    A study was made of the acceptability of the flavor of soybean milk ioghurt, to which 15% of cow's milk in several flavors was added. All the ten experimented flavors gane the product aceptable flavors, at the "liked regularly" acceptability degree of the hedonic scale.Estudou-se, neste trabalho, a aceitabilidade do sabor do iogurte de "leite de soja" adicionado de leite de vaca em vários sabores, nos teores de 85% de "leite de soja" e 15% de leite de vaca. Todos os dez saborizantes experimentados proporcionaram ao produto sabor aceitável e no grau de aceitabilidade "gostei regularmente"

    A study was made of the effect of strawberry pulp and coconut milk on the flavor of soybean milk yoghurt to which cow milk was added (85% and 15%, respectively). The results indicate that coconut and strawberry significantly contributed to improve the flavor of the product which, even without this addition, is of acceptable flavor.Estudou-se o efeito da polpa de morango e leite de côco no sabor do iogurte de "leite" de soja adicionado de leite de vaca (85 e 15%, respectivamente). Os resultados indicam que os saborizantes morango e côco contribuíram significativamente para melhorar o sabor do produto. Este produto, mesmo sem saborizante é ainda um produto de sabor aceitável

    A test was made to evaluate flavor preference between cow milk added soybean milk yoghurt (85 and 15% respectively), and traditional yoghurt. The results of the application of the sequential two-sided paired preference comparison test in the organoleptic evaluation of the flavor of the yoghurts showed that the preference is for the traditional yoghurt, not with standing the acceptable flavor of the new product.Estudou-se a avaliação de preferência, quanto ao sabor, do iogurte de "leite" de soja adicionado de leite de vaca (85 e 15%, respectivamente) perante o tradicional, ambos nos sabores coco e morango. Os resultados da aplicação do teste sequencial bicaudal pareado - preferência na avaliação organoleptica do sabor dos iogurtes, mostraram que a preferência ê pelo tradicional, embora o novo produto seja aceitável quanto ao sabor

    Utilização de abóbora e moranga na produção de doce de leite pastoso com coco

    Pumpkin and squash were studied in the production of sweet condensed caramelized milk "dulce de leche". The following treatments were studied: 1) pumpkin pulp, 2) squash pulp and 3) pumpkin and squash pulps. Experimental results showed that pumpkin pulp is the preffered one to be mixed with the "dulce de leche"; next is the mixture of the two pulps. The product containing squash pulp as well as the product containing pumpkin and squash pulps was classified in the degree of appreciation between "like" and "like very much". On the other hand the product with pumpkin pulp was classified in the degree of appreciation "indiferent". The most important attribute in the discrimination of the samples was the flavour.Foi estudado a utilização dos frutos abóbora e moranga na produção de doce de leite pastoso. Estudou-se os seguintes tratamentos: 1) polpa de abórora, 2) polpa de moranga, e 3) polpa de abóbora e moranga. Os resultados experimentais mostraram que o melhor fruto a mesclar com o doce de leite é a moranga, vindo em seguida a mistura dos frutos. Tanto o doce de leite com moranga como com mistura de frutos, classifica-se no grau de apreciação entre "gostei" e "gostei muito". Já com a abóbora, no grau de apreciação "indiferente". O atributo mais importante na discriminação das amostras foi o sabor

    Anuran responses to spatial patterns of agricultural landscapes in Argentina

    Context: Amphibians are declining worldwide and land use change to agriculture is recognized as a leading cause. Argentina is undergoing an agriculturalization process with rapid changes in landscape structure. Objectives: We evaluated anuran response to landscape composition and configuration in two landscapes of east-central Argentina with different degrees of agriculturalization. We identified sensitive species and evaluated landscape influence on communities and individual species at two spatial scales. Methods: We compared anuran richness, frequency of occurrence, and activity between landscapes using call surveys data from 120 sampling points from 2007 to 2009. We evaluated anuran responses to landscape structure variables estimated within 250 and 500-m radius buffers using canonical correspondence analysis and multimodel inference from a set of candidate models. Results: Anuran richness was lower in the landscape with greater level of agriculturalization with reduced amount of forest cover and stream length. This pattern was driven by the lower occurrence and calling activity of seven out of the sixteen recorded species. Four species responded positively to the amount of forest cover and stream habitat. Three species responded positively to forest cohesion and negatively to rural housing. Two responded negatively to crop area and diversity of cover classes. Conclusions: Anurans within agricultural landscapes of east-central Argentina are responding to landscape structure. Responses varied depending on species and study scale. Life-history traits contribute to responses differences. Our study offers a better understanding of landscape effects on anurans and can be used for land management in other areas experiencing a similar agriculturalization process.Facultad de Ciencias ExactasCentro de Investigaciones del Medioambient
