    FARELO DO MESOCARPO DE BABAÇU NA TERMINAÇÃO DE TOURINHOS: CARACTERÍSTICAS DA CARCAÇA E CORTES SECUNDÁRIOS DO TRASEIRO ESPECIAL

    We evaluated carcass characteristics, weight and percentage of prepared commercial cuts of the primal pistol cut (PC) of 30 young crossbred bulls fed diets which included replacement levels (0, 25, 50, 70 and 100% of the dry matter, DM) of corn by babassu mesocarp bran (BMB). The experiment was a completely randomized design with six replicates. Slaughter weight was not affected by treatments. Hot and cold carcass weights decreased linearly (P<.05) at 230 g and 250 g, respectively, for each 1 kg of replacement, and hot carcass yield (HC) decreased by 3.2 g/kg of HC for each 1 kg of DM of BMB in the diet (P<0.05). Subcutaneous fat thickness presented a quadratic (P<.05) response with maximum point estimated by the regression equation of 4.29 mm with 33.3% substitution. The proportion of PC of the carcass increased linearly as levels of BMB in the diet increased (P<.05). The percentage of side cut showed a quadratic response (P<.05), with maximum point estimated with 33.3% substitution. The weight of the prepared commercial cuts of the PC, striploin, knuckle and eye round, and the percentage of tenderloin, topside and shank, were influenced by the diet (P<0.05). There was no change in prepared meat cuts yields of PC (73.22%) (P<.05). The use of babassu mesocarp bran to replace corn in cattle finishing diets does not affect the weight and meat yield of the pistol cut, but decreases linearly hot carcass weight, and subcutaneous fat thickness at replacement levels above 33.3%

    Antioxidant potential of Psidium guinnensis Sw. jam during storage

    The araçá (Brazilian guava) jam is a promising alternative for expanding the consumption of this fruit, besides adding value to it and making the Brazilian Savannah fruits known. Therefore, this research aimed to study the physical and chemical characteristics of the araçá jam, as well as to evaluate the presence and behavior of antioxidant compounds and color, during 12 months of storage. The results obtained for centesimal composition, sugars, fibers, pectin, and consistency showed that the use of araçá was suitable for the jam production, and that the product remained within the standards established by the Brazilian legislation. The total acidity, phenolic compounds, color parameters, and organic acids contents decreased during storage, while the pH and antioxidant potential increased, during one year of storage. Thus, it was possible to conclude that the araçá jam is a product with good nutritional characteristics, presenting good levels of antioxidant compounds, during storage, and meeting the demands of the modern consumer, i.e. practicality and healthiness

    Sensory profile of warmed-over flavour in tenderloin from steers supplemented with alpha-tocopherol

    The objective of the present study was to evaluate the occurrence of warmed-over flavour (WOF) in cooked tenderloin and the influence of alpha-tocopherol on its inhibition. A total of 24 animals were confined, 12 of which received 1200 mg/head/day of alpha-tocopherol acetate for 90 days. Longissimus dorsi muscle cuts (tenderloin) were obtained for sensory profile assessment by nine trained tasters. The tasters evaluated the taste of the meat based on four general and 18 specific attributes. The results of the evaluations were analysed with ANOVA, post-hoc tests of the means (Tukey tests), and principal component analysis (PCA). There was no significant difference in the WOF between the cuts of meat from the supplemented and non-supplemented animals. However, as the refrigeration period increased, there was a decrease in the intensity of the umami and sweet taste attributes and the flavour and aroma of the roast meat as well as an increase in the intensity of the oxidised vegetable oil flavour and the aromas of fish, hard-boiled egg, flaxseed oil, and oxidised vegetable oil. The samples that had been stored for one day were characterised by PCA as having sweet and umami tastes and the flavour and aroma of roast meat, whereas after three days, the samples were classified as having sour and bitter tastes, the flavour of chicken and nuts, and the aroma of fish. The typical sensory attributes desirable for roasted meat decreased in intensity during the three days of storage after cooking, whereas the intensity of unpleasant (oxidative) attributes for the consumer increased.1915192

    Fatty acid profile of meat from European and Zebu bulls fed with pearl millet

    O objetivo deste trabalho foi avaliar o perfil de ácidos graxos da carne de novilhos mestiços alimentados, em confinamento, com dietas contendo níveis crescentes de grão de milheto moído em substituição ao grão de milho moído. Foram utilizados 24 tourinhos mestiços europeus e 24 mestiços zebuínos, abatidos aos 24 meses de idade, após 96 dias de confinamento. Utilizou-se o delineamento experimental inteiramente casualizado, com os tratamentos em arranjo fatorial 4x2 (quatro dietas com 0, 33, 66 e 100% de milheto no concetrado e dois grupos genéticos) com seis repetições. O aumento dos níveis de grão de milheto na dieta elevou linearmente a participação dos ácidos graxos, araquídico (C20:0), heneicosanoico (C21:0), α‑linolênico (C18:3 n‑3) e dihomo‑γ‑linolênico (C20:3 n‑6). Tourinhos europeus apresentaram carne com menor teor dos ácidos graxos, mirístico (C14:0), heneicosanoico (C21:0) e γ‑linolênico (C18:3 n‑6) do que tourinhos zebuínos. A concentração total de ácidos graxos saturados (45,2%), monoinsaturados (41,2%) e poli‑insaturados (8,7%), e a relação monoinsaturados/saturados (1,09) e poli‑insaturados/saturados (0,18) não foi alterada pelos grupos genéticos e pelas dietas. O aumento da percentagem de grão de milheto na dieta de tourinhos europeus ou zebuínos melhora a relação entre os ácidos graxos ω‑6/ω‑3.The objective of this work was to evaluate the fatty acid profile of crossbreed steers, in confinement, fed with diets containing increasing levels of ground millet grain in replacement to ground corn grain. Twenty‑four European crossbred bulls and 24 Zebu crossbred bulls, slaughtered at 24 months of age, after 96 days in confinement, were used. The experimental design was completely randomized with treatments in a 4x2 factorial arrangement (four diets with 0, 33, 66, and 100% of pearl millet in the concentrate and two genetic groups) with six replicates. The increase in the levels of pearl millet grain in the diet increased linearly the participation of the arachidic (C20:0), heneicosanoic (C21:0), α‑linolenic (C18:3 n‑3), and dihomo‑γ‑linolenic (C20:3 n‑6) fatty acids. European bulls showed meat with lower content of myristic (C14:0), heneicosanoic (C21:0), and γ‑linolenic (C18:3 n‑6) fatty acids than the Zebu bulls. The total concentration of saturated (45.2%), monounsaturated (41.2%), and polyunsaturated (8.7%) fatty acids, and the monounsaturated/saturated (1.09) and polyunsaturated/saturated (0.18) ratio were not affected by the genetic groups and diets. The increase in the percentage of millet grain in the diet of European and Zebu bulls improves the ratio between ω‑6/ω‑3 fatty acids

    Effect of whey storage on physicochemical properties, microstructure and texture profile of ricotta cheese

    The aim of this study is to evaluate the effect of whey storage period (0, 24, 48 and 72 h) on the physicochemical parameters, color, texture and microstructure of fresh ricotta during storage. Sweet whey and acid whey were evaluated based on titratable acidity, pH, fat, cryoscopy, and density, while ricotta was based on yield, fat, protein, ash, acidity, pH, moisture, total solids, color, texture, and microstructure. This was done with analysis of variance in a completely randomized design using Tukey test at 5% probability. Whey pH values increased with storage time. Ricotta made with stored whey had average yield of 5.33%, with decreased fat content and pH, and increased acidity. There were subtle differences in color and texture of ricotta during storage; its hardness and gumminess decreased, resulting in microstructure compression. It is concluded that the production of ricotta with whey stored for up to 72 h makes the product appropriate for consumption.Key words: Byproduct, fat, fresh cheese, ricotta, whey cheese, organoleptic properties

    Fatty acids profile and anti-nutritional factors of raw and roasted Caryocar brasiliense almonds

    Caryocar brasiliense Camb. is one of the most abundant fruits in the Brazilian Savannah. Its pulp is highly appreciated in the regional cuisine, but its almond (also edible) is little used. The consumption of raw almond can cause digestive problems, due to the possible presence of anti-nutritional factors, as well as roasting can nutritionally change it. This study aimed at evaluating the centesimal composition, fatty acids profile and anti-nutritional factors, in raw and roasted (at 270ºC, for 15 minutes) Caryocar brasiliense almonds from the Goiás State, Brazil, submitted to analyses of centesimal composition (moisture, proteins, lipids, ashes, carbohydrates and energy value), fatty acids profile and anti-nutritional factors (trypsin, tannin and phytate inhibitors). The centesimal composition and anti-nutritional factors, respectively for raw and roasted almonds, showed the following values: moisture: 25.40% and 1.70%; ashes: 3.90% and 4.60%; proteins: 13.40% and 14.70%; lipids: 24.70% and 25.70%; carbohydrates: 32.50% and 53.30%; and energy value: 406.20 kcal/100 g and 503.00 kcal/100 g, with absence of trypsin inhibitors and tannins with 1.21% and 1.17% and phytates with 2.64% and 1.86%. In the fatty acids profile, respectively for raw and roasted almonds, 86.90% and 84.61% of saturated acids and 10.57% and 10.40% of unsaturated acids were observed. The roasting of almonds did not significantly affect (p > 0.05) only the protein, thus interfering both in the nutritional and anti-nutritional characteristics

    PERFIL SENSORIAL E TESTE DE CONSUMIDOR DE BISCOITO RECHEADO SABOR CHOCOLATE

    O objetivo deste trabalho foi construir o perfil sensorial de três marcas comerciais de biscoito recheado sabor chocolate, líderes no mercado consumidor. Empregou-se a análise descritiva quantitativa (ADQ) para avaliar os atributos sensoriais dos produtos e aplicou-se teste de consumidor para verificar quais atributos determinam sua aceitação e preferência junto ao mercado. Concluiu-se que as amostras que competem no mercado são muito distintas em suas características sensoriais. O biscoito que apresentou melhor aceitação pelos consumidores evidenciou que atributos como aroma e sabor de cacau, crocância, baixa arenosidade do recheio, boa dissolução e pouca resistência à mordida são características bastante importantes para a determinação da preferência no mercado. SENSORIAL PROFILE AND STUFFED COOKIES WITH CHOCOLATE FLAVOR CONSUMER TEST Abstract The objective of this work was to construct sensory profiles of three commercial brands of stuffed cookies with chocolate flavor, leaders in the consumer market. Quantitative Descriptive Analysis (QDA) was employed to evaluate the sensorial attributes of products and consumer test to verify which attributes determines its acceptation and preference in the market. It was concluded that the samples, which compete in the market, are sensorially very different. The cookie that presented better acceptance by consumers evidenced that the attributes as aroma and cacao flavor, crunchiness, low sandiness of stuffing, good dissolution and low bite resistance, are very important characteristics for the market preference
