    Variation of color with baking time in snacks made with pregelatinized cassava

    Color is an importantaspect when formulating products, as the consumer will evaluate this aspect in the first instance. There is a growing interest in non-wheat producing regions to replace it with local sources of starches. However, the substitution of wheat flour affects characteristics such as texture, flavor, and color of the intermediate and final products. The objective of this work was to determine if the variation of the baking time allows reducing the color difference that the replacement of flour generates by dehydrated cassava puree (DCP). For that, four replacement levels were evaluated using the CIE-L * a * b * and CIE-L * C * H * methodology. The browning index and total color difference (ΔE) between samples with different replacement levels and between different stages of production were also evaluated. It was proved that the decrease in the baking time allowed the development of a similar coloring between snacks made with DCP and those made without substitution. Also, moisture values of less than 5% (dry basis) were obtained in the snacks. The browning index increased with the proportion of DCP in flour and doughs, but not in baked snacks.     El trabajo consiste en un breve estudio de cómo influyen la cultura y la sociedad en la lengua francesa y en la española y es una comparación del sexismo que reflejan estas dos lenguas, propiciado por los hablantes, los lingüistas y los propios académicos. Nos fijamos en que este sexismo lingüístico también lo mantienen las academias reguladoras de la lengua, tanto la Real Academia de la lengua española como, en Francia, l’Académie française. Además, es una reflexión sobre el masculino genérico: analizamos su uso sexista y excluyente para la mujer y las numerosas polémicas que ha conllevado, por ejemplo, en la prensa.     To determine the effectiveness of Supplemental Nutrition Assistance Program- Education (SNAP-Ed) nutrition and physical activity programming in elementary schools, it is necessary to recruit socioeconomically similar comparison schools not receiving SNAP-Ed programming. We developed a flexible recruitment strategy to tailor our approach to each individual school district and site.     Assessing Healthful Eating and Physical Activity Practices in Places Children Learn

    Site-level assessment questionnaires (SLAQs) were developed to assess nutrition and physical activity practices and environments in schools and other places children spend time in order to facilitate program planning and evaluation. After expert panel review for content validity, questionnaires were feasibility tested by users in six schools, three early care and education programs, and two out-of-school programs. Findings indicate that the questionnaires are feasible and useful for planning interventions. Extension programs can use SLAQs to support policy, systems, and environment change efforts that promote healthful eating and physical activity in children and to measure intervention effectiveness

    Blood\u27s Concentration of Lead and Arsenic Associated with Anemia in Peruvian Children

    This exploratory, descriptive cohort study (N = 60) determined lead (Pb) and arsenic (As) blood concentrations in Peruvian children and their association with hematological parameters of iron-deficient anemia (IDA) and anthropometric measurement. The mean age of children was 10.8 months (SD = 4.7) and ranged from 3 to 24 months old. Anemia (Hb levels below 10.5 g/dL) was found in 20% of this cohort. Additionally, microcytosis (MCV \u3c 70 fL) was present in 54%, and hypochromia (MCH \u3c 23 pg) in 42% of the group of children. Chi-square analysis showed that 88% of the children with anemia also had microcytosis and hypochromia (p \u3c 0.001). Pb and As were detected in 100% of the infants’ blood samples, and the concentrations were significantly higher in older infants than in younger ones. Pb and As were not associated with the sex, anthropomorphic parameters, or infant hemogram changes. Infants who received iron supplementation were 87% less likely to have low Hb compared with those who did not (OR = 0.13, 95% CI = 0.02–0.88, p = 0.04). Herbal tea intake was significantly associated with microcytosis and hypochromia. Our finding uncovered that hematological parameters for anemia are modified in Peruvian children with high levels of microcytosis and hypochromia. Concentrations of Pb and As were above method detection limits in all Peruvian children, but these were not associated with IDA or anthropometric measurements. A large study, including other variables, would benefit from allowing a more complex model predicting anemia in Peruvian children

    Modeling the Influence of Early Skin-to-Skin Contact on Exclusive Breastfeeding in a Sample of Hispanic Immigrant Women

    Using data from a longitudinal study of breastfeeding in Hispanics, this study evaluated the influence of early skin-to-skin contact (SSC) on initiation and sustained exclusive breastfeeding (EBF) at 1 month postpartum. Two-thirds of the women in the sample participated in early SSC. At discharge, over half of the women were EBF; this proportion decreased to one-third at 1 month postpartum. Controlling for demographic and clinical variables in the model, participation in early SSC was associated with a greater than sevenfold increase in the odds of EBF at discharge (p = .005) but was not predictive of EBF at 1 month post-discharge (p = .7). Younger maternal age and increased prenatal infant feeding intention were associated with an increased likelihood of EBF across both timepoints. Promoting early SSC may help with initiation of EBF, while further breastfeeding support may be needed to maintain EBF following discharge for this vulnerable population

    La diabetes mellitus tipo II es un problema de salud pública, su prevalencia se ha incrementado y es una de las principales causas de ingreso hospitalario por las múltiples complicaciones que esta enfermedad genera.Objetivo: Factores del incremento de complicaciones en los pacientes con diabetes mellitus tipo II del programa de atención a pacientes crónicos en el centro de atención comunitaria Asociación Hijos del Maíz en la comunidad San Blas de la ciudad de Granada en el periodo comprendido segundo semestre 2018.En el estudio se creó un instrumento de recolección de la información, una encuesta la cual fue validada por expertos en el tema: médico general responsable del centro de atención comunitario asociación hijos del maíz, y Lic. En enfermería responsable del área de epidemiologia del Hospital Antonio Lenin Fonseca El estudio es cuantitativo, de corte trasversal, prospectivo, descriptivo, cuyo universo estuvo conformado por 126 pacientes con DM2 atendidos en el programa de atención de crónicos de la Asociación Hijos del Maíz. Siendo la metodología empleada para la recolección de la información, por medio de una encuesta en método de entrevista. Lo más notable del estudio es un predominio de los pacientes del sexo femenino con un 75%, entre las edades de 48 - 55 años y mantiene un estado nutricional inadecuado la mayor parte de los pacientes tiene familiares con diabetes en donde la madre es el antecedente familiar más relevante de los casos encuestados y las complicaciones más comunes de la enfermedad que presentan los pacientes son pie diabético el 93% y retinopatía el 7%

    Length-dry mass regressions for Leptonema (Trichoptera, Hydropsychidae) larvae in a Neotropical headwater stream

    Abstract: Aim The objectives of this study were to evaluate which allometric measurements of Leptonema larvae are most suitable in order to develop mathematical equations to describe biomass relationships for the population of this taxon in a reference condition headwater stream. Methods We measured four body dimensions (body length, interocular distance, horizontal width of cephalic capsule and vertical width of the cephalic capsule) of 65 Leptonema larvae, which were collected in February 2022, in the Taboões spring, Serra do Rola Moça State Park, Minas Gerais, using a Surber sampler. For the determination of allometric measurements, each individual was photographed under a dissecting stereomicroscope (Leica M80) equipped with a digital camera. Each photographed specimen's length was measured using the Motic Image Plus 2.0 software. After measuring the linear body dimension and direct measurement of the biomass, we used these values to calculate the length-mass mathematical equations. To the equations use power models: DM = a Lb, where a/b are constants, DM is the dry mass, L is the linear body dimension. Results Among body dimensions of Leptonema larvae, body length showed the greatest range of variation, with values ranging from 4.03 to 25.28 mm, followed by head capsule vertical width (0.51 - 2.69 mm), head capsule horizontal width (0.55 - 2.22 mm) and interocular distance (0.24 - 1.88 mm). Our results show that body length provided the best-fitting equation for estimating biomass (R2 = 0.90). However, we observed a close fit between the other allometric measures, including high coefficients of determination, head capsule horizontal width (R2 = 0.85), interocular distance (R2 = 0.82), head capsule vertical width (R2 = 0.78). Conclusions These results will be useful in providing the best allometric measurement and equations to estimate the biomass of Leptonema larvae from the tropics
