    Risks and governance modes in offshoring decisions:Linking supply chain management and international business perspectives

    International audienceGoverning offshoring has become a major challenge for firms that run operations outside the home country. International business (IB) and supply chain management (SCM) literature offer different insights on the topic, focusing especially on possible governance modes and the drivers of this choice, with different perspectives. Grounding the discussion at the intersection between these two research fields, the present study first proposes a taxonomy of offshoring risks (i.e. tasks, operational, reputational and institutional), with corresponding risk factors in each category; then, a set of research propositions are formulated, in order to link these categories to the governance-mode choice. Furthermore, we argue that the risk–governance link is moderated by two relevant factors, that is, the offshoring firm size and the strategic relevance of the outsourced activity. As a result, we elaborate on the interrelation between IB and SCM theories, emphasising the impact of risk management and contingent factors in offshoring governance modes configurations

    Dependence of effective properties upon regular perturbations

    In this survey, we present some results on the behavior of effective properties in presence of perturbations of the geometric and physical parameters. We first consider the case of a Newtonian fluid flowing at low Reynolds numbers around a periodic array of cylinders. We show the results of [43], where it is proven that the average longitudinal flow depends real analytically upon perturbations of the periodicity structure and the cross section of the cylinders. Next, we turn to the effective conductivity of a periodic two-phase composite with ideal contact at the interface. The composite is obtained by introducing a periodic set of inclusions into an infinite homogeneous matrix made of a different material. We show a result of [41] on the real analytic dependence of the effective conductivity upon perturbations of the shape of the inclusions, the periodicity structure, and the conductivity of each material. In the last part of the chapter, we extend the result of [41] to the case of a periodic two-phase composite with imperfect contact at the interface

    The relationship regulator: a buyer-supplier collaborative performance measurement system

    Purpose The purpose of this paper is to propose an innovative buyer-supplier performance measurement system (PMS) (called relationship regulator – RelReg), aimed at stimulating collaboration on mutual performance. The RelReg is described all throughout the phases of its lifecycle: first, design features and visual representation of the new measurement framework are reported; second, guidelines on how to implement, use and review the system are provided, highlighting the role of the buyer and the supplier at each step. Design/methodology/approach A theory building and testing approach is applied. The RelReg developed features primarily ground on previous scientific contributions matched with empirical evidence collected through case studies, workshops and focus groups. The resulting conceptual model is then validated through a dyadic buyer-supplier case study. Findings Two conceptual frameworks are provided: the RelReg dashboard – a multidimensional PMS; and the RelReg lifecycle – set of activities to be performed by both the buyer and the supplier all along the adoption process. Moreover, empirical insights on relevant issues to be considered when adopting the RelReg are reported. Originality/value The RelReg represents an innovative and smart tool, allowing buyer-supplier dyads to collaborate on relationship performance. </jats:sec

    Terpenoids and norisoprenoids in Italian red wines

    AIM Terpene compounds are associated with fl oral notes and are characteristic of aromatic grape varieties such as Muscat (Jackson,2008). They are generally considered to potentially contribute to the aroma of white wines. However, there is a growing interesttowards the potential contribution of terpene compounds to the aroma of red wines. The aim of this work was to investigate theoccurrence of diff erent terpenes in red wines from Italian varieties. METHODS For this study wines from 11 mono-varietal Italian redwines from 12 regions were used (19 Sangiovese, 11 Nebbiolo, 10 Aglianico, 11 Primitivo, 10 Raboso del Piave, 9 Cannonau, 11 Teroldego,3 Nerello, 9 Montepulciano, 7 Corvina). All samples were from vintage 2016 and none of them had been in contact with wood. A totalof 19 terpenes and 7 norisoprenoids were analysed by mean of SPME-GC-MS analysis using a DVB-CAR-PDMS fi ber. The wines werecollected in the framework of the activities of the D-Wines (Diversity of Italian wines) project. RESULTS Signifi cant diff erences amongvarieties were observed for basically all the compounds analyzed with the exception of limonene. Overall, the concentrations of thevarious terpenes remained in the same order of magnitude. However, some diff erences are noticeable between varieties. Corvina wascharacterized by higher level of linalool, followed by Aglianico, Nebbiolo, Primitivo and Sangiovese. Cyclic terpenoids appeared asgood varietal markers, for instances Montepulciano was characterized by 1,4-cineole and 1,8-cineole, whereas Sangiovese showedhigher levels of p-cymene, \u3b1-terpinene and 1,4-cineole. Higher terpinene-1-ol content was characteristic of Montepulciano and Rabosowines. Relatively high levels of the norisoprenoid \u3b2-damascenone were found in Cannonau up to 3.68 \u3bcg/L. CONCLUSIONS This studyprovide the fi rst survey of a large number of terpenoids and norisoprenoids in diff erent mono-varietal Italian red wines.     Differences in the Volatile Profile of Apple Cider Fermented with Schizosaccharomyces pombe and Schizosaccharomyces japonicus

    In this study, two strains of Schizosaccharomyces pombe (NCAIM Y01474(T) and SBPS) and two strains of Schizosaccharomyces japonicus (DBVPG 6274(T), M23B) were investigated for their capacity to ferment apple juice and influence the volatile compounds of cider compared to Saccharomyces cerevisiae EC1118. The ethanol tolerance and deacidification capacity of Schizosaccharomyces yeasts could make them potential substitutes for the commonly used S. cerevisiae starter cultures. Despite different time courses (10-30 d), all strains could complete the fermentation process, and Schizosaccharomyces strains reduced the concentration of malic acid in the apple juice. Results indicated that each yeast exerted a distinctive impact on the volatile profile of the apple cider, giving final products separated using a principal component analysis. The volatile composition of the cider exhibited significant differences in the concentration of alcohols, esters, and fatty acids. Particularly, the flocculant strain S. japonicus M23B increased the levels of ethyl acetate (315.44 +/- 73.07 mg/L), isoamyl acetate (5.99 +/- 0.13 mg/L), and isoamyl alcohol (24.77 +/- 15.19 mg/L), while DBVPG 6274(T) incremented the levels of phenyl ethyl alcohol and methionol up to 6.19 +/- 0.51 mg/L and 3.72 +/- 0.71 mg/L, respectively. A large production of terpenes and ethyl esters (e.g., ethyl octanoate) was detected in the cider fermented by S. cerevisiae EC1118. This study demonstrates, for the first time, the possible application of S. japonicus in cider-making to provide products with distinctive aromatic notes"

    The contribution of varietal thiols in the diverse aroma of Italian monovarietal white wines

    Thanks to their low odor detection thresholds, free varietal thiols (VTs) play a key role in the primary aroma of wines, to which they confer an intense scent reminiscent of box tree, grapefruit, citrus fruits, passionfruit and cat urine odor. Excluding wines from a few VT-rich grapevine cultivars, VTs appear to be present in most cultivars at trace levels, although a comprehensive dataset is still missing. The low concentration of VTs combined with their high reactivity and matrix complexity make their determination in wines a challenging task. In this research an optimized liquid chromatography - tandem mass spectrometry (LC-MS/MS) method was validated and used for the quantification of 4-methyl-4-sulfanylpentan-2-one (4-MSP), 3-sulfanylhexan-1-ol (3-SH), 3-sulfanylhexyl acetate (3-SHA) and ethyl 3-sulfanylpropionate (E3SP) in 246 samples (vintage 2019) representative of 18 monovarietal Italian white wines. VTs were detected in all cultivars even though higher values of 3-SH were found in Lugana, Müller-Thurgau and Verdicchio cultivars. Müller-Thurgau wines showed the highest level of 4-MSP, that was mainly correlated to the odor descriptors of passionfruit and box tree/cat urine. The VTs composition of Müller-Thurgau was confirmed on a second set of 50 wines from different vintages. From a sensory perspective, the samples of Müller-Thurgau showed the best positive correlations between chemical variables and the odor descriptors thiol note, passion fruit and box tree/cat urine. These notes are significantly related to 4-MSP, suggesting that it could play a relevant olfactory role for the aroma of Müller-Thurgau wines. Sorting analysis allowed to group these wines according to their thiolic characteristics.     A proposal for research in Purchasing and Supply Management

    This working paper is intended to present to the research community the first edition of a research project focused on Purchasing and Supply Management (PSM), namely the International Purchasing Survey (IPS). IPS is designed to investigate on a world basis how companies define their purchasing strategies, what are their purchasing skills and capabilities, how the purchasing activities are carried on and what is the effect on performances. Moreover, we aim at setting up a permanent data collection program in several countries to establish a common database regarding the purchasing function that can be used for research purposes over years. This project is the result of a proficient collaboration among many partner universities: the research team listed below jointly designed the research framework and methodology and is currently committed in starting the data collection. The paper is organized as follows: after an introduction to the research idea, we provide a literature review on PSM functional to the project scope. Afterwards, research framework, objectives and the chosen methodology are described. At the end, we conduct an overview of open research streams and future developments
