Evaluación antropométrica del estado nutricional y estimación de las ingestas de hierro y de vitamina C de mujeres posmenopáusicas y hombres mayores de 45 años

posmenopáusicas y hombres mayores de 45 años,
mediante medidas antropométricas, y estimación de las
fuentes e ingestas dietéticas de hierro y de vitamina C.
Material y métodos: Participan en el estudio 125 hombres
y 176 mujeres de 40 a 93 años procedentes de dos
Centros de Salud y del Centro de Hemodonación de Cartagena
(Murcia). Se realiza una valoración antropométrica
y una encuesta alimentaria de frecuencia de consumo
de alimentos durante el último mes. Los contenidos de hierro
y de vitamina C se obtienen de las tablas de composición
de alimentos españoles. Para evaluar la dieta con respecto
al hierro y la vitamina C las ingestas estimadas se
comparan con las recomendadas para población española.
Resultados: La distribución del peso y de la talla por
sexo y grupos de edad muestra valores significativamente
más altos para los hombres que para las mujeres, e indica
una disminución significativa con la edad. El Ãndice
de masa corporal (IMC) alcanza su máximo a una edad
inferior o igual a 59 años en los hombres, y en la década
de 60-69 años en las mujeres. En éstas la prevalencia
tanto de obesidad (IMC > 30 kg/m2) como de bajo peso
(IMC < 20 kg/m2), es mayor que en los hombres.
Los percentiles 50 de la ingesta media estimada de
hierro son 16,2 mg/dÃa en hombres y 15,2 mg/dÃa en mujeres,
y los de vitamina C son 145,1 mg/dÃa en hombres
frente a 147,5 mg/dÃa en mujeres.
Las principales fuentes de hierro son las carnes, las
verduras y los cereales, mientras que frutas y verduras
proporcionan la vitamina C.
Conclusiones: El estado nutricional (estimado por antropometrÃa)
de la mayorÃa de la población estudiada es
satisfactorio. La ingesta media estimada de Fe es superior
a la recomendada y la de vitamina C supera el doble
de la recomendadaObjective: The aim of our study was to evaluate, using
anthropometric measurements, the nutritional status of
postmenopausal women and men over 45, and also to estimate
the intakes and dietetic sources of iron and vitamin C.
Material and methods: 125 men and 176 women, aged 40
to 93 years, from two health centres and from Blood Donor
Centre of Cartagena (Murcia) participated in the study.
An anthropometric evaluation and a food intake frequency
survey focusing on the previous month were carried out:
Spanish food composition tables were used to assess the
iron and vitamin C contents. To evaluate the diet in relation
to iron and vitamin C, the estimated and recommended
intakes for the Spanish population were compared.
Results: The distribution of weight and height, according
to sex and age groups, showed significantly higher
values for men than for women, and showed a significant
decrease with ageing. The body mass index (BMI) reached
a maximum value at the age of 59 years or less in men, and
from 60 to 69 in women. The prevalence of obesity (BMI >
30 kg/m2) and low weight (BMI < 20 kg/m2) was higher
among the women than among the men.
The P50 of the estimated iron mean intakes were 16.2
and 15.2 mg/day for men and women, respectively, and
those of vitamin C were 145.1 and 147.5 mg/day, for
men and women, respectively.
The main dietetic sources of iron were meat, vegetables
and cereals, and those of vitamin C were fruits and
vegetables.
Conclusions: The estimated mean iron intake was
higher than the recommended intake, and vitamin C intake
was more than double the recommended level. The
majority of the studied population had a satisfactory nutritional

Analysis of phytosterols in foods
Phytosterols are bioactive compounds, one of their most studied and outstanding properties being their cholesterol-lowering activity. This explains the growing interest in the phytosterol contents of foods as either intrinsic or added components. The different steps (extraction, saponification, clean up, chromatographic determination) of plant sterol determination are reviewed, and emphasis is placed on the methods used to assay different phytosterols in food
Antioxidant capacity of infant fruit beverages: influence of storage and in vitro gastrointestinal digestion
[email protected]; [email protected]; [email protected] total antioxidant capacity of three beverages based on fruit juice, milk and cereals, intended for infants and young children up to 3 years of age was evaluated by two methods Trolox Equivalent Antioxidant Capacity and Oxygen Radical Absorption Capacity. Results: According to the total antioxidant values obtained by both methods, the beverages can be ranked as follows: grape-orange-banana > peach-apple > pineapple-banana. Ascorbic acid was the main contributor (60%) to the total antioxidant capacity, while the contribution of skimmed milk was less than 1.2%. After one month of storage at -20 ºC, significant losses (p < 0.05) in total antioxidant capacity were found, though these were lower than 3% and therefore lacked nutritional significance. The bioaccessible fractions (maximum soluble fraction in simulated gastrointestinal media) of the beverages, obtained by in vitro gastrointestinal digestion, had antioxidant activities significantly lower (p < 0.05) than the original beverages, though the loss of antioxidant activity was always lower than 19% -thus indicating the stability of the total antioxidant capacity under the applied conditions. Conclusions: The total antioxidant capacity values of the bioaccessible fraction show that most antioxidants are available for absorption after digestion, and might contribute to the beneficial effects attributed to antioxidants
Sterol Oxidation in Ready-to-Eat Infant Foods During Storage
The effect of storage on sterol oxidation of ready-to-eat infant foods was evaluated. Two different liquid infant foods (honey or fruits flavors), prepared with milk and cereals, were stored for 0, 2, 4, 7 and 9 months at 25 °C. Sterol oxidation products (SOP) were isolated by cold saponification, purified by silica solid-phase extraction, and analyzed by gas chromatography (GC) and GC-mass spectrometry. β-Sitosterol was the most representative sterol, followed by cholesterol and campesterol. No significant differences in the total and single SOP content (0.81 mg/kg of product) were observed with respect to storage time and type of sample; the main SOP found was 7-ketositosterol (<0.2 mg/kg of product). The extent of stigmasterol oxidation (2.9%) was higher than that of cholesterol (1.9%) and β-sitosterol (1.4%). The type and quality of raw materials, as well as the processing conditions, seem to greatly influence SOP formation and accumulation in infant foods
Report of the Scientific Committee of the Spanish Agency for Food Safety and Nutrition (AESAN) in relation to the possible risk of dietary aluminium
El Comité Mixto FAO/OMS de Expertos en Aditivos Alimentarios (JECFA) en 2006 tuvo en cuenta los
efectos que algunos compuestos de Aluminio inducÃan sobre la reproducción y sobre el desarrollo del
sistema nervioso, y redujo la Ingesta Semanal Tolerable Provisional (PTWI) del Al de 7 mg Al/kg
pc/semana a 1 mg Al/kg pc/semana. Esta reducción ha sido asumida posteriormente por la Autoridad
Europea de Seguridad Alimentaria (EFSA, 2008a, 2008b), que emitió una opinión cientÃfica sobre la
seguridad de la ingesta de aluminio a través de la dieta, en la que se estima que una parte importante
de la población europea puede superar el nivel seguro establecido.
La exposición dietética en adultos no expuestos ocupacionalmente a Al muestra una gran variación
entre los distintos paÃses, e incluso, en un mismo paÃs. AsÃ, EFSA informa que la exposición por consumo
de agua y alimentos en adultos con un peso medio de 60 kg oscila entre 0,2-1,5 mg Al/kg pc/
semana, estimándose que en niños y jóvenes la exposición dietética al percentil 97,5 en algunos paÃses
(Reino Unido y Francia) es 0,7-2,3 mg Al/kg pc/semana. Los estudios disponibles no permiten
conocer las fuentes dietéticas concretas de Al, ni la diferenciación entre los distintos orÃgenes del Al
que incluyen el intrÃnseco, el procedente de aditivos alimentarios y el resultante de los procesos de
elaboración y almacenamiento de los alimentos.
Los contenidos de Al de alimentos analizados en diferentes paÃses europeos muestran una variabilidad
relativamente elevada, incluso entre los componentes de un mismo grupo.
El Comité CientÃfico de la AESAN considera adecuado el nuevo umbral de seguridad establecido por
la EFSA de ingesta de 1 mg Al/kg pc/semana.
El Comité destaca la escasez de datos acerca del contenido de Al en alimentos en nuestro paÃs. Los
elevados contenidos de Al encontrados en algunas fórmulas para lactantes, en especial a base de soja, aconsejan un control especÃfico de la cantidad del elemento y obtener información adecuada
para evaluar los posibles riesgos derivados.
En población adulta los aditivos alimentarios que contienen Al pueden contribuir de forma significativa
a la ingesta dietética por lo que es necesario realizar estudios de toxicidad adecuados, especialmente
para valorar sus efectos.
El potencial neurotóxico del Al hace necesario disponer de estimaciones de la exposición dietética
al mismo en nuestro paÃs, recomendando este Comité que se deben incluir métodos que permitan
identificar sus fuentes, intrÃnseco o adicionado (aditivos, consecuencia del procesado, migraciones a
partir de envases de almacenamiento, etc.).In 2006, the FAO/WHO Joint Expert Committee on Food Additives (JECFA) took into account the
effects induced by some aluminium compounds on reproduction and the development of the nervous
system, and so reduced the Provisional Tolerable Weekly Intake (PTWI) of Al from 7 mg Al/kg bw/week
to 1 mg Al/kg bw/week. This reduction was subsequently accepted by the European Food Safety
Authority (EFSA, 2008a, 2008b), which issued a scientific opinion on the safety of consuming aluminium
in the diet, in which it was estimated that a major part of the population of Europe could be
exceeding the safe threshold established.
Dietary exposure in adults not exposed to Al through their occupations reveals great variability
from one country to another, and even within the same country. Thus, EFSA has reported that adults’
exposure through consumption of food and water ranges between 0.2-1.5 mg Al/kg bw/week for a
mean weight of 60 kg and it is estimated that, among children and teenagers, dietary exposure at
the 97.5 percentile is 0.7-2.3 mg Al/kg bw/week in some countries (United Kingdom and France). The
available studies do not allow the identification of the specific dietary sources of Al, nor any differentiation
between the multiple origins of Al including intrinsic Al, aluminium from food additives and
the Al resulting from food preparation and storage processes.
The aluminium content in foodstuffs analyzed in different European countries displays relatively
elevated variability, even among the members of a single group.
The AESAN Scientific Committee considers the new intake safety threshold set by EFSA to be adequate
at 1 mg Al/kg bw/week.
The Committee has highlighted the scarcity of data about Al content in food in our country. The high
Al contents found in some milk formula for infants, particularly soy-based products, make it advisable
to carry out a specific check of the amount of this element so as to obtain suitable information to
assess the potential risks deriving from this.
In an adult population, food additives containing Al may significantly contribute to dietary intake
so it is necessary to conduct appropriate toxicity studies, particularly to assess their effects.
The neurotoxic potential of Al means estimates must be made available on its dietary exposure in
Spain and this Committee has recommended the inclusion of methods allowing its sources to be identified
as intrinsic or added (food additives, a consequence of the processing, migrations from packaging
materials, etc.)
Mesures que cal tenir en compte per al rentat de fruita i hortalisses que es consumeixen crues: l'ús de l'hipoclorit de sodi
Restauració; Fruites i verdures; HipocloritRestauración; Frutas y hortalizas; HipocloritoCatering; Fruits and vegetables; HypochloriteS’avaluen diferents elements que cal tenir en compte en el procés de desinfecció de fruites i hortalisses en el marc de la restauració col·lectiva. Alhora és té en compte l’actual context normatiu, els riscos/beneficis d’aquesta practica i s’estableixen pautes per assegurar la salubritat del què s’ofereix als consumidors: • Seleccionar els proveïdors i comprovar la qualitat de les fruites i verdures subministrades. • Qui les manipula ho ha de fer tenint en compte les bones prà ctiques d’higiene. • A ser possible rentar fruites i verdures directament sota el raig d’aigua de la xarxa. S’ha d’escórrer bé la fruita i les hortalisses rentades i a continuació s’ha de refrigerar. • Cas de no poder fer el rentat peça a peça o fulla a fulla, després d’haver fet el rentat sota el doll d’aigua acorrent, es poden submergir en una solució d’hipoclorit sòdic apta per a desinfectar aigua per a consum humà . Cal aplicar la concentració que indiquin les instruccions del producte però no s’han de superar els 5 minuts d’immersió. • Les fruites i verdures es tallen posteriorment per evitar que els seus fluids incrementin la quantitat de matèria orgà nica de l’aigua. • Cal fer un bon esbandit i a continuació si no s’utilitzen d’immediat, refrigerar.Se evalúan diferentes elementos que deben tenerse en cuenta en el proceso de desinfección de frutas y hortalizas en el marco de la restauración colectiva. A su vez, se tiene en cuenta el actual contexto normativo y la relación beneficio-riesgo de esta práctica. Finalmente, a fin de garantizar a los consumidores la salubridad de los alimentos, se establecen las pautas siguientes: • Seleccionar a los proveedores y comprobar la calidad de las frutas y hortalizas suministradas. • Aquellos quienes manipulen frutas y hortalizas deben contemplar las buenas prácticas higiénicas. • De ser posible, las frutas y hortalizas se deben lavar directamente bajo el chorro de agua de la red de abastecimiento. Se debe escurrir bien las frutas y hortalizas lavadas y, a continuación, refrigerarlas. • En caso de no poder realizar el lavado pieza a pieza o hoja a hoja, tras haber realizado el lavado bajo el chorro de agua corriente, pueden sumergirse en una solución de hipoclorito de sodio apta para desinfectar agua para el consumo humano. Debe aplicarse la concentración que indiquen las instrucciones del producto, pero no se han de superar los 5 minutos de inmersión. • Las frutas y hortalizas se cortan posteriormente para evitar que los fluidos incrementen la cantidad de materia orgánica del agua. • Debe realizarse un buen aclarado y, a continuación, si no se consumen de inmediato, refrigerarlas.Different elements to be considered in the process for disinfection of fruit and vegetables in the framework of mass catering are evaluated. The current legal framework and risk/benefit relationship is also taken into account. Finally, in order to guarantee food safety to consumers, the following guidelines are established: • Select suppliers and check the quality of fruits and vegetables supplied. • Food handlers should observe good hygienic practices when handling fruit and vegetables. • If possible, fruits and vegetables should be washed directly under running tap water. Fruits and vegetables should be rinsed well and then refrigerated. • If piece-by-piece or leaf-by-leaf washing is not possible, after running water washing, immersion in sodium hypochlorite solution that is suitable for disinfecting water for human consumption. Concentration indicated by the product instructions must be applied, but 5 minutes of immersion must not be exceeded. • Fruits and vegetables are cut later on to prevent fluids from increasing the amount of water organic matter. • They must be properly rinsed, and refrigerated if not used immediately

En el pescado y los mariscos el mercurio (Hg) se encuentra mayoritariamente en forma de metil mercurio
(MeHg), la forma más tóxica. Los mayores contenidos se encuentran en los peces predadores. La
FAO/OMS (2003) ha establecido la ingesta semanal tolerable provisional (PTWI) para el MeHg en 1,6
g/kg peso corporal.
Las mujeres en edad fértil, embarazadas o en periodo de lactancia y los niños son los grupos más
vulnerables. Ante la imposibilidad de minimizar el riesgo únicamente mediante el establecimiento de
contenidos máximos más estrictos de Hg en pescados, la Comisión Europea (2008) ha instado a los
Estados miembros a formular recomendaciones para proteger la salud de los consumidores. AsÃ, se
han estimado los tamaños de ración de pescado y las frecuencias de consumo de estas raciones que
proporcionan aportes inferiores a la PTWI y que, por tanto, pueden considerarse seguras.
Los datos disponibles de contenidos de Hg y MeHg en el pescado consumido en España, las ingestas
estimadas y las evaluaciones de exposición al Hg en la población española, en especial entre los consumidores
pertenecientes a los grupos de riesgo, no recomiendan aumentar los lÃmites máximos de Hg
establecidos por la Unión Europea (UE, 2006) para los pescados.In sh and shell sh, mercury (Hg) is mostly found in the form of methyl mercury (MeHg), its most toxic
form. The highest contents are present in predators. The FAO/WHO (2003) has provisionally established
a tolerable weekly intake (PTWI) for MeHg of 1.6 g/kg of bodyweight.
Women of child-bearing age, during pregnancy or breastfeeding, and children are the most vulnerable
groups. In view of the impossibility of establishing stricter Hg contents in sh, the European Commission
(2008) has urged Member States to draft recommendations in order to protect these groups.
Thus, attempts have been made to estimate the portion sizes and consumption frequencies that would
provide intakes in consumed sh in Spain lower than the PTWI and therefore can be considered as safe.
The available data on Hg and MeHg contents, the estimated intakes and the assessments of exposure
to Hg, particularly among consumers belonging to the risk groups, do not recommend
any increase in the maximum Hg limits established by the European Union (EU, 2006) for fish

La globalización ha contribuido a la introducción de nuevos alimentos en la dieta de los españoles,
entre éstos las algas, capaces de acumular elementos tóxicos entre los que se encuentra el arsénico
(As). Por ello se considera necesario disponer de información sobre los contenidos de As en las algas
que pueden considerarse seguros.
El As es un metaloide con cuatro estados de oxidación lo que da origen a una gran variedad de
compuestos con caracterÃsticas fÃsicas y quÃmicas bien distintas. También difieren en sus propiedades
biológicas y toxicológicas, dependiendo no sólo de su estado de valencia sino también de sus formas,
inorgánicas u orgánicas. Estas últimas poseen el potencial tóxico más bajo, por lo que los efectos
adversos para la salud vendrán determinados fundamentalmente por la fracción inorgánica del As
presente, siendo la toxicidad del As(III) mayor que la del As(V).
La especie quÃmica influye en la absorción, distribución, metabolismo y excreción del As. Las formas
metiladas de As (MMA y DMA) mayoritarias en muchas algas se consideran menos tóxicas, se
fijan menos a los tejidos y se eliminan más rápidamente que las no metiladas. Los compuestos organoarsenicales
se metabolizan en menor grado y se excretan rápidamente.
En relación con la toxicidad del As, la sintomatologÃa de la intoxicación aguda tras exposición por
vÃa oral incluye: diarrea, dolores gastrointestinales tipo cólico, anorexia, pérdida de peso, vómitos graves,
calambres musculares, alteraciones cardÃacas, alteraciones del sistema nervioso central, aumento
de la irritabilidad, exantema y pérdida de pelo. En adultos se observan efectos de este tipo tras
ingerir 3 mg diarios de As durante unas semanas. La exposición crónica origina lesiones en la piel
(dilatación de capilares cutáneos), hipo e hiperpigmentación (enfermedad del pie negro-Blackfoot), alteraciones vasooclusivas y gangrenosas. También neuropatÃas periféricas, encefalopatÃa, alteración del metabolismo del grupo hemo, hepatomegalia, depresión de la médula ósea, diabetes y deterioro
de la función renal (necrosis). La presencia de As en el agua de bebida se ha asociado a efectos adversos
sobre la reproducción. La Agencia Internacional de Investigaciones sobre el Cáncer (IARC) clasifica
al As inorgánico en el grupo I (cancerÃgeno humano).
La FAO/OMS y el Comité de Expertos en Aditivos Alimentarios (JEFCA) establecen la Ingesta
Semanal Tolerable Provisional (PTWI) para As inorgánico en 0,015 mg/kg peso corporal.
La principal fuente de As para la población no expuesta laboralmente la constituyen el agua y los
alimentos. La legislación española establece un contenido máximo de As en aguas de 10 μg/l. Las
ingestas dietéticas de As estimadas en España oscilan entre los 225 y 345 μg/dÃa, y al igual que en
otros paÃses el principal contribuyente son los pescados y mariscos, aunque la mayor parte del As se
encuentra presente en las formas de menor toxicidad, de modo que en alimentos de origen marino
analizados en España, la arsenobetaina (AsB) es el compuesto orgánico encontrado con mayor frecuencia,
seguido de los ácidos dimetilarsÃnico (DMA) y monometilarsónico (MMA).
Los contenidos de As total e inorgánico, en algas comercializadas y analizadas en España se
encuentran comprendidos entre 2,3 y 141 mg/kg peso seco, y entre 0,15 y 88 mg/kg peso seco, respectivamente.
Destaca por su elevado contenido en As total (115 a 141 mg/kg peso seco) y As inorgánico
(83 a 88 mg/kg peso seco) el alga parda Hizikia fusiformis (Harv.) Okam. (hijiki), que se caracteriza
por acumular As inorgánico. En el caso de las algas fucus o fuco (Fucus vesiculosus L.), kombu
(Laminaria spp), wakame (Undaria pinnatÃfida (Har.) Sur.), arame (Eisenia bicyclis (Kjellm.)Stech.) y
nori (nombre aplicado a varias especies de algas, principalmente pertenecientes a los géneros
Porphyra, Monostroma y Enteromorpha), las concentraciones de As inorgánico son muy inferiores, del
orden de 0,15-0,57 mg/kg peso seco.
Los elevados contenidos de As de algunas algas obligan a evaluar el riesgo que supone su ingesta,
para ello se requiere conocer el consumo de algas y el contenido de As. Puesto que el primero se
desconoce, se considera una ingesta diaria de 3 g de algas, estimándose asà que Hizikia fusiformis, el
alga con mayores contenidos de As, puede proporcionar 250 μg de As inorgánico al dÃa, aporte un
67% superior a la ingesta diaria tolerable (150 μg As/dÃa, para un adulto de 70 kg de peso). Y supone
multiplicar por siete la ingesta diaria de As inorgánico de un consumidor español.
Una ingesta repetida de hijiki proporcionarÃa As inorgánico que al sumarse al procedente de otras
fuentes (agua y otros alimentos), llevarÃa a una superación de los intervalos de seguridad admisibles
para el riesgo de toxicidad crónica, por lo que se recomienda evitar su consumo y escoger otras variedades
alternativas.Globalisation contributed to the introduction of novel foods into the Spanish diet, among the seaweed,
able to accumulate toxic elements and among them arsenic (As). It is considered necessary to
obtain information on the As contents in seaweeds that can be considered safe.
Arsenic is a metalloid with four oxidation states, that give rise to a high variety of compounds
having different physical and chemical characteristics. The As species differ also in their biological and
toxicological properties, depending not only of the valence state, but also of the inorganic and organic
forms. The latter have the lowest toxic potential, being therefore the adverse effects determined
mainly by the inorganic As fraction, being As (III) toxicity higher than those of As(V).
Arsenic specie affects the absorption, distribution, metabolism and excretion. As methylated forms
(MMA and DMA), the main forms present in many seaweeds are considered of a lower toxicity, the
binding to tissues is lower and the elimination quicker than those of non-methylated species.
Organoarseniacal compounds are metabolised in a lower extent and rapidly excreted.
Regarding As toxicity, symptomatology of acute intoxication via oral exposition include; diarrhoea, gastrointestinal
colic type pains, anorexia, weight lose, severe vomiting, muscular cramps, heart disorders,
central nervous system disorders, irritability increase, exanthem and hair lose. These symptoms are observed
in adults after a 3 mg As intake per day during several weeks. Chronic exposure causes skin lesions,
hipo and hiperpigmentation (blackfoot disease), vaso-occlusive and gangrenous disorders, peripherical
neuropaties, encephalopathy, alteration of hemo group metabolism, hepathomegalia, bone marrow
depression, diabetes and impairment of renal function (necrosis). The presence of As in drinking water
have been associated to adverse effects on reproductivity. The International Agency for Research of Cancer (IARC) has classified inorganic As in group I (human carcinogen). The FAO/WHO and the Joint Expert
Committee on Food Additives (JECFA) have established a Provisional Tolerable Weekly Intake (PTWI) for
inorganic As in 0.015 mg/kg body weight.
Water and food are the main As source for the non occupationaly exposed population. The maximum
As level in drinking water according to the Spanish law is 10 μg/l. In Spain the estimated As dietary
intakes range from 225 to 345 μg/day, and in a similar way than in other countries the main contributors
are fish and seafood, though the As species are of low toxicity, so in foods from sea analysed
in Spain, arsenobetain (AsB) is the most frequently detected organic compound, followed by
dimethylarsinic (DMA) and monomethylarsonic acids (MMA).
Total and inorganic As contents in seaweed commercialised and analysed in Spain range from
2.3 and 141 mg/dry weigh, and between 0.15 and 88 mg/kg, dry weight, respectively. The brown
seaweed Hizikia fusiformis (hijiki) stands out due to their high contents in total As (115 to 141

wakame, arame and nori inorganic As contents are much lower ranging from 0.15-0.57 mg/kg dry
weight. The high As contents of some seaweed types make necessary the assessment of the risk related to
their intake. To do it requires to know seaweed consumption and their As contents. Taking into
account that the first is unknown, if a daily intake of 3 g of seaweeds is assumed, Hizikia fusiformis
the seaweed having the highest As contents can provide 250 μg inorganic As per day, amount a 67% higher than the PTWI (150 μg As/day, for an adult of a 70 kg weight). This means to multiply by seven
the daily inorganic As intake of a mean Spanish consumer.
A repeated intake of hijiki would provide inorganic As that added to the As coming from other sources
(water and other foods) would lead to surpass the admissible safety intakes for the risk of chronic
toxicity, being therefore advisable to avoid its consumption with the choice of alternative varieties

Effect of storage conditions on furosine formation in milk-cereal based baby foods
[EN] The effect of storage during 9 months at 25, 30 and 37 degrees C on furosine formation in three milk-cereal based baby foods was studied to evaluate development of the Maillard reaction. Furosine was measured by HPLC-UV. Immediately after the manufacturing process, furosine contents were 310-340 mg/100 g protein and at the 9th storage month were 426-603 mg/100 g protein. Storage time and temperature have a significant increase (p < 0.05) of furosine content during storage. Furosine contents were higher in sample containing honey than in those without honey. Interactions (p < 0.05) between storage time and temperature or type of sample were found. A predictive model equation of the evolution of furosine during storage explaining 80% of the variability in furosine content was obtained. The blockage of lysine through storage calculated using the furosine and total lysine provided values ranged from 9.5% to 18.1% for analysed baby foods. (C) 2007 Elsevier Ltd. All rights reserved.L.
