    The Microbiota and Health Promoting Characteristics of the Fermented Beverage Kefir

    peer-reviewedKefir is a complex fermented dairy product created through the symbiotic fermentation of milk by lactic acid bacteria and yeasts contained within an exopolysaccharide and protein complex called a kefir grain. As with other fermented dairy products, kefir has been associated with a range of health benefits such as cholesterol metabolism and angiotensin-converting enzyme (ACE) inhibition, antimicrobial activity, tumor suppression, increased speed of wound healing, and modulation of the immune system including the alleviation of allergy and asthma. These reports have led to increased interest in kefir as a focus of research and as a potential probiotic-containing product. Here, we review those studies with a particular emphasis on the microbial composition and the health benefits of the product, as well as discussing the further development of kefir as an important probiotic product.The authors are funded through the Teagasc Walsh Fellowship Scheme(2014025)and internal Teagasc funding(RMIS6486).     Systoles of Arithmetic Hyperbolic Surfaces and 3-manifolds

    Our main result is that for all sufficiently large x0>0x_0>0, the set of commensurability classes of arithmetic hyperbolic 2- or 3-orbifolds with fixed invariant trace field kk and systole bounded below by x0x_0 has density one within the set of all commensurability classes of arithmetic hyperbolic 2- or 3-orbifolds with invariant trace field kk. The proof relies upon bounds for the absolute logarithmic Weil height of algebraic integers due to Silverman, Brindza and Hajdu, as well as precise estimates for the number of rational quaternion algebras not admitting embeddings of any quadratic field having small discriminant. When the trace field is Q\mathbf{Q}, using work of Granville and Soundararajan, we establish a stronger result that allows our constant lower bound x0x_0 to grow with the area. As an application, we establish a systolic bound for arithmetic hyperbolic surfaces that is related to prior work of Buser-Sarnak and Katz-Schaps-Vishne. Finally, we establish an analogous density result for commensurability classes of arithmetic hyperbolic 3-orbifolds with small area totally geodesic 22-orbifolds.Comment: v4: 17 pages.     STDP in the Developing Sensory Neocortex

    Spike timing-dependent plasticity (STDP) has been proposed as a mechanism for optimizing the tuning of neurons to sensory inputs, a process that underlies the formation of receptive field properties and associative memories. The properties of STDP must adjust during development to enable neurons to optimally tune their selectivity for environmental stimuli, but these changes are poorly understood. Here we review the properties of STDP and how these may change during development in primary sensory cortical layers 2/3 and 4, initial sites for intracortical processing. We provide a primer discussing postnatal developmental changes in synaptic proteins and neuromodulators that are thought to influence STDP induction and expression. We propose that STDP is shaped by, but also modifies, synapses to produce refinements in neuronal responses to sensory inputs

    Robust Positioning in the Presence of Multipath and NLOS GNSS Signals

    GNSS signals can be blocked and reflected by nearby objects, such as buildings, walls, and vehicles. They can also be reflected by the ground and by water. These effects are the dominant source of GNSS positioning errors in dense urban environments, though they can have an impact almost anywhere. Non- line-of-sight (NLOS) reception occurs when the direct path from the transmitter to the receiver is blocked and signals are received only via a reflected path. Multipath interference occurs, as the name suggests, when a signal is received via multiple paths. This can be via the direct path and one or more reflected paths, or it can be via multiple reflected paths. As their error characteristics are different, NLOS and multipath interference typically require different mitigation techniques, though some techniques are applicable to both. Antenna design and advanced receiver signal processing techniques can substantially reduce multipath errors. Unless an antenna array is used, NLOS reception has to be detected using the receiver's ranging and carrier-power-to-noise-density ratio (C/N0) measurements and mitigated within the positioning algorithm. Some NLOS mitigation techniques can also be used to combat severe multipath interference. Multipath interference, but not NLOS reception, can also be mitigated by comparing or combining code and carrier measurements, comparing ranging and C/N0 measurements from signals on different frequencies, and analyzing the time evolution of the ranging and C/N0 measurements

    This paper describes an investigation into the structure of representations of sets of actions, utilizing semigroup theory. The goals of this project are twofold: to shed light on the relationship between tasks and representations, leading to a classification of tasks according to the representations they admit; and to develop techniques for automatically transforming representations so as to improve problem-solving performance. A method is demonstrated for automatically generating serial algorithms for representations whose actions form a finite group. This method is then extended to representations whose actions form a finite inverse semigroup

    DATA MINING: A SEGMENTATION ANALYSIS OF U.S. GROCERY SHOPPERS

    Consumers make choices about where to shop based on their preferences for a shopping environment and experience as well as the selection of products at a particular store. This study illustrates how retail firms and marketing analysts can utilize data mining techniques to better understand customer profiles and behavior. Among the key areas where data mining can produce new knowledge is the segmentation of customer data bases according to demographics, buying patterns, geographics, attitudes, and other variables. This paper builds profiles of grocery shoppers based on their preferences for 33 retail grocery store characteristics. The data are from a representative, nationwide sample of 900 supermarket shoppers collected in 1999. Six customer profiles are found to exist, including (1) "Time Pressed Meat Eaters", (2) "Back to Nature Shoppers", (3) "Discriminating Leisure Shoppers", (4) "No Nonsense Shoppers", (5) "The One Stop Socialites", and (6) "Middle of the Road Shoppers". Each of the customer profiles is described with respect to the underlying demographics and income. Consumer shopping segments cut across most demographic groups but are somewhat correlated with income. Hierarchical lists of preferences reveal that low price is not among the top five most important store characteristics. Experience and preferences for internet shopping shows that of the 44% who have access to the internet, only 3% had used it to order food.Consumer/Household Economics, Food Consumption/Nutrition/Food Safety,

    Effects of breaking up prolonged sitting following low and high glycaemic index breakfast consumption on glucose and insulin concentrations

    Purpose: Breaking up prolonged sitting can attenuate the postprandial rise in glucose and insulin. Whether such effects are dependent of the glycaemic index (GI) of the consumed carbohydrate is unknown. This study examined the acute effects of breaking up prolonged sitting following a low GI and a high GI breakfast on postprandial glucose and insulin concentrations. Procedures: Fourteen adult males aged 22.1 ± 1.2 years completed four, 4 h experimental conditions: high GI breakfast followed by uninterrupted sitting (HGI-SIT), low GI breakfast followed by uninterrupted sitting (LGI-SIT), high GI breakfast followed by 2 min activity breaks every 20 min (HGI-ACT), and low GI breakfast followed by 2 min activity breaks every 20 min (LGI-ACT). Positive incremental area under the curve (iAUC) for glucose and insulin (mean [95% CI]) for each 4h experimental condition was calculated. Statistical analyses were completed using linear mixed models. Results: The sitting × breakfast GI interaction was not significant for glucose positive iAUC (P=0.119). Glucose positive iAUC (mmol/L4 h−1) was significantly lower in the activity breaks conditions than the uninterrupted sitting conditions (2.07 [2.24, 2.89] vs. 2.56 [1.74, 2.40], respectively, P=0.004) and significantly lower in the low GI conditions than the high GI conditions (2.13 [1.80, 2.45] vs. 2.51 [2.18, 2.84], respectively, P=0.022). Insulin concentrations did not differ between conditions (P ≄ 0.203). Conclusions: Breaking up prolonged sitting and lowering breakfast GI independently reduced postprandial glucose responses. This indicates that interrupting prolonged sitting and reducing dietary GI are beneficial approaches for reducing cardiometabolic disease risk

    CHANGES IN RETAIL FOOD DELIVERY: SIGNALS FOR PRODUCERS, PROCESSORS AND DISTRIBUTORS

    This paper contains two chapters related to changes in retail food delivery and sales. The first discusses trends in consumer demographics and lifestyles and how these continue to drive changes in the way food is prepared and delivered to consumers. Retail stores are responding with new formats: providing more ready to eat foods; more convenient store layouts; lower prices and better service in niche markets across the country. Their demands send signals up the food chain to processors and producers that alter their production and inventory decisions. Electronic information technology speeds these changes and leads to more efficient operation with, allegedly, better service for consumers. The second chapter discusses how advances in information technology affect not only the internal business operations in food firms throughout the food supply chain but also how the product flows and how businesses link their processes together. The reengineering of the food supply chain by way of an industry-wide initiative called "efficient consumer response" (ECR) is explained and analyzed for its motivations and implementation, thus far. The many facets of ECR such as product replenishment and promotion are discussed. Lessons learned from ECR include that it is possible to accommodate the coexistence of firms of various sizes and types, and that the role of trade associations in facilitating industry-wide changes is vital and impressive.Agribusiness, Industrial Organization,

    Structural and Functional Studies of GDP-6-Deoxy-Talose and GDP-Rhamnose Biosynthetic Enzymes

    GDP-6-deoxy-D-talose and its 4-epimer GDP-D-rhamnose are unusual sugars found on the cell surface of certain Gram-negative bacteria. GDP-6-deoxy-talose and GDP-rhamnose are produced by enzymes called GTS and RMD, respectively. These sugars are produced from the same common intermediate and are 4\u27-epimers of each other, which provides an interesting paradigm to study the stereo-selective reduction of unusual sugars. We have determined a novel X-ray crystallographic structure of RMD from Pseudomonas aeruginosa that contains its cosubstrate NADPH within the active site. A superposition of our RMD structure with a previously-determined one gives clear insight into the mechanism of hydride transfer from the cofactor during catalysis. We also report progress toward the structural analysis of GTS and functional analyses of both enzymes. Characterization of GTS and RMD will allow for an understanding of how bacteria utilize these sugars and may give insight into the pathogenicity of certain Gram-negative bacteria. Furthermore, an understanding of the production of unusual sugars can allow for the derivitization of existing antibiotics in an effort to combat bacterial resistance via a process called glycodiversification
