    Field measurements and statistical analysis of perforated grating surfaces for grating fresh cassava into mash in Ghana

    Processing of cassava into mash requires grating of fresh cassava tubers through the abrasive action of the grating surfaces of cassava graters that grind against the cassava and transforms it into mash. Over the years, improved cassava graters have been designed and made available on the market. In spite of improvements in design, there are no standards for the manufacture of grating surfaces and this affects interchangeability of the product. Mechanised grating of fresh cassava into mash contributes to reduce postharvest losses of cassava, increase its shelf life and improve food security. However, majority of the cassava grating surfaces are poorly made with substandard measurements that affect the desired particle size of mash for gari, a staple food for millions of people in West Africa. This study assessed cassava grating surfaces focusing on the abrasive elements (tooth diameter and inter-tooth spacing). Qualitative data were gathered from local metal fabricators and female gari processors in separate focus group discussions. The purpose was to gather the narratives underlying the issues being studied so as to complement and enrich the quantitative data. 112 tooth diameters and 112 inter-tooth spacing of perforated cassava grating surfaces were randomly measured in 16 different study areas in 3 regions of Ghana, namely Western, Central and Ashanti. Results from the qualitative data showed that grating of cassava was done repeatedly (about 2-3 times) before reaching the desired particle size of mash for gari. Most customers desire grating surfaces that ensure effective contact between the cassava and the metal grating surface to reduce grating time. Results from the field measurements showed high variation in existing tooth diameters (min=1.80, max=4.50 mm) and inter-tooth spacings (min=3.50, max=12.00 mm) that resulted in non-uniform particle size of cassava mash. Using statistical analysis, tooth diameters (min=3.18, max=3.42mm) and inter-tooth spacings (min=7.12, max=7.78mm) were determined at 95% confidence interval. For practical purposes, tooth diameter of 3 mm and inter-tooth spacing of 8 mm are recommended. The availability of such data will contribute significantly to standardise perforated cassava grating surfaces to achieve product interchangeability and desired quality of grated mash for gari. This will contribute to improve the manufacture of cassava graters and sustainable gari processing business in Ghana and Africa.Keywords: Fresh cassava, cassava grating surface, gari, food quality, Ghan

    Perceptions of the use of indigenous leaves as packaging materials in the ready-to-eat cornmeals

    Although alternative food packaging materials are available, Ghanaians still use leaves to package some ready-to-eat cornmeal products. This study examines the perceptions of a representative community sample of 70 producers, 40 sellers and 120 consumers of ready-to-eat leaves-packaged cornmeal products in Kumasi using questionnaires. Fante Kenkey (packaged in dried leaves of either musa paradisiaca or sterculia tragacanta) and Ga kenkey (packaged in dried sheaths of zea mays) are the most preferred products, accounting together for 80% of all leaves-packaged cornmeals processed by producers, for 76% of products offered by sellers and for 96% of products purchased by consumers. Reasons producers cited for the continued utilization of leaves as packaging materials include medicinal via the infusion of the cornmeal with beneficial phytonutrients that also imparts distinctive aroma and taste (61%), environmental friendliness (17%), availability (4%), relatively low cost (4%), lack of toxicity and renewability (14%). Despite consumers concerns of unhygienic (7%), short shelf lives (18%) and loss of moisture leading to hardening of Ga Kenkey (60%), 87% of consumers declined a suggestion for use of alternative packaging materials for ready-to-eat cornmeals.     Evaluation of some basic traits of a promising coconut hybrid: Sri Lankan green dwarf crossed to Vanuatu tall (sgd x vtt)

    The Lethal Yellowing Disease locally referred to as the “Cape St Paul Wilt Disease” is the single most important disease that has devastated several hectares of coconut plantations in Ghana. Two decades of coconut screening for tolerant planting material has identified the Sri LankanGreen Dwarf crossed Vanuatu Tall (SGD x VTT) coconut hybrid as the most promising planting material in the context of disease. To provide farmers with planting material that has high disease tolerance and also good agronomic characteristics, the study compared some basic traits ofthe coconut hybrid with other important coconut varieties with the objective of determining the suitability of the SGD x VTT as alternative planting material to revamp the coconut industry in Ghana. Mean sample size of 25 palms per coconut variety under the study was analyzed using two sample t-test procedure. The study indicated that the yield performance of the SGD x VTT coconut hybrid was better than the tall coconut types including the local West African Tall (WAT) and compared favourably with the Malayan Yellow Dwarf crossed Vanuatu Tall (MYD x VTT) coconut hybrid. The good agronomic characteristics of the SGD x VTT coupled with itshigh resistance to the CSPWD proved its suitability as alternative planting material to revamp the coconut industry in Ghana

    Chemical Characterization and Source Apportionment of Household Fine Particulate Matter in Rural, Peri-urban, and Urban West Africa

    Household air pollution in sub-Saharan Africa and other developing regions is an important cause of disease burden. Little is known about the chemical composition and sources of household air pollution in sub-Saharan Africa, and how they differ between rural and urban homes. We analyzed the chemical composition and sources of fine particles (PM2.5) in household cooking areas of multiple neighborhoods in Accra, Ghana, and in peri-urban (Banjul) and rural (Basse) areas in The Gambia. In Accra, biomass burning accounted for 39–62% of total PM2.5 mass in the cooking area in different neighborhoods; the absolute contributions were 10–45 μg/m3. Road dust and vehicle emissions comprised 12–33% of PM2.5 mass. Solid waste burning was also a significant contributor to household PM2.5 in a low-income neighborhood but not for those living in better-off areas. In Banjul and Basse, biomass burning was the single dominant source of cooking-area PM2.5, accounting for 74–87% of its total mass; the relative and absolute contributions of biomass smoke to PM2.5 mass were larger in households that used firewood than in those using charcoal, reaching as high as 463 μg/m3 in Basse homes that used firewood for cooking. Our findings demonstrate the need for policies that enhance access to cleaner fuels in both rural and urban areas, and for controlling traffic emissions in cities in sub-Saharan Africa

    Multivariate and spatial assessment of water quality of the Lower Pra basin, Ghana

    In this paper, multivariate statistical approaches based on principal component analysis (PCA) coupled with spatial assessment were employed to assess physicochemical parameters (turbidity, pH, electrical conductivity, total dissolved solids, total suspended solids, nitrates, nitrite, phosphate, ammonium, total hardness, total alkalinity, dissolved oxygen, BOD, Na, Cl, Ca, HCO3, SO4 and F) and heavy metals (Cu, Cd, Fe, Mn, Pb, Hg and Zn) of more than fifty five (55) water samples from 20 mining and non-communities within the lower Pra basin. The correlation matrix, however, shows significant inter-metal relationships (p<0.05 and p<0.01). The Fe–Mn correlation is recognized as the weakest with a correlation coefficient r=0.422. Also, significant strong correlations (r>0.5) were found between Zn – Cd, Pb–Zn, Pb – Cd, Pb – Cu, Cu – Zn, Cu – Cd, Hg – Zn, Hg – Cd, Hg - Cu and two more toxic metals, Hg and Pb. From the results of the principal component analysis on surface water in the study, component model 1 is interpreted to be contaminated water with mercury. This is because Hg has the highest correlation value (0.985). Within the study area, illegal artisanal small scale miners (popularly referred to as galamsey) use mercury extensively in their activities. The mercury is a steady source of contamination of the surface water in the Lower Pra Basin area. The use of mercury in gold mining by the Artisanal Small Scale Miners constitutes a point source of contamination.     Factors Associated With Body Mass Index Among African American Breast Cancer Survivors

    Background: Weight gain after diagnosis and treatment is common among breast cancer survivors (BCSs). Little information exists regarding associations between body mass index (BMI) and lifestyle factors and health-related quality of life (HR-QoL) among African American (AA) BCSs. The present study sought to determine associations between BMI, dietary intake, and physical activity as lifestyle modification strategies and HR-QoL among AA BCSs. Methods: For this cross-sectional study, a lifestyle assessment tool was administered to 195 AA BCSs. Possible predictor variables included socio-demographic and medical characteristics, dietary intake and physical activity patterns, and physical health. The outcome variable was BMI. Results: Many BCSs (63%) had BMIs ≥25 Kg/M2 and presented with stage I cancer (41%) at diagnosis. Among those presenting with late-stage cancer (IIIA, IIIB, IV), 76% were overweight or obese (p=0.0008). Eighty-four percent reported excellent-to-good physical health (p=0.0499) and were less likely to have higher BMIs compared to those reporting fair-to-poor physical health (OR=0.616 [CI=0.192-1.978]). Responders with graduate level education were more likely to have healthy body weights than those attaining high school or less educational levels (OR=2.379 [CI=0.617-9.166]). Conclusions: Most AA BCSs surveyed were overweight or obese, did not engage in recommended physical activity levels and failed to consume diets linked to breast cancer prevention. Interventions are needed to promote weight loss, improve dietary intake, and enhance physical activity among AA BCSs
