    RESEARCH OF THE EFFECT OF AGING PROCESS ON DISPERSION OF AIR PHASE AND ICE CRYSTALS IN MILK ICE CREAM

    In this research the results of analytical studies are presented, which prove the lack of data on influence of aging process on dispersion of structural elements in ice cream with fat mass fraction of 6% or less, and experimental studies on definition of dispersion of air phase and ice crystals in milk ice cream. It was found that the process of the mix aging doesn’t significantly affect the dispersion of air phase and ice crystals in ice cream with fat mass fraction of 3%. In ice cream with fat mass fraction of 6%, made from a mix, the dispersion of the air phase increased along with the aging process, and the size of almost all air bubbles were less than 50 microns. At the same time the dispersion of ice crystals increased by no more than 10%. The decrease in dispersion of the air phase during the storage period was observed, mostly in ice cream with a fat mass fraction of 6% produced of the cured mix.     Influence of the structure and composition of zeolite NaX on carbon dioxide adsorption under dynamic conditions

    Using the X-ray diffraction analysis, emission spectral analysis, low-temperature nitrogen adsorption, and electron spin resonance methods, the dynamic sorption capacity in removal of carbon dioxide from gas streams, exhibited by type NaX zeolite samples, was studied in relation to their phase and elemental compositions and crystal and pore structure characteristics. It was found that the criteria determining the capacity of the zeolite are the content of the crystalline phase, imperfection of the crystal structure as determined by the crystallite size and the amount of iron isomorphously substituting the aluminum cations in the tetrahedral sites of the zeolite, and the number of compensating sodium cations. © 2013 Pleiades Publishing, Ltd

    The results of studies of physical changes of the structure of milk ice cream at fat content of 4.0 % — 6.0 % and frozen whipped fruit desserts at different degree of overrun with/without addition of whey and whey protein concentrate are given in the paper. It is shown that the storage temperature affects the dispersion of structural elements of frozen whipped fruit desserts. An average size of air bubbles of frozen whipped desserts stored at minus 18°C is 1.2 –1.4 times larger than the size of the bubbles of the samples stored at minus 25°С. The average size of ice crystals increased 1.4 times after 9 months of storage at minus 18°C. The average size of air bubbles of ice cream at 4 % fat content increased 1.5 times after 6 months of storage, and the ice crystals size increased 1.1 times. It is recommended to use the storage temperature below minus 25°С to keep the quality of ice cream and frozen whipped desserts.     Dynamic behavior of complex neuronal ensembles is a topic comprising a streamline of current researches worldwide. In this article we study the behavior manifested by epileptic brain, in the case of spontaneous non-convulsive paroxysmal activity. For this purpose we analyzed archived long-term recording of paroxysmal activity in animals genetically susceptible to absence epilepsy, namely WAG/Rij rats. We first report that the brain activity alternated between normal states and epilepsy paroxysms is the on-off intermittency phenomenon which has been observed and studied earlier in the different nonlinear systems.Comment: 11 pages, 6 figure

    Conhecimentos e opiniões de médicos e farmacêuticos acerca dos genéricos versus padrões de prescrição/dispensa

    Objectivos (Objectives): Na actual situação da economia portuguesa, a política do medicamento assume uma importância primordial na prossecução de uma redução da despesa pública com medicamentos para 1,25% do PIB até final de 2012 e para cerca de 1% do PIB em 2013, conforme o acordo estabelecido com as entidades internacionais. No entanto, do ponto de vista do cidadão, a despesa privada em medicamentos é também uma temática na ordem do dia. Poucos temas são tão controversos na área da política do medicamento como a introdução de genéricos no mercado de medicamentos, contudo, estes podem desempenhar um papel fundamental na optimização da afectação de recursos. São muitas as questões levantadas contra e a favor da qualidade, segurança e eficácia dos genéricos. Se os médicos, através da prescrição, são o factor decisivo para o aumento da quota de genéricos; os farmacêuticos enquanto dispensadores assumem um papel preponderante na sensibilização dos utentes para a sua aceitação e adesão à terapêutica. Objectivo: O presente estudo pretende estudar os conhecimentos e opiniões de médicos e farmacêuticos face aos medicamentos genéricos e as suas relações com a prescrição/dispensa de genéricos. Metodologia (Methodology): Foi enviado, via postal, um inquérito por questionário a uma amostra de médicos e farmacêuticos. Responderam 261 indivíduos, 158 médicos e 103 farmacêuticos. O inquérito foi validado por um painel de juízes e demonstrou uma boa consistência interna. Para efectuar a comparação entre as respostas dos diferentes grupos, recorreu-se ao teste t para amostras independentes. Resultados (Results): 75,9% dos inquiridos, considerou que o medicamento genérico é bioequivalente ao de referência mas apenas 58,7% disse acreditar que um fármaco genérico, no processo de preparação, oferece as mesmas garantias de qualidade. Verificou-se que os médicos que têm mais conhecimentos e opinião mais favorável sobre os genéricos prescrevem genéricos com mais frequência (p <0.001). Constatou-se que os farmacêuticos têm mais conhecimentos (p <0.008) sobre os medicamentos genéricos que os médicos e que manifestaram respostas mais positivas (p <0.001). Conclusões (Conclusions): Médicos e farmacêuticos acreditam que a despesa em medicamentos é um factor a ter em atenção no momento da prescrição/dispensa de medicamentos. Subsistem, no entanto, algumas crenças erróneas sobre a qualidade do medicamento genérico. Tal facto reforça a necessidade de políticas activas de promoção dos medicamentos genéricos

    Subject. Publications of recent years testify to the increased scientific interest in the theory and practice of management accounting. The focus of modern research in management accounting is put on understanding of its principles, subject matter, problems and experience in setting up the system as well as directions for further development. The paper addresses the problem of defining the information space of management accounting. Since the definition of “management accounting” lacks unambiguous interpretation, the issue of the information space is relevant and subject to discussion. Purpose. Justification of the need to expand the information space of management accounting. Method / methodology. The paper analyzes and generalizes the findings of the research into some theoretical provisions of management accounting; the expert opinions on the definition of the subject matter of management accounting are examined along with arguments substantiating conclusions about the boundaries of the information space of the management accounting system. Results. The considered arguments, largely conditioned by changes in the business environment, testify to the inevitability of expanding the management accounting information space in order to provide the accounting and analytical support for the management process. Application. The research findings and conclusions can be taken into account in investigations into the field of theory and practice of management accounting and determining the trends for its further development. Conclusions. It is concluded that there is a need in broad understanding of the subject matter of management accounting and the boundlessness of its information space, which makes it necessary to change its concept, inherent objects, etc. and also demonstrates the need to develop tools for accounting-analytical support of the management in the business environment.Предмет/тема. Публикации последних лет свидетельствуют о повышении научного интереса специалистов к проблемам теории и практики управленческого учета. В центре внимания современных исследований управленческого учета находятся: понимание его сущности, предметная область, проблемы и накопленный опыт постановки системы, а также направления дальнейшего развития. Статья посвящена проблеме определения информационного пространства управленческого учета. В связи с отсутствием однозначного понимания дефиниции «управленческий учет» вопрос информационного пространства является чрезвычайно актуальным и дискуссионным. Цель. Обоснование необходимости расширения информационного пространства управленческого учета. Метод/методология. В статье содержится анализ и обобщение результатов исследований некоторых теоретических положений управленческого учета: рассматриваются взгляды специалистов в отношении определения сущности и предметной области управленческого учета, а также аргументы, позволяющие делать выводы о границах информационного пространства системы управленческого учета. Результаты. Рассмотрены аргументы, в большей степени обусловленные изменениями бизнес-среды, которые свидетельствуют о неизбежности расширения информационного пространства управленческого учета, призванного обеспечить учетно-аналитическое сопровождение процесса управления. Область применения. Полученные результаты исследования и выводы могут быть приняты во внимание в ходе исследований в области теории и практики управленческого учета, определения направлений его дальнейшего развития. Выводы. Сделан вывод о целесообразности широкого понимания сущности управленческого учета, о неограниченности его информационного пространства, что вызывает потребность изменения представления о его предметной области, совокупности объектов и др., а также свидетельствует о необходимости развития инструментария учетно-аналитического обеспечения управления в бизнес-среде
