AVALIAÇÃO DO PERFIL SENSORIAL DE AMÊNDOAS DE CUPUAÇU E CACAU TORRADAS UTILIZANDO ANÁLISE DESCRITIVA QUANTITATIVA
Utilizou-se
a análise descritiva quantitativa (ADQ)
para desenvolver terminologia descritiva e perfil
sensorial de amêndoas de cupuaçu e cacau
torradas. Quatro amostras de cupuaçu torradas em
forno elétrico rotativo a 150 ºC por 38, 40, 42 e 44
minutos e uma amostra de cacau torrada por 38
minutos foram avaliadas sensorialmente e
comparadas entre si. Foram gerados 12 termos que
melhor descreveram as similaridades e diferenças
entre as amostras, sendo apontados 8 com maior
predominância segundo a análise de componente
principal (ACP). Equipe de 9 julgadores foi
selecionada com base no poder de discriminação
(F amostra significativo para p≤0,50), repetibilidade
(F repetição não significativo para p>0,05) e
concordância de cada um com a equipe. A
intensidade de cada descritor ou atributo foi fixada
em escala não estruturada de 10 cm, ancorada por
extremos que variavam de fraco para forte, baixa
para alta, etc. Os dados obtidos foram avaliados
estatisticamente (ANOVA, Teste de Tukey e ACP).
Observou-se que o cacau torrado apresentou
características sensoriais diferentes do cupuaçu,
sendo bem mais ácido e amargo, com coloração
mais escura e acentuado sabor de chocolate. Já o
cupuaçu apresentou sabor de chocolate mais suave
e mais doce que o cacau.
Abstract
Descriptive terminology and sensory profile of cupuasu and cocoa roasted bean were
developed by sensory descriptive analysis (QDA). Four cupuasu samples roasted in an
electrical rotating oven at 150 ºC and time of 38, 40, 42 and 44 minutes and one cocoa
sample roasted for 38 minutes were sensory evaluated and compared. Twelve terms
which best described similarities and differences among the samples were generated,
being noted eight terms with greater predominance, according to the Principal Component
Analysis (PCA). Nine panelists were selected on the basis of their discriminative ability
(F sample significant for p≤0.50), reproducibility of judgments (F reproducibility significant for >0.05)
and panel agreement. The intensity of each descriptor or attribute were fixed in an 10 cm
unstructured scale, anchored in the ends on the terms weak and strong, low and
high, etc. Data were analyzed by ANOVA, Tukey test and PCA, presenting results in
tables and charts. It was observed that roasted cocoa presented different sensory
characteristics, being sourer, bitter, darker and with accentuated chocolate taste than cupuasu. In the other hand the cupuasu presented smoother chocolate taste and sweeter
than cocoa
INFLUÊNCIA DE DIFERENTES INGREDIENTES NA TEXTURA DE BALAS MOLES PRODUZIDAS COM E SEM GOMA GELANA
Estudou-se a influência de três ingredientes, açúcar
impalpável (formulação padrão), cacau em pó e polpa de
morango desidratado, na firmeza de balas moles produzidas
com e sem goma gelana (nome genérico do polissacarídio
produzido pela fermentação controlada do microrganismo
Pseudomonas elodea). Na forma nativa ( high acyl), a goma
gelana pode produzir géis macios e elásticos e na forma
modificada ( low acyl) géis duros e quebradiços. As amostras
foram produzidas com a goma gelana low acyl. Cada
ingrediente foi testado em três diferentes concentrações (5,
7 e 10%) e adicionados na etapa de estiramento da massa
de bala. As amostras foram avaliadas quanto ao parâmetro
de firmeza (dureza) utilizando-se texturômetro e os
resultados avaliados estatisticamente pelo teste ANOVA.
As amostras também foram analisadas quanto ao teor de
umidade pela metodologia de Karl Fisher. Para as balas
produzidas sem goma gelana, o acréscimo na concentração
dos ingredientes testados influenciou diretamente o aumento
da firmeza. Já para as balas produzidas com a adição de
goma gelana, o uso de 5% dos ingredientes resultou em
maior firmeza e de 7% em menor firmeza. Concluiu-se que a
adição de diferentes ingredientes em formulação base, com
o objetivo de variar o sabor, possibilita a produção de balas
com texturas distintas a partir da mesma linha de fabricação.
INFLUENCE OF DIFFERENT INGREDIENTS ON SOFT CANDIES TEXTURE
PRODUCED WITH THE ADDITION OF GELLAN GUM
Abstract
The influence of three ingredients were studied, sugar powder, cocoa powder and
strawberry dried pulp in the hardness of soft candies produced with and without the
addition of gellan gum (generic name for the polysaccharide obtained by the controlled
fermentation of the microorganism Pseudomonas elodea). At its native form (high acyl)
the gellan gum can produce soft and elastic gels and at its modified form (low acyl) hard
and fragile gels. The samples were produced using the low acyl gellan gum. Three
different concentrations from each ingredient were tested (5, 7 and 10%) and they
were added at the pulling time in the process. The hardness of the samples was
measured in a texture analyzer and the results were statistically analyzed by ANOVA
test. The samples had their humidity verified by the Karl Fischer methodology. For the
candies produced without gellan gum, their hardness increased proportionally to the
percentage of the added ingredients. For the candies produced with gellan gum, the
addition of all the tested ingredients at 5% concentration resulted to the highest hardness
while the 7% concentration showed the lowest hardness. It was concluded that the
addition of different ingredients to the basic formulation, with the objective of varying
flavor, possibilitates the production of candies with distinct textures from the same
fabrication line
Otimização do processo de cristalização em cristalizador contínuo para fondant Optimization of the crystallization process in a continuous beater for fondants
Os principais fatores que afetam a textura em um fondant são: formulação, relacionada com a existência de outros ingredientes além da sacarose; temperatura de cristalização; geometria do cristalizador, e velocidade de cristalização. Neste estudo, procurou-se avaliar a influência de parâmetros de processo sobre as características texturais e de atividade de água de um fondant produzido com xarope de glicose obtido pela hidrólise da fécula de mandioca, utilizando-se um protótipo de cristalização contínuo com capacidade para 1 a 2 kg.h-1. Este equipamento foi projetado e construído baseado em modelo de equipamento contínuo para a produção industrial de fondant, sendo configurado com um sistema de rosca sem fim, encamisada para circulação de água fria. Selecionaram-se, para seu dimensionamento, parâmetros, como tamanho da rosca (comprimento, diâmetro e passo) e espaçamento (gap) entre a rosca e o tubo externo; para permitir variações na velocidade de rotação da rosca, optou-se pela instalação de um inversor de frequência acoplado ao motor. Amostras de fondant foram produzidas a partir de misturas de sacarose e xarope de fécula de mandioca 42DE, estudando-se a influência das variáveis temperatura de cristalização e velocidade de rotação sobre sua textura, e a atividade de água, utilizando-se delineamento estatístico Composto Central Rotacional com base na Metodologia de Superfície de Resposta (MSR). Com o uso do protótipo dotado de rosca de 250 mm de comprimento e 27,2 mm de diâmetro, e considerando-se as repostas de atividade de água e textura, concluiu-se que para obter as melhores características no fondant, com textura adequada e maior estabilidade microbiológica, deve-se trabalhar com teores de xarope de glicose de, no mínimo, 20% (mínima atividade de água), velocidade de rotação entre 105 e 110 rpm, e temperatura inicial de cristalização ao redor de 60 °C.<br>The main factors affecting the texture of a fondant are its formulation, related to the presence of other ingredients besides sucrose, the crystallization temperature, beater design and beater speed. Samples of fondant formulated with sucrose and 42DE manioc starch syrup were produced, and the influence of the crystallization temperature and rotation speed on the texture and water activity evaluated by a central composite design based on the fit to a second-order polynomial model, using response surface methodology. The results indicated that, considering the responses for water activity and texture, the use of the fondant beater equipped with a 250 mm length screw with a 27.2 mm diameter, allowed one to obtain an appropriate texture and microbiological stability using manioc starch syrup levels of at least 20% (minimum water activity), rotation speed between 105 and 110 rpm and an initial beating temperature of 60 °C

Co-crystallization of paprika oleoresin and storage stability study
Abstract Paprika oleoresin was co-crystallized to formulate a natural and hydrophilic dye for use in food applications. The color stabilities of the co-crystallized and free oleoresins were evaluated at different temperatures (25 and 35 °C, 70% RH) and light exposures (light 70 watts and dark, 25 °C, 70% RH). Co-crystallization from supersaturated sucrose syrup (S = 1.32) was found to be optimum for the formation of sugar agglomerates in a few minutes, with the paprika oleoresin entrapped inside. With time, decreases in the values of the a* parameter and the β-carotene content were observed with increasing temperature and with the incidence of light. The color degradation kinetics were dependent on both factors. The loss of color was greater for the free oleoresin as compared to the co-crystallized, suggesting that the co-crystallization process improves oleoresin retention in the sugar matrix, making it less susceptible to losses due to color degradation
Influence of temperature and homogenization on honey crystallization
SummaryThis work aimed to verify the influence of prior homogenization and storage temperature on the crystallization of honey. Honeys from Campos Gerais, PR Brazil, were used for the experiments. The samples were subjected to homogenization at 0, 180, 360 and 540 rpm for 15 minutes and stored at 15 °C or 25 °C. Crystallization was monitored by the colour, absorbance at 660 nm and moisture analysis. At the end of the experiment, the crystal sizes were determined by optical microscopy and laser diffraction. It could be observed that the samples kept at 15 °C and homogenized by agitation at 360 or 540 rpm showed crystal formation after 7 days of storage, while all the samples stored at 25 °C showed crystal formation after 20 days. It was also observed that the effect of temperature was much more pronounced than that of mechanical agitation during homogenization. All the samples stored at 15 °C developed crystals that were smaller than 20 μm
