à variedade tradicionalmente secada, e
que o processo artesanal de secagem pode ser significativamente
simplificado sem que isso comprometa as características finais do
produto
A embalagem alimentar no contexto da política ambiental
A embalagem é hoje em dia uma presença tão constante no quotidiano de qualquer um de nós, e que se reveste de tão grande importância, que se torna difícil ficar indiferente ao subaproveitamento a que é condenada e às nefastas consequências que isso acarreta para a qualidade do ambiente.
Nos países industrializados as embalagens alimentares representam cerca de 50 % do total de embalagens produzidas. De facto, nos últimos anos tem-se assistido a grandes mudanças nos hábitos alimentares em consequência da alteração dos estilos de vida, que têm favorecido um considerável aumento da oferta em alimentos pré-preparados e conservados.
Este crescimento do mercado alimentar, associado também às exigências dos modernos sistemas de distribuição e ao cada vez maior nível de exigência por parte dos consumidores, tem favorecido o desenvolvimento de novas embalagens resultantes quer da aplicação de novas tecnologias de fabrico e processamento dos materiais, quer do aparecimento de novos materiais ou mesmo novas combinações de materiais tradicionais
Food Product development: whey cheese with pumpkin jam
In Portugal a very popular desert consists in whey cheese with pumpkin jam. However, these two
products are only sold separately, being necessary to join them together so as to obtain the desired
product. Having in mind that the production of a combination of these two products would be a
potentially interesting field for new food commercializing, studies were conducted on the development
of this new food product. This, was complemented with a sensorial evaluation, so as to perceive how
consumers accepted this new product, and with a consumer study, in order to understand how the
consumers would react when faced with the offer of such a new product. The sensorial evaluation was
performed by means of a descriptive analysis, with a panel of 17 tasters, of which 12 were women and
5 men. The parameters evaluated using five points hedonic scales were: homogeneity in colour,
homogeneity of the product, milk aroma, intensity of aroma, intensity of taste, salty taste, milk taste,
sweetness, consistency, granules. The consumer study was performed by applying questionnaires to
100 persons, of which 57 were women and 43 were men. With respect to the results obtained, the
sensory analysis to the product developed showed a good global appreciation, indicating that this
product could be successful. Regarding it’s acceptability by consumers, the preliminary results are
encouraging, since the major part of the enquired liked the combination of whey cheese with pumpkin
jam
