    Fifty years of Hurbanovo maltery

    Get PDF
In April 2017 it was exactly half a century since construction work on malting plant was completed, and in October it was 50 years since the first tonnes of Hurbanovo malt had been produced. The maltery was then a part of the state-owned enterprise Západoslovenské pivovary a sladovne, Bratislava. Once everything was completed, the maltery consisted of 64 steeping tanks, 16 Wanderhaufen system lines and four double-floor kilns. The planned malt production capacity of 30,000 tonnes was already achieved in 1968. Organisational change in 1984 caused the creation of the separate state-owned enterprise Zlatý Bažant, Hurbanovo. After the new germination facility with eight Saladin boxes and two single-floor kilns were built and at the same time the steeping process was adjusted, the annual production capacity of maltery increased during 1986 and 1987 to approximately 63,000 tonnes of malt. In 1992, the brewery was transformed into a joint-stock company Zlatý Bažant and in 1995, the whole plant became a part of the Dutch company Heineken. In 1998, a new steeping room with nine cylindroconical steeping tanks took the place of the old steep tank system. Following adjustments of the technological process enabled the increase of total malt production capacity to 80,000 tonnes annually. Another organisational change happened in 2001, when maltery became an independent joint-stock company under the name Heineken Slovensko Sladovne. In 2002, there was a modernization, an increase in the capacity of six steeping tanks, a construction of six new circular germinating boxes and high-capacity single-floor kiln, thus extending the maximum annual production capacity to 150,000 tonnes. At the same time, the malt production in the outdated Wanderhaufen system floors and four original double-floor kilns was discontinued. The old Saladin boxes and two old singlefloor kilns were decommissioned gradually during 2012 and 2013. With an annual malt production capacity of around 111,000 tonnes, the maltery is the largest not only in Slovakia, but also in the entire Central Europe

In the grain samples of five malting barley varieties harvested in 2011, the amount of basic components as well as physiological characteristics of barley were determined. These samples were micromalted and resulting malt was analyzed mainly according to the European Brewery Convention (EBC) and the Mitteleuropäische Brautechnische Analysenkommission (MEBAK) methodologies. The same samples of malting barley grain and also samples of malt were placed in polyethylene bags, from which the air was exhausted and they were further stored at 4 °C until 2016. In 2016, grain and malt samples were subjected to the same analyses as in 2011. Results were statistically evaluated by t-test of dependent samples. Most of the monitored parameters has remained at the same level as in 2011 or has slightly improved. The exception was statistically very highly significant decrease (P ≤ 0.001) of friability and increase of amount of whole and partly unmodified grains. Under conditions described, long-term storage of malting barley grain has not significantly negatively affected its germination. Long-term storage of malt has had not a significant negative impact on its quality too.Vo vzorkách zrna piatich odrôd sladovníckeho jačmeňa, zozbieraných v roku 2011, bolo stanovené množstvo základných obsahových látok a stanovené boli tiež fyziologické znaky jačmeňa. Výnimkou bolo štatisticky veľmi vysoko preukazné zníženie (P ≤ 0,001) hodnoty friability a zvýšenie množstva sklovitých a polosklovitých zŕn.

Plant oils and fats are important and necessary components of the human nutrition. They are energy source and also contain fatty acids - compounds essential for human health. The aim of this study was to evaluate nutritional quality of selected plant oil - olive, rapeseed, pumpkin, flax and sesame; based on fatty acid composition in these oils. Fatty acids (MUFA, PUFA, SFA) were analyzed chromatography using system Agilent 6890 GC, injector multimode, detector FID. The highest content of saturated fatty acids was observed in pumpkinseed oil (19.07%), the lowest content was found in rapeseed oil (7.03%), with low level of palmitic and stearic acids and high level of behenic acid (0.32%) among the evaluated oils. The highest content of linoleic acid was determined in pumpkinseed (46.40%) and sesame oil (40.49%); in these samples was also found lowest content of α-linolenic acid. These oils have important antioxidant properties and are not subject to oxidation. The richest source of linolenic acid was flaxseed oil which, which is therefore more difficult to preserve and process in food industry. In olive oil was confirmed that belongs to the group of oils with a predominantly monosaturated oleic acid (more than 70%) and a small amount of polysaturated fatty acid. The most commonly used rapeseed oil belongs to the group of oils with the medium content of linolenic acid (8.76%); this oil also showed a high content of linoleic acid (20.24%). The group of these essentially fatty acids showed a suitable ratio ∑n3/n6 in the rapessed oil (0.44)

A novel immobilization matrix for the entrapment of viable whole-cell Baeyer–Villiger monooxygenase was developed. Viable recombinant Escherichia coli cells overexpressing cyclohexanone monooxygenase were entrapped in polyelectrolyte complex beads prepared by a two-step reaction of oppositely-charged polymers including highly defined cellulose sulphate. Immobilized cells exhibited higher operational stability than free cells during 10 repeated cycles of Baeyer–Villiger biooxidations of rac-bicyclo[3.2.0]hept-2-en-6-one to the corresponding lactones (1R,5S)-3-oxabicyclo-[3.3.0]oct-6-en-3-one and (1S,5R)-2-oxabicyclo-[3.3.0]oct-6-en-3-one. The morphology of polyelectrolyte complex beads was characterised by environmental scanning electron microscopy; the spatial distribution of polymers in the beads and cell viability were examined using confocal laser scanning microscopy, and the texture was characterised by the mechanical resistance measurements
