    Consumer perception and acceptability of lupin-derived products: a systematic review

    The addition of lupin into other foods can enhance their nutritional value and may be an acceptable approach to introducing lupin into the food supply, particularly as an ingredient. Lupin could be used in many food products (bakery products, pasta, beverages, meat products and dairy products) to improve their protein content and possible nutraceutical effects. The main aim of this study is to summarise the recent formulation trends with lupin as an ingredient of new food products based on consumer perception and acceptability. The present systematic literature review was conducted through the Preferred Reporting Items for Systematic Reviews and Meta-Analyses guidelines. The eligibility criteria for the articles to be considered were: (a) the manufacturing of a food product with lupin as a formulation ingredient; (b) the food product developed was tested by a sensorial panel. A total of 33 studies filled the inclusion criteria and were incorporated into the qualitative synthesis. The sensory analysis of each product was notoriously different based on the jury evaluators and measurement scales used but revealed high acceptability rates for possible future consumers. The high protein and fibre contents of lupin were the most cited reason associated with the importance of nutrient-rich food products for consumers. More research on foods with high nutrition profiles and well-established sustainability parameters is crucial to promote healthier food environments.info:eu-repo/semantics/publishedVersio

    Food charity and the human right to adequate food : ethical concerns

    A Declaração Universal dos Direitos Humanos defende que “todos os indivíduos têm direito à saúde e bem-estar, com acesso incondicional a alimentos, habitação e cuidados médicos”. Coexistem situações em que os indivíduos não têm acesso físico e económico a alimentos seguros e nutritivos, encontrando-se numa situação de insegurança alimentar. As dificuldades no acesso aos alimentos decorrentes de situações de carência socioeconómica são na verdade um dos problemas onde a intervenção na área da ação social é premente. Apesar de responder à garantia de um direito humano básico, a caridade alimentar motiva um dilema ético, contrapondo os princípios éticos que motivam a sua implementação, tais como o da solidariedade e cooperação, responsabilidade social e saúde, dignidade humana e direitos humanos, beneficência e igualdade, justiça e equidade; e aqueles que poderão estar a ser lesados com a mesma, tais como o da autonomia e responsabilidade individual, respeito pela vulnerabilidade humana e integridade pessoal, dignidade humana e direitos humanos e não discriminação e não estigmatização da Declaração Universal sobre Bioética e Direitos Humanos. Tal situação deverá contribuir para uma reflexão apurada e uma melhoria dos procedimentos a ela associados, como forma de garantir o fim último de salvaguarda do bem-estar dos indivíduos implicados.The Universal Declaration of Human Rights states that “all individuals have the right to health and well-being, with unconditional access to food, housing and medical care”. There are situations where individuals do not have physical and economic access to safe and nutritious food, finding themselves in a situation of food insecurity. Difficulties in accessing food arising from situations of socioeconomic need are actually one of the problems where intervention in the area of social action is urgent. Despite responding to the guarantee of a basic human right, food charity causes an ethical dilemma, opposing the ethical principles that motivate its implementation, such as solidarity and cooperation, social responsibility and health, human dignity and human rights, beneficence and equality, justice and equity; and those who may be harmed by it, such as autonomy and individual responsibility, respect for human vulnerability and personal integrity, human dignity and human rights and non-discrimination and non stigmatization of the Universal Declaration on Bioethics and Human Rights. Such a situation should contribute to an accurate reflection and an improvement of the procedures associated with it, as a way of guaranteeing the ultimate goal of safeguarding the well-being of the individuals involved.info:eu-repo/semantics/publishedVersio

    Wheat consumption and prevalence of celiac disease: Correlation from a multilevel analysis

    Celiac disease (CD) is triggered by both genetic and environmental factors. More than 1% of the world’s population is affected by CD. In recent years, studies have confirmed a worldwide rising trend in CD prevalence. "Westernized diet" is one of the main factors of this increasing prevalence. However, the relationship between wheat consumption, its dynamics, and CD has not been adequately investigated on a global scale. This study aimed to perform a multilevel analysis of the association between wheat consumption and CD. Wheat consumption data from countries and continents were obtained from the database. The relative increase/decrease in wheat consumption over a long period (since 1961) and a short period (since 2004) were calculated using various statistical tools. The relationship between wheat consumption and celiac frequency was determined using the R-commander R package version 2.6-2. Pearson's correlation coefficient (r = 0.88) confirmed a high positive correlation between wheat consumption and the prevalence of biopsy-proven CD by estimating continent-wide wheat consumption data, but an insignificant correlation was found when the data were compared country-wide.info:eu-repo/semantics/publishedVersio

    Proposal for grid/check-list for qualitative evaluation of menus intended for adult population

    INTRODUÇÃO: Sendo a alimentação um fator de risco modificável significativo para a incapacidade e morte prematura, urge a promoção de ambientes alimentares saudáveis incluindo sistemas que promovam uma dieta diversificada, equilibrada e saudável nos setores público e privado. A correta intervenção alimentar pode representar um importante reflexo na saúde dos clientes de uma Unidade de Alimentação e Nutrição, visto que, para muitos, a alimentação recebida na empresa/organização onde trabalha representa a grande refeição do dia e pode representar a base de uma alimentação saudável, com reflexos positivos para a saúde, podendo servir de exemplo para a criação de hábitos alimentares adequados nos comensais. OBJETIVOS: Elaborar ferramenta de avaliação qualitativa de ementas destinada à população adulta e saudável, com base nas necessidades energéticas totais e distribuição de porções por dia e por refeição segundo as recomendações nacionais e hábitos alimentares da população nacional. METODOLOGIA: Foram identificadas as necessidades energéticas totais de acordo com as recomendações da Roda dos Alimentos Portuguesa e distribuídas as porções de alimentos para a refeição do almoço. Foram compilados e analisados os critérios referentes a cinco documentos de avaliação qualitativa de ementas e adaptados para a população alvo. RESULTADOS: Obteve-se uma lista de verificação/grelha para avaliação qualitativa de ementas, constituída por 55 pressupostos divididos por 8 grupos. As ementas serão avaliadas segundo uma classificação de “muito boa”, “boa”, “aceitável” e “não aceitável” consoante os valores percentuais obtidos. CONCLUSÕES: A lista de verificação/grelha obtida com os principais critérios de alimentação saudável para aplicação aquando da elaboração de ementas pretende representar uma ferramenta que auxilie os responsáveis pela elaboração de ementas e os nutricionistas num processo de melhoria da qualidade nutricional das ementas.INTRODUCTION: As diet is a significant modifiable risk factor for disability and premature death, there is an urgent need to promote healthy food environments including systems that promote a diversified, balanced, and healthy diet in the public and private sectors. The correct food intervention can represent an important reflection on the health of the clients of a Food and Nutrition Unit, since, for many, the food received in the company/organization where they work represents the big meal of the day and can represent the basis of a healthy diet, with positive consequences for health, and can serve as an example for the creation of adequate eating habits in diners. OBJECTIVES: To develop a qualitative assessment tool for menus aimed at the healthy adult population, based on total energy needs and distribution of portions per day and per meal according to national recommendations and eating habits of the national population. METHODOLOGY: The total energy needs were identified, according to the recommendations of the Portuguese food wheel and the food portions were distributed for the lunch meal. Criteria referring to five qualitative assessment documents of menus were compiled and analyzed and adapted for the target population. RESULTS: A checklist/grid was obtained for the qualitative evaluation of menus, consisting of 55 assumptions divided into 8 groups. The menus will be evaluated according to a classification of “very good”, “good”, “acceptable” and “not acceptable” depending on the percentage values obtained. CONCLUSIONS: The checklist/grid obtained with the main healthy eating criteria for application when preparing menus is intended to represent a tool that helps those responsible for preparing menus and nutritionists in a process of improving the nutritional quality of the menus.info:eu-repo/semantics/publishedVersio

    Ergonomics in "remote work" activities: a workstation adaptation case study in Brazil

    The coronavirus disease 2019 (COVID-19) pandemic decreed by the outbreak of the new coronavirus culminated in the need to implement jobs in the homes of employees who had to adhere to the “remote work” style, due to social isolation actions in Brazil. Many of the employees started to work in the absence of adequate working conditions in their homes, impacting the three dimensions of ergonomics, i.e., physical, organizational and cognitive. The objective of this chapter is to report the adjustments made in a workplace after the change of modality from face-to-face (f2f) activities to “remote work” after the beginning of the pandemic in 2020, aiming to adopt actions aimed at ergonomics. The research was carried out with a professional in the area of Environmental and Sanitary Engineering who started remote work in March 2020. The work is of a qualitative nature, using photos to illustrate the changes occurring before and after the installation of the equipments and reports on strategies to improve working conditions in the “remote work”. The cost of physical adaptations was also computed. The most reported complaints collected by the professional were back pain, neck, forearm, wrist and eye pain, in addition to mental fatigue. The necessary equipment and furniture were acquired for the physical adaptation of the workspace. Issues of working hours, days off, means of communication were also addressed, but aspects of cognitive and organizational ergonomics must have the participation of the entire work group to achieve effective results. The accompaniment of a specialized technical professional would be important for the establishment of further assertive actions, seeking the productivity and quality of life of the employee.info:eu-repo/semantics/publishedVersio

    Consumption of fruit in street posts from eleven iberoamerican countries. Multicentric study

    ARTÍCULO PUBLICADO EN REVISTA EXTERNA. La ingesta de comida en la calle es una práctica muy común en personas que trabajan. Hay una gran oferta de comida callejera; Las frutas son siempre parte de esta oferta y se pueden encontrar en diferentes presentaciones. Objetivo: Analizar la frecuencia del consumo de fruta en las vías públicas de América Latina. Material y métodos: Se realizó un estudio transversal utilizando un cuestionario de 15 preguntas en formato Google Docs, que fue validado por el método Delphi y aplicado en 11 países: Argentina, Brasil, Chile, Colombia, Costa Rica, Guatemala, Panamá, Paraguay, Perú, Portugal y Uruguay. Resultados: Se encuestó a 8885 personas, más del 50% consume alimentos en la vía pública. Entre los países más consumidores, se destacan Colombia (78%) y Guatemala (76%), seguido de Perú (66%). Con respecto al consumo de fruta en la vía pública, se observa que existe un mayor consumo en Portugal (61%), seguido de Colombia (55%) y Guatemala (51%), y los países con menor consumo son Argentina (26%) y Uruguay (20%). El consumo de fruta en la calle es el mismo en ambos sexos en la mayoría de los países. Por otro lado, en Portugal, Colombia, Argentina, Costa Rica y Chile, el mayor consumo corresponde a personas con educación superior (universitaria o de posgrado) (p <0,05). Conclusiones: El consumo de alimentos en la calle es alto en todos los países, incluido el consumo de frutas. Esto puede transformarse en una oportunidad para alentar su consumo, pero los puestos de la calle deben ajustarse a los requisitos necesarios para ofrecer alimentos seguros.
