    Fructooligosacchariedes Integrity After Atmospheric Cold Plasma and High Press

    In this study, the effect of atmospheric pressure cold plasma and high-pressure processing on the prebiotic orange juice was evaluated. Orange juice containing 7g/100g of commercial fructooligosaccharides (FOS) was directly and indirectly exposed to a plasma discharge at 70kV with processing times of 15, 30, 45 and 60s. For high-pressure processing, the juice containing the same concentration of FOS was treated at 450MPa for 5min at 11.5°C in an industrial equipment (Hyperbaric, model: 300). After the treatments, the fructooligosaccharides were qualified and quantified by thin layer chromatography. The organic acids and color analysis were also evaluated.     Apresenta os resultados da pesquisa sobre competência informacional dos estudantes da área da saúde, na Universidade Federal do Ceará, objetivando analisar o comportamento informacional desse público e como compreendem o acesso à informação mediada por computador no âmbito da saúde para a realização de pesquisa científica e produção de trabalhos acadêmicos. O estudo foi realizado mediante a aplicação de questionário para o referido grupo focal. Os resultados evidenciam que os participantes possuem bons conhecimentos no uso das ferramentas tecnológicas e internet, porém demonstram dificuldades em relação ao uso dos repositórios e das fontes especializadas de informação em saúde. Pode-se concluir que se faz necessária a implantação de políticas e programas de competência em informação na Biblioteca de Ciências da Saúde (BCS/UFC), de modo a ampliar o nível de compreensão e uso competente da informação para a produção do conhecimento em saúde.The study presents the results of the assessment on information literacy of health students in the Federal University of Ceará. This research aims to analyze the informational behavior of this group, and how they include access to computer-mediated information in health to carry out scientific research and production of academic work. The data was collected through a questionnaire applied to the group mentioned. The results show that the participants have good knowledge in the use of technological tools and the Internet, but they demonstrate difficulties in the use of repositories and sources of specialized information. The study concluded that it is necessary for to the librarians from the Library of Health Sciences to implement policies and programs of information literacy in order to increase the level of understanding and competent use of information for the production of health knowledge

    Criação da base de dados e mapeamento conceitual para elaboração do tesauro da Literatura de Cordel

    93 This report describes the creation process of the Cordel Literature Database, whose leaflets were analyzed with the objective of identifying their themes and organizing their conceptual structure for the future elaboration of a thesaurus of the area. The leaflets available on the database are part of several collections and are authored by popular poets identified in previous research. Discursive Semantics (GREIMAS, 1976) was the method of linguistic and textual analysis used to identify the themes addressed in the cordel leaflets. The Thematic Classes for cordel leaflets, created by Albuquerque (2011), were the starting point of the analysis of the research corpus and they provided the opportunity to organize and demonstrate the semantic relationships between the themes and figures identified in the leaflets. As a result, 27 Thematic Classes were created, called Categories in this study, and each of these were broken down into Subcategories with their respective concepts, to assist in the thematic representation and facilitate the retrieval of the cordel leaflet. The study enabled the construction of a database in which 2,668 titles of cordel leaflets are organized, represented in a thematic way. The data collected and organized in this first phase will allow the elaboration of the ‘Thesaurus of Cordel Literature’, the next action to be carried out by the research.Este artigo descreve o processo de criação da Base de Dados Literatura de Cordel, cujos folhetos foram analisados com o objetivo de identificar seus temas e organizar sua estruturação conceitual para a futura elaboração de um tesauro da área. Os cordéis disponíveis na base de dados fazem parte de acervos diversos e são de autoria de poetas populares identificados em pesquisas realizadas anteriormente. A Semântica Discursiva (GREIMAS, 1976) foi o método de análise linguística e textual utilizado para identificar os temas abordados nos folhetos de cordel. As Classes Temáticas para cordéis, criadas por Albuquerque (2011), foram o ponto inicial da análise do corpus da pesquisa e oportunizaram a organização e a demonstração das relações semânticas existentes entre os temas e as figuras encontradas nos folhetos. Como resultado, foram criadas 27 Classes Temáticas, chamadas, neste estudo, de Categorias. Cada uma delas foi desdobrada em subcategorias, com os respectivos conceitos, para auxiliar a representação temática e facilitar a recuperação do folheto de cordel. O estudo viabilizou a construção de uma base de dados em que estão organizados 2.668 títulos de folhetos de cordel representados de modo temático. Com os dados coletados e organizados nessa primeira fase, será possível elaborar o ‘Tesauro da Literatura de Cordel’, próxima ação a ser realizada na pesquisa

    Effects of sucrose reduction on the structural characteristics of sponge cake

    ABSTRACTThe consumption of reduced-calorie cakes has been increasing, however this has presented challenges to be overcome concerning the formation of their structure when the sucrose is substituted by alternative sweeteners, gums or thickening agents. The present study evaluated the internal characteristics of cakes with a reduction in sucrose, and the effects of its substitution on starch gelatinisation. Starting with a pre-established formulation, the sucrose was gradually substituted by a 1.0% mixture of sucralose in a 1.5% xanthan gum solution. In the substituted cake mix, the apparent viscosity and its thermal properties were evaluated using differential scanning calorimetry (DSC). Specific volume (SV) and cell count (CC) were evaluated in the cakes. As the sucrose content decreased (52.17 to 10.00%), the specific volume (1.94 to 0.7 mL/g), cell count (36.2 to 4.0 cell/cm2) and the apparent viscosity of the batter (337.56 to 631.40 cP) were also reduced. The results showed that substituting the sucrose contributed greatly to the formation of defects in the cake structure (holes). From the data obtained, and thermograms of standard cake batters and those with a reduction in sucrose, it can be concluded that sucralose reduced the temperature of starch gelatinisation, speeding the process and causing compaction of the cake structure during baking, favouring the formation of bubbles throughout the batter

    Potential for Forest Restoration and Deficit Compensation in Itacaiúnas Watershed, Southeastern Brazilian Amazon

    The conservation and restoration of native vegetation is vital for providing key hydrological services (i.e., maintaining high water quality, atmospheric humidity, and precipitation patterns). However, this research area lacks fine-scale studies at the watershed level to evaluate opportunities for forest restoration and deficit (the shortfall of forest required to be restored or compensated), as well as the implications for watershed management. We provide the first fine-scale estimation of forest and deficit distribution, integrating permanent preservation areas (APPs, in Portuguese) and legal reserves (RL, in Portuguese), according to Brazilian environmental law, for the 41,300 km2 Itacaiúnas watershed in the Brazilian state of Pará, which has lost 50% of its vegetation cover. Using 30 m- and 10 m-resolution imagery, a multi-temporal land use classification was performed by geographic object-based image analysis (GEOBIA). The results were combined with a set of Brazilian regulations on the conservation and restoration of APPs and RL to assess patterns of forest cover and legal compliance. We found that the total RL deficit (4383 km2) was higher than the total forest surplus (above legal obligation) (3241 km2). However, most of this deficit (56%) could be compensated by protecting a forest area in another property within the Amazon biome, while 44% must be legally restored. Only 4% of the total forest surplus can be legally deforested, and the remaining 96% is already protected by law but can be used to compensate for areas under the deficit. We also found that, despite 57% (3017 km2) of the total APP being forested, only 26% (1356 km2) of the APP must be restored and 17% (881 km2) can remain deforested (consolidated areas). The 2012 law revision reduced the obligation to restore RL and APPs. This change could affect hydrological and ecological services. Compensation mechanisms could be used to protect forest within the Itacaiúnas watershed, rather than in the biome, to reduce further deforestation pressure

    Given the lack of advances in Oral Squamous Cell Carcinoma (OSCC) therapy in recent years, pharmacological strategies to block OSCC-related signaling pathways have gained prominence. The present study aimed to evaluate the therapeutic potential of Arsenic Trioxide (ATO) concerning its antitumoral effects and the inhibition of the Hedgehog (HH) pathway in OSCC. Initially, ATO cytotoxicity was assessed in a panel of cell lines. Cell viability, cell cycle, death patterns, and cell morphology were analyzed, as well as the effect of ATO on the expression of HH pathway components. After the cytotoxic assay, HSC3 cells were chosen for all in vitro assays. ATO increased apoptotic cell death and nuclear fragmentation in the sub-G1 cell cycle phase and promoted changes in cell morphology. In addition, the reduced expression of GLI1 indicated that ATO inhibits HH activity. The present study provides evidence of ATO as an effective cytotoxic drug for oral cancer treatment in vitro
