    Jidysz – angielski – polski. Problemy przekładu i pamięci

    The article presents selected translations of Yiddish literature into English, focusing on the influence of translator’s choices on forming the topography and realities of life in Poland before the Second World War. Elements related to material culture and multilingual quality of represented world are often eliminated or simplified. One of the main problems for translators, who usually do not know Polish, are Polish words and expressions, which are frequent in Yiddish literature written by authors of Polish extraction. Additional problems occur when Polish is used as intermediary between Yiddish and Polish. A reader who knows Eastern European realities receives an image of reality, which has been purposefully modified to facilitate reception in America, so that represented reality turns out to be more alien and exotic than in direct translation from Yiddish into Polish. This phenomenon occurs not only in fiction, but also in documentary texts, e.g. in the memorial books, which have been popular in Poland recently, and which are often translated from English intermediary texts. All this leads to important discrepancies and tensions between reality as it is imagined, remembered, and documented.     Microbiological Quality of Nuts, Dried and Candied Fruits, Including the Prevalence of Cronobacter spp.

    Cronobacter genus bacteria are food-borne pathogens. Foods contaminated with Cronobacter spp. may pose a risk to infants or immunocompromised adults. The aim of this study was to determine the microbiological quality of nuts, seeds and dried fruits with special emphasis on the occurrence of Cronobacter spp. Analyses were carried out on 64 samples of commercial nuts (20 samples), dried fruits (24), candied fruits (8), seeds (4), and mixes of seeds, dried fruits and nuts (8). The samples were tested for the total plate count of bacteria (TPC), counts of yeasts and molds, and the occurrence of Cronobacter spp. Cronobacter isolates were identified and differentiated by PCR-RFLP (Polymerase Chain Reaction - Restriction Fragments Length Polymorphism) and RAPD-PCR (Random Amplified Polymorphic DNA by PCR) analysis. TPC, and yeasts and molds were not detected in 0.1 g of 23.4%, 89.1%, and 32.8% of the analyzed samples. In the remaining samples, TPC were in the range of 1.2–5.3 log CFU g−1. The presence/absence of Cronobacter species was detected in 12 (18.8%) samples of: nuts (10 samples), and mixes (2 samples). The 12 strains of Cronobacter spp. included: C. sakazakii (3 strains), C. malonaticus (5), and C. turicensis (4). The results of this study contribute to the determination of the presence and species identification of Cronobacter spp. in products of plant origin intended for direct consumption

    Contents of Functionally Bioactive Peptides, Free Amino Acids, and Biogenic Amines in Dutch-Type Cheese Models Produced with Different Lactobacilli

    Cheese ripening involves a number of biochemical processes, mainly of a proteolytic nature, which are initially triggered principally by milk-coagulating enzymes and, afterward, by microorganisms or enzymes of microbial origin. The proteolytic reactions affect, primarily, the synthesis of macro- and medium-molecular peptides from casein. In turn, the advanced proteolysis ends in the formation of short peptides and free amino acids. Further reactions may lead to the formation of nutritionally unfavorable biogenic amines. The present study aimed to determine changes in the contents of bioactive peptides (anserine and L-carnosine), free amino acids, and biogenic amines throughout the ripening of cheese models produced with the addition of Lactobacillus genus bacteria. The contents of amino acids varied considerably in the cheese models, depending on the bacterial strain added and ripening time. After five weeks of ripening, the total content of free amino acids in the cheese models ranged from 611.02 (a cheese model with Lactobacillus casei 2639) to 1596.64 mg kg−1 (a cheese model with Lb. acidophilus 2499). After the same time, the contents of the total biogenic amines in the cheese models with the addition of lactobacilli were lower than in the control cheese model (except for the model with Lb. rhamnosus 489). Anserine was detected in all cheese models (79.29–119.02 mg kg−1), whereas no L-carnosine was found over a five-week ripening period in the cheese models with Lb. delbrueckii 490 and Lb. casei 2639. After a five-week ripening, the highest total content of bioactive peptides was determined in the cheese models containing Lb. acidophilus 2499 (136.11 mg kg−1)

    Ocena postaw prozdrowotnych konsumentów nabywających żywność w sklepach specjalistycznych

    The aim of the paper was to assess pro-health attitudes of consumers purchasing food in specialist stores. The type and frequency of food purchase was determined and respondents were classified due to pro-health attitude. The research was conducted using personal interview. A total of 190 interviews were gathered. The results showed that for customers of specialist stores, healthiness of consumed food is significant. They pay attention to its ingredients buying natural products with low content of preservatives, less processed. These consumers are willing to pay more for guaranteed quality products. Three clusters of pro-health attitudes representing: 22, 18 and 60% of surveyed population were distinguished. Cluster 1 was represented mostly by men who do not care about the amount of calories consumed and do not interested in knowledge about healthy eating. This group pay attention on purchased food quality, and they are able to pay more for guaranteed quality products. Whereas cluster 2 focused mainly men with moderate pro-health attitudes, not interested in expanding nutrition knowledge. The most-represented cluster of 3 was predominantly women with strong pro-health attitudes, counting consumed calories, seeking and exploring healthy eating knowledge. / Synopsis. Celem pracy była ocena postaw prozdrowotnych konsumentów nabywających żywność w sklepach specjalistycznych. Określono rodzaj i częstotliwość zakupu żywności oraz dokonano klasyfikacji respondentów ze względu na prezentowane postawy prozdrowotne. Badania zrealizowano metodą pomiaru sondażowego, techniką bezpośrednią. Ogółem przeprowadzono 190 wywiadów. Wyniki badań wskazują, iż dla klientów sklepów specjalistycznych zdrowotność spożywanej żywności ma duże znaczenie. Zwracają uwagę na jej skład kupując produkty naturalne z jak najmniejszą ilością konserwantów, jak najmniej przetworzone. Konsumenci ci są skłonni zapłacić więcej za produkty gwarantowanej jakości. Wyodrębniono trzy skupienia zróżnicowane pod względem postaw prozdrowotnych reprezentujące odpowiednio: 22, 18 i 60% badanej populacji. Skupienie 1 reprezentowane było w większości przez mężczyzn nie dbających o ilość zjadanych kalorii oraz nie zgłębiających wiedzy na temat zdrowego odżywiania, z kolei zwracających uwagę na jakość kupowanej żywności, gotowych zapłacić więcej za produkty gwarantowanej jakości. Natomiast skupienie 2 skupiało głównie mężczyzn o umiarkowanych postawach prozdrowotnych, niezainteresowanych tematyką zdrowego odżywiania. Najliczniej reprezentowane skupienie 3 w przewadze stanowiły kobiety cechujące się silnymi postawami prozdrowotnymi, dbające o ilość spożywanych kalorii, poszukujące i zgłębiające informacje dotyczące zdrowego odżywiania

    Environmental and social aspects of corporate sustainability as perceived by consumers – a case study of clothing brands

    Purpose: Competing for a limited number of socially conscious consumers and the appearance of new generations on the market forces a continuous addition of knowledge concerning pro-environmental and pro-social consumer attitudes and behaviour. Therefore, the present study attempts to: - identify the type of actions taken within the framework of sustainable development by selected clothing brands, - assess the pro-environmental and pro-social attitudes of young consumers purchasing clothing, - determine whether environmental and social aspects are a criterion for clothing choice among young consumers. Design/methodology/approach: Two approaches were used in the research. In the first stage of the research, messages posted on the websites of selected clothing brands were analysed. In the second, a quantitative study was conducted among young consumers (n = 218) by indirect online survey measurement, using a survey questionnaire embedded in a Google form. Findings: Young consumers present positive pro-environmental and pro-social attitudes. According to the respondents, the social commitment of companies influences the positive image and popularity of their products. However, almost half of all consumers presented an ambivalent or negative attitude towards paying more for the purchase of goods whose producers are involved in philanthropic and pro-environmental activities. This suggests that, in the view of this segment of respondents, it is the traders who should take financial responsibility for their actions by not raising the prices of the products they sell. Concern for others by purchasing socially committed brands and the environmental friendliness of the product were shown to rank lower in the hierarchy of clothing choice factors. Research limitations: The research was conducted on a narrow subject basis, so the results obtained cannot be generalised to the young consumer segment. The scope of the presented research is also limited. The results of the research should be regarded as a pilot study. Practical implications: The findings are of relevance to managers in charge of sustainability campaigns for clothing brands. They point to the need for further education aimed at shaping altruistic and pro-environmental attitudes.
