    Throughout the women’s suffrage movement, rhetoric was used as a powerful tool of persuasion to convince men that women should have the right to vote. It was also used as a tool of persuasion to convince women to join the fight for suffrage. One of the most influential rhetoricians in the movement was suffragist, Carrie Chapman Catt, who was able to use both. This study aims to determine how women’s suffrage leader, Carrie Chapman Catt, used persuasion through her speeches to win the 19th amendment. This study specifically investigates one speech to the all-male United States Congress and the other to an all-female suffrage group. This study is a textual analysis that uses Kenneth Burke’s seven tactics of identification. Specifically, this study investigates when and how Carrie Chapman Catt changes her rhetorical speaking style using Aristotle’s three forms of proof: ethos (credibility), pathos (emotion), and logos (logic). Following this, the results are compared to Genderlect theory to determine how Catt uses her rhetoric to appeal to both genders through gender differences in language. These results suggest that Carrie Chapman Catt changes her rhetorical speaking style to identify with men and women differently to achieve suffrage for all

    FARMERS’ MARKET SHOPPING BEHAVIORS AND THE ASSOCIATION OF FRUIT AND VEGETABLE INTAKE

    Fruit and vegetable (FV) intake continues to decline among sub-population in the United States. Current policies and interventions have aimed to improve intake by improving access to fruits and vegetables. One Centers for Disease Control and Prevention suggested strategy is to improve access to farmers’ markets in rural areas. The aims of this study were to determine if the frequency of shopping at Farmers’ Markets is associated with fruit and vegetable intake, adjusted for age, income and education and to compare rural and non-rural areas frequency of Farmers’ Market attendance based on Kentucky farmers’ market interview participants (n = 102). The results of the descriptive, cross-sectional study determined that the Kentucky farmers’ market customers Fruit and Vegetable Score was positively associated with frequency of purchase of locally grown fruits and vegetables at farmers’ markets. However, the frequency of farmers’ market attendance was most commonly limited to ‘once a week’ (as a result of participants attending ‘Only attends market when need something’). It was concluded that alleviating the barriers customers face to use farmers’ markets is the best way to increase the attendance of farmers’ markets and as a result increase the purchases of fresh fruits and vegetables

    Assessing the Effectiveness of the Expanded Food and Nutrition Education Program on Diet Quality as Measured by the Healthy Eating Index 2005

    Background:The Expanded Food and Nutrition Education Program (EFNEP) is a federally funded program through the United States Department of Agriculture that offers nutrition education to low income families across the U.S. Purpose:This study assessed the effectiveness of Maine EFNEP on food-related behavior change and diet quality as measured by the Healthy Eating Index-2005 (HEI). This study also explored the relationship between the results on the HEI and participation in food assistance programs such as Supplemental Nutrition Assistance Program (SNAP) and Women, Infants, and Children (WIC), as well as the number of hours spent in the program. Methodology:This study was a pre-post-secondary analysis of data gathered from WebNEERS, the database utilized by EFNEP. Diet recall data from fiscal years 2013-2016 were utilized to derive a healthy eating index score and sub-scores for each food group. T-tests and Ordinary Least Squares regressions were used to analyze data. Statistical analysis was conducted using STATA Special Edition 14.1. Results:Total HEI score and sub-scores improved pre- to post-EFNEP at the 1% level, except for saturated fat, which improved at the 5% level. Sodium and total grains scores decreased post-EFNEP (p=.003) and (p=.05) respectively. Women, Infants, and Children (WIC) or Supplemental Nutrition Assistance Program (SNAP) participation had no effect on HEI scores. Less than 7 hours in the program was associated with a smaller improvement in total HEI score (p=.05) and a reduction in the sodium score (p=.03), when compared to spending 7-16 hours in the program. Conclusion:EFNEP is effective in improving the diet quality of Maine participant
