Biochemical composition and quality of herring preserves with addition of bio-protective cultures

Herrings rich in vitamins B12, A, D, minerals, including calcium, potassium, magnesium, iodine, possess high levels of lysine, tyrosine, phenylalanine and tryptophan, as well as omega-3 unsaturated fatty acids, namely eicosapentanoic, docosahexoenoic and docosapentoenoic. To suppress the microbiological spoilage of fish preserves, it is promising to use bio-protective cultures that have minimal impact on the production process and product properties. Bacterial strains are able to exert a static effect on the microflora, which causes biodeterioration of food products. Microorganisms as part of bio-protective cultures are included in the fermentation process, so they can be attributed to ordinary food ingredients, so there is no need to put separate information on the packaging. The chemical composition of the frozen Atlantic and Pacific herring fillet, the amino acid composition of proteins, and the fatty acid composition of lipids were studied. The difference between Atlantic and Pacific herrings was detected, which consists in a significantly higher content of docosahexaenoic acid. The difference in the fractional composition of triacylglycerols for the Atlantic and Pacific herring was established. The microflora of SafePro B-2 biological product (Chr. Hansen GmbH), containing multiple strains of Lactobacillus sakei, and the viability of the culture in preserves fillings were studied. The experimental development of canned food with SafePro B-2 additives was carried out. Microbiological, organoleptic and biochemical indicators of the preserves quality during cold storage were studied. Influence of Radiation and Convective Types of Heat Exchange on the Necessary Duration of Temperature Measurement by Thermocouples

Results of research of influence of radiation heat exchange on duration of execution of measurement high temperatures are given by thermocouples, influence of the free convection on results of temperature measurement is also considered by the thermocouples set in protective sleeves with a gap. Researches showed that radiation heat exchange leads to lowering of duration of heating of the thermocouple to 30% whereas the free convection in a protective sleeve practically doesn't exert impact on process of heating up of the sensor

Experimental Research of Influence of a Relative Particles Positioning in a Gas Stream on Characteristics of their Aerodynamic Traces

The cycle of experimental studies on determination of length of aerodynamic traces of the particles which are flowed round by an air stream is executed. When carrying out researches, panoramic optical methods for diagnostics of multiphase flows of PIV and PTV were used. Velocities of an air flow were varied in the range of 1-3 m/s. The sizes of particles changed from 1mm to 5 mm. The defining influence of the sizes of particles and velocities of an air stream on length of aerodynamic traces is established. Introduction. The relevance of the problem of humanizing the continuity of the social reorganization of modern society on the basis of the idea of recreating the USSR in students' mind is due to rapid changes in the political climate and many challenges of our time that require prompt and immediate solutions. Theoretical analysis. The purpose of the article is to reveal the process of updating the worldview of students on the basis of humanistic identification in the process of interaction of the social progress and regression. Destructive factors of development and radical and palliative mechanisms of successive identification are highlighted. The lines of social progress are analyzed on the basis of the identification methodology. Empirical analysis made it possible to confirm the theoretical provisions obtained during the survey. Conclusion. Multicultural orientation of vocational education requires humanization of the principles of social reorganization of modern Russia. This process can be used most effectively through the reconstruction of the USSR image in the views of students in modern forms and establishment of a successive connection with the past. At the same time, the development of social progress is carried out in the space of a new freedom, the restriction of which is a mechanism for the revival of accountability in the course of a return to genuine historical memory and modernization of society

On the conflict of public opinion: Interpretation of literary classics

Work is devoted to a question of reading literary classics and forms of its actual assessment in the modern public environment - both scientific and specialized, and connected with wide reader's audience. The Russian classical literature became object of consideration. Authors of article believe that in the Russian Post-Soviet society two tendencies determining nature of the attitude towards verbal art heritage of the past were shown. On one hand, inertia of former achievements has left, and the Russian public in general has stopped reading actively. On the other -in case of some improvement of living conditions the obvious social trend to being interested inbook and journal products was found. The classics on this background takes very modest place. However a noticeable factor of strengthening attention to it is attempt of its poly-variable interpretation today (scientific and creative, figurative). Exactly here the conflict gaining lines of public and ideological opposition between "conservatives" and "liberals" lies. The first take a guarding cultural position. Classics for them - is a form of preserving national memory, the life-meaning reference points, mental code, expression of world outlook and style harmony. The second perceive the classical text as the field for semantic experiments, bright innovations, verification of the next methodological programs. "Conservatives" reproach "liberals" with a "deconstructive" partition of classical, with withdrawal from its live, organic element, with substituting it by dead, mechanical beginning. "Liberals", in turn, blame "conservatives" of stagnancy, desire to refuse poly-cultural approach and establish the only correct, monistic view. It is clear, that the opposite interpretation of classics is only part of the general ideological conflict, even more precisely - that dialectic fight which can be designated as collision "old" vs. "new" (we use these terms without any estimation, in neutral sense). The truth, most likely, lies in the middle, as in the antique tragedy, each of the parties conducting dispute of right and wrong at the same time. From this it follows that the method of overcoming difficult situation is in that clashing friend's friend gossip, having shown the best psychological properties. Otherwise the classics will be replaced by one-sided ideological interpretation (irrespective of origin sources), and instead of authentic interest in the past in society there will be a feeling of discharge and fatigue

The attitude of women in Russia to the prevention of breast cancer and ovarian cancer: Results of a sociological survey.

Breast cancer and ovarian cancer are among the most common causes of death for women in Russia. It has been found that women with BRCA1 and BRCA2 gene mutations are at high risk of developing breast cancer and ovarian cancer, so it is relevant to determine the nature of BRCA genes in the human genome for the prevention of cancer. The article presents the results of a sociological survey of women of the Republic of Tatarstan (Russia) to determine the level of their awareness of the risks of cancer development, the demand for carrying out the genetic tests to identify the predisposition to the breast cancer and ovarian cancer, and the motives of acceptance or rejection of the existing methods of diagnosis and prevention of oncological diseases. The method of collecting the empirical data was the semi-formalized interviews. The analysis revealed the need and demand for targeted integrated measures aimed at promoting the healthy lifestyle, at informing about the methods of precaution, treatment, and prevention of oncological diseases
