    The impact of sustainability labeling on consumers' food choices

    Public interest in sustainability issues has led to the growth of the number of voluntary sustainability labeling schemes used by food manufacturers to differentiate their products. Additionally, the incorporation of sustainability aspects in food policies is gaining importance and some dietary guidelines now advice consumers to purchase food with sustainability labels. This dissertation focuses on sustainability labeling as an information provision tool which allows for more informed food choices. The use of sustainability labels and its influence on food choices are studied. More specifically, consumers’ preferences towards a wide range of sustainability labels on yoghurt, chicken and coffee are investigated. The involvement in sustainable diets and healthy diets are studied. Involvement can be a motivational factor to use sustainability labels during the decision-making process. The knowledge and awareness of organic labels are examined which relates to the ability to use the information. Finally, visual attention to sustainability labels during food choice and its relation to choice behavior are investigated with the use of eye-tracking

    Market opportunities for animal-friendly milk in different consumer segments

    Consumers have increasing, but highly variable, interest in sustainability attributes of food, including ethical aspects, such as animal welfare. We explored market opportunities for animal-friendly cow’s milk based on segmentation (cluster) analysis. Flemish survey participants (n = 787) were clustered (n = 6) based on their intention to purchase (IP) animal-friendly milk, and their evaluation of cows’ welfare state (EV). Three market opportunity segments were derived from clusters and labelled as “high”, “moderate” and “limited”. Only 8% of the participants belong to the “high market opportunities” segment, characterized by a high IP and a low EV. The “limited” segment (44%) indicated a neutral to low IP and a positive EV. The “moderate” segment (48%) had a moderately positive IP and positive/negative EV. Reported willingness to pay, interest in information about the state of animal welfare and importance of the product attribute “animal welfare” differed among segments and were strongly related to IP. Most promising selling propositions about animal-friendly milk were related to pasture access. The high degree of differentiation within the Flemish milk market reveals market opportunities for animal-friendly milk, but for an effective market share increase supply of animal-friendly products needs to get more aligned with the heterogeneous demand

    Extract: I want to give you a roadmap for our program. We will not be delivering individual papers but, rather, hope to have a discussion. We are planning to spend thirty minutes on introductions for the purpose of allowing you to identify the source of each panelist\u27s perspectives. We will then use an hour, more or less, for a discussion among the panel. That will leave fifteen minutes for audience questions and participation. Because we will be publishing an edited transcript, we ask that you hold your questions until the end. Access to justice is a broad topic, and we cannot cover everything. You will notice a few major omissions. Most notably, we are not going to emphasize consumer pre-dispute arbitration agreements. This is not because they are not important, but because much has been written and said on this topic, and it could easily swallow the whole discussion. Also, we are probably not going to say very much about restorative justice, and I am sure you will notice some other holes. We invite you to raise missing issues in your comments. Let me start with a few opening remarks. We are building upon earlier panels on access to justice at this meeting. At the ones I attended, I have heard two different themes. One is about the availability of lawyers and the value of legal representation, emphasizing that having a lawyer is a key aspect of access to justice. Another theme asks whether the legal system is providing justice aside from the question of adequate representation in individual cases. This critique emphasizes the extent to which the litigation system is stacked, and ways in which laws fail to recognize the individual realities of the disadvantaged. Both these themes are highly relevant to the role of dispute resolution in access to justice

    Farmers’ willingness to adopt late blight-resistant genetically modified potatoes

    The commercialization of genetically modified (GM) crops remains highly contested in the European Union (EU). While research has mainly focused on public and consumer opinions, few studies have investigated farmers' reactions towards such crops. This study aims to determine farmers' willingness to adopt a late blight-resistant (LBR) GM potato cultivar (Bintje) in Flanders, Belgium (n = 384). The findings demonstrate that more than half (54.7%) of the farmers have the intention to adopt this GM potato if it becomes available. Farmers' willingness to adopt is mainly influenced by ethical concerns about Genetically Modified Organisms (GMOs) (negative) and perceived economic benefits of LBR GM potatoes (positive). Knowledge about GM technology decreases the likelihood of being indifferent, as compared to being willing to adopt or being opposed. As such, efforts to improve knowledge alone would not be considered an effective strategy to improve adoption rates among farmers. Socio-economic concerns about GMOs, environmental benefit perceptions of LBR GM potatoes, and socio-demographic and farm variables were not significant as potential determinants of farmers' likelihood to adopt this GM potato. Our findings lend support to a potentially favorable climate to introduce this GM potato in Flanders, Belgium, an EU region where opt-out measures to restrict cultivation of approved GM crops were not taken

    Using eye tracking to account for attribute non-attendance in choice experiments

    This study uses eye-tracking measures to account for attribute non-attendance (ANA) in choice experiments. Using the case of sustainability labelling on coffee, we demonstrate various approaches to account for ANA based on number of fixation count cut-offs, definitions for detecting ignored attributes, and methods for modelling ANA. Some of the sustainability attributes identified through eye-tracking measures as being ‘visually ignored’ were truly ignored while in none of the tested approaches price was truly ignored. The adequacy of eye-tracking as a visual ANA measure might thus depend on the attribute. Further, there are inconsistencies in identifying non-attenders using visual ANA and the coefficient of variation. Based on our results, we cannot conclude that eye-tracking always adequately identifies ANA. However, we identified several major challenges that can assist in further optimizing the use of eye-tracking in the context of ANA

    Challenges and prospects for consumer acceptance of cultured meat

    Consumer acceptance of cultured meat is expected to depend on a wide diversity of determinants ranging from technologyrelated perceptions to product-specific expectations, and including wider contextual factors like media coverage, public involvement, and trust in science, policy and society. This paper discusses the case of cultured meat against this multitude of possible determinants shaping future consumer acceptance or rejection. The paper also presents insights from a primary exploratory study performed in April 2013 with consumers from Flanders (Belgium) (n=180). The concept of cultured meat was only known (unaided) by 13% of the study participants. After receiving basic information about what cultured meat is, participants expressed favorable expectations about the concept. Only 9% rejected the idea of trying cultured meat, while two thirds hesitated and about quarter indicated to be willing to try it. The provision of additional information about the environmental benefits of cultured meat compared to traditional meat resulted in 43% of the participants indicating to be willing to try this novel food, while another 51% indicated to be ‘maybe’ willing to do so. Price and sensory expectations emerged as major obstacles. Consumers eating mostly vegetarian meals were less convinced that cultured meat might be healthy, suggesting that vegetarians may not be the ideal primary target group for this novel meat substitute. Although exploratory rather than conclusive, the findings generally underscore doubts among consumers about trying this product when it would become available, and therefore also the challenge for cultured meat to mimic traditional meat in terms of sensory quality at an affordable price in order to become acceptable for future consumers

    Determinants of the Acceptance of Sustainable Production Strategies in Conventional and Organic Dairying in Europe: An Empirical Analysis

    An extended version of the Technology Acceptance Model (TAM) was applied by means of Structural Equation Modelling to testing various hypotheses on attitudes and intentions of dairy farmers towards three novel sustainable production strategies, as well as the influence of organic practices and collaborative behaviours, such as information sharing with supply-chain partners. Data on the acceptance of three sustainable production strategies, namely Agro-forestry, Alternative protein source, and Prolonged maternal feeding were collected by a survey of dairy farmers in six European Union (EU) countries (Austria, Belgium, Denmark, Finland, Italy, United Kingdom). We found that perceived usefulness is the key determinant of acceptance, while the intention to adopt a sustainable production strategy may derive from the influence of opinions (and behaviours) of relevant others (e.g., leading dairy farmers, family members, advisors) showing the role of interactions among farmers and other stakeholders in the adoption of innovations. Finally, the perceived usefulness of all of the investigated strategies is higher for organic farmers, while collaborative patterns reduce the impact of subjective norm on usefulness and overall acceptance. Our findings should encourage policy makers to consider the important role of supply chain management practices, including collaboration, to enhance the sustainability of dairy farming systems

    Consumer perception of sustainable practices in dairy production

    Home-grown protein crops as an alternative to soya in dairy cattle meals, as well as other sustainable ethical-based practices, have been proposed to increase the sustainability of dairy production. Data on consumer acceptance of the three novel sustainable production strategies of ‘agroforestry’, ‘prolonged maternal feeding’ of young cattle and ‘alternative protein source’ were collected through an online survey on consumer in six European Union countries: Austria, Belgium, Denmark, Finland, Italy and the UK. Using Chen’s extended version of the Theory of Planned Behaviour model, the underlying model hypotheses on the attitudes and intentions of these consumers towards these production practices were tested, to establish the explanatory power of the model in the specific context of novel sustainable production strategies. Furthermore, the influence of gender and consumer ethical choices on their attitudes towards these innovative practices was also tested. These data show that ‘prolonged maternal feeding’ is the novel production practice that has the highest level of acceptance by consumers in all of these countries, with the least accepted practice as ‘alternative protein source’. Unexpectedly, increased availability of home-grown feed, which is grounded on both farmer and societal interests for higher input self-sufficiency and more sustainable production practices, was little appreciated by consumers, although their intentions appear to be dependent on their moral norms.202
