    La prevalencia de parasitos intestinales entre los manipuladores de alimentos en el oeste de Iran

    Parasitic infection is one of the problems that affect human health, especially in developing countries. In this study, all of the fast food shops, restaurants, and roast meat outlets of Khorramabad (Western Iran) and all the staff employed by them, some 210 people, were selected through a census and their stools were examined for the presence of parasites. The parasitological tests of direct wet-mount, Lugol's iodine staining, formaldehyde-ether sedimentation and Trichrome staining techniques were performed on the samples. The data was analyzed with a chi-square test and logistic regression was selected as the analytical model. The results showed 19 (9%) stool specimens were positive for different intestinal parasites. These intestinal parasites included Giardia lamblia 2.9%, Entamoeba coli 4.3%, Blastocystis sp. 1.4%, and Hymenolepis nana 0.5%. There was a significant difference between the presence of a valid health card, awareness of transmission of intestinal parasites, participation in training courses in environmental health with intestinal parasites (p ; 0.05). To control parasitic infection in food handlers, several strategies are recommended such as stool examinations every three months, public education, application of health regulations, controlling the validity of health cards and training on parasitic infection transmission. In this regard, the findings of the present study can be used as a basis to develop preventive programs targeting food handlers because the spread of disease via them is a common problem worldwide.Infección parasitaria es uno de los problemas de salud humana, especialmente en los países en desarrollo. En este estudio, todas las tiendas de comida rápida, restaurantes, y tiendas de carne asada en Khorramabad (oeste de Irán) y todo el personal que trabaja en ellos, incluyendo 210 personas fueron seleccionadas a través de los censos y las heces fueron examinadas para detectar la presencia de parásitos. La prueba parasitológica directa de mojado de montaje, la tinción de Lugol's yodo, sedimentación formaldehído-éter y tricrómicas técnicas de tinción se realizaron sobre las muestras. Los datos fueron analizados con la prueba de chi-cuadrado y regresión logística seleccionado como el modelo analítico. Los resultados mostraron 19 (9%) muestras de heces fueron positivos para diferentes parásitos intestinales. Los parásitos intestinales incluyen Giardia lamblia 2.9%, Entamoeba coli 4.3%, Blastocystis sp. 1.4%, Hymenolepis nana 0.5%. Hubo diferencia significativa entre la presencia de la tarjeta sanitaria válida, el conocimiento de la transmisión de los parásitos intestinales, la participación en cursos de formación en materia de salud ambiental con parásitos intestinales (p ; 0.05). Para controlar la infección parasitaria en los manipuladores de alimentos se recomiendan varias estrategias, tales como examen de heces cada tres meses, la educación pública, se aplican las normas sanitarias, el control de validez de la tarjeta sanitaria y la transmisión formación infección parasitaria. En este sentido, los resultados del presente estudio se pueden utilizar como una base para desarrollar programas de prevención dirigidos a los manipuladores de alimentos debido a la propagación de enfermedades a través de ellos es un problema común en todo el mundo

    Prenatal and clinical characteristics of pregnant women infected with COVID-19 in Yazd, Iran: A multicenter cross-sectional study

    Background: Coronavirus infection has caused widespread concern among mothers and physicians about the health of pregnant women and infants. Objective: The aim of this study was to evaluate the clinical and prenatal findings of pregnant women with coronavirus disease-2019 (COVID-19) virus. Materials and Methods: The present study was a descriptive study that was conducted in 6 mother and child care centers. In this study, 81 pregnant women with COVID-19 admitted to centers in the period from March 2020-September 2020 were studied. Clinical and prenatal findings of the pregnant mothers were recorded using a data collection form with details of demographic characteristics and these were analyzed. Results: The gestational age of the affected women was between 4 and 40 wk. 48 deliveries were performed and 25% of deliveries were preterm. Coronavirus infection was the cause of termination of pregnancy in 4 cases. The most common symptoms of women when visiting the medical centers were: dry cough (58.0%), muscle pain and myalgia (56.8%) and fever (51.9%). The most common laboratory findings in the women were: increased C-reactive protein (67.90%), lymphopenia (18.51%), decreased white blood cells (27.16%), and increased liver enzymes (18.51%). Regarding the status of the newborns, out of the 33 neonates examined, 3 neonates were diagnosed with COVID-19. Conclusion: The most common symptoms of pregnant women with COVID-19 are similar to those of other adults. In relation to neonatal infection, given that a number of the neonates tested positive, there appears to be evidence of vertical transmission, which requires further investigation.     Effect of Olive Leaf Extract on Cytokines Secreted by Macrophage

    Background: Herbal medicines in compared with chemical drugs have fewer side effects and can be a good medicinal alternative. The olive includes 20 different species of the family Oleaceae, with Olea europaea as the most recognized. Several studies have shown the immunomodulating effects of olive leaf extract. This study aimed to identify the immunoregulatory effect of olive leaf Sevillana variety on interleukins 12 and 10 which resulted from the murine macrophages in vitro.Materials and Methods: In order to isolate macrophages, peritoneal macrophages BALB/C were used. To determine the cytotoxic effect of different concentrations of the olive leaf extract on macrophages, MTT assay was performed. Concentrations of 200, 100, 50, 25, 12.5, 6.25, and 3.1μg/ml in the time intervals of 12, 24, and 48 hours were evaluated. Three appropriate concentrations were selected to commence with the study of the determination of the amount of cytokines. Cell culture supernatant growth medium supernatant was collected at 12, 24, and 48 hours after adding the extract in order to examine the amount of cytokines. ELISA test was conducted using interleukins 12 and 10 measurement kits.Results: CC50 of the olive leaf extract at 12, 24, and 48 hours was 260.3, 170.5, and 150 μg/ml, respectively. According to the results, an increase in the concentration and duration of the study resulted in observable significant differences in the production of interleukins 10 and 12. As a result, the production of IL-10 and 12 experienced decreases and increases, respectively.Conclusion: It seemed probable that the olive leaf extract had the capability to increase the production of IL-12 through activation of the classic macrophages and also deactivate the regulatory macrophages with an increase in IL-12 and a decrease in IL-10. Therefore, this can strengthen the immune system of the host in the early stages of infection. The other immunomodulatory effects of olive leaf must be considered by appropriate research

    Abstract Developing nature‐derived surface‐active ingredients with favorable interfacial and functional properties has recently received increasing attention in the food and pharmaceutical industries. Legume proteins are used extensively in food colloidal systems because of their small particle size, high water absorption capability, excellent functional properties (e.g., emulsification, foamability, and gelation), and film formation. There are some limitations in legume proteins, such as high water vapor permeability and fragility, as well as low stability and solubility. Various conventional and innovative processing technologies (e.g., high‐pressure homogenization, ultrasonication, and cold plasma processing) have been successfully employed in order to modify the functional and interfacial properties of legume proteins.     Effects of Mung Bean (<i>Vigna radiata</i>) Protein Isolate on Rheological, Textural, and Structural Properties of Native Corn Starch

    It is critical to understand the starch–protein interactions in food systems to obtain products with desired functional properties. This study aimed to investigate the influence of mung bean protein isolate (MBPI) on the rheological, textural, and structural properties of native corn starch (NCS) and their possible interactions during gelatinization. The dynamic rheological measurements showed a decrease in the storage modulus (G’) and loss modulus (G”) and an increase in the loss factor (tan δ), by adding MBPI to NCS gels. In addition, the textural properties represented a reduction in firmness after the addition of MBPI. The Scanning electron microscope (SEM) images of the freeze-dried NCS/MBPI gels confirmed that the NCS gel became softer by incorporating the MBPI. Moreover, X-ray diffraction (XRD) patterns showed a peak at 17.4°, and the relative crystallinity decreased with increasing MBPI concentrations. The turbidity determination after 120 h refrigerated storage showed that the addition of MBPI could reduce the retrogradation of NCS gels by interacting with leached amylose. Additionally, the syneresis of NCS/MBPI gels decreased at 14 days of refrigerated storage from 60.53 to 47.87%

    Physicochemical, Pasting, and Thermal Properties of Native Corn Starch&ndash;Mung Bean Protein Isolate Composites

    Starch is widely used in food and non-food industries because of its unique characteristics. However, native starch shows some weaknesses that restrict its applications. Recently, some studies have demonstrated the benefits of using protein to overcome these limitations. Therefore, the aim of the present study was to investigate the effect of mung bean protein isolate (MBPI) (2%, 4%, 6%, and 8%) on the physicochemical, pasting, and thermal properties of native corn starch (NCS), as a novel starch&ndash;protein composite. Higher swelling power (SP), water absorbance capacity (WAC), and solubility values of NCS were observed with increasing MBPI concentration. Additionally, by the addition of MBPI, the rapid visco analyzer (RVA) showed a reduction in pasting temperature (77.98 to 76.53 &deg;C), final viscosity (5762 to 4875 cP), and setback (3063 to 2400 cP), while the peak viscosity (4691 to 5648 cP) and breakdown (1992 to 3173 cP) increased. The thermal properties of NCS/MBPI gels investigated by differential scanning calorimetry (DSC) showed higher onset, peak, and conclusion temperatures (69.69 to 72.21 &deg;C, 73.45 to 76.72 &deg;C, and 77.75 to 82.26 &deg;C, respectively), but lower gelatinization enthalpy (10.85 to 8.79 J/g) by increasing MBPI concentration. Fourier transform infrared spectroscopy (FT-IR) indicated that the addition of MBPI decreased the amount of hydrogen bonds within starch. Furthermore, after three cycles of freeze-thaw shocks, the syneresis of NCS-MBPI composites decreased from 38.18 to 22.01%. These results indicated that the MBPI could improve the physicochemical properties of NCS, especially its syneresis and retrogradation characteristics

    Quality of public hospitals websites: a cross-sectional analytical study in Iran

    Introduction: Nowadays, hospitals have turned increasingly towards the Internet and develop their own web presence. Hospital Websites could be operating as effective web resources of information and interactive communication mediums to enhance hospital services to the public. Aim: Therefore, the aim of this study was to assess the quality of websites in Tehran's public hospitals. Material and methods: This cross-sectional analysis involved all public hospitals in Iran's capital city, Tehran, with a working website or subsites between April and June, 2014 (N=59). The websites were evaluated using three validated instruments: A localized checklist, Google page rank, and the Alexa traffic ranking. The mentioned checklist consisted of 112 items divided into five sections: Technical characteristics, hospital information and facilities, medical services, interactive on-line services and external activities. Data were analyzed using descriptive and analytical statistics. Results: The mean website evaluation score was 45.7 out of 224 for selected public hospitals. All the studied websites were in the weak category based on the earned quality scores. There was no statistically significant association between the website evaluation score with Google page rank (P=0.092), Alexa global traffic rank and Alexa traffic rank in Iran (P > 0.05). The hospital websites had a lower quality score in the interactive online services and external activities criteria in comparing to other criteria. Due to the low quality level of the studied websites and the importance of hospital portals in providing information and services on the Internet, the authorities should do precise planning for the appreciable improvement in the quality of hospital websites
