    Encouraging sustainable food consumption through nudges: An experiment with menu labels

    Finding ways to steer consumers' food choices towards vegetarian and plant-based meals is important to reduce our diets' environmental impact. This paper investigates how nudges in restaurants can be effectively used to increase sales of vegetarian and plant-based dishes. We partnered with two restaurants, which can host up to 130 guests in total and are in the same building, and we tested the effect of three nudge-based interventions on the sales of vegetarian and plant-based dishes. We found that removing the symbols for vegetarian and plant-based dishes increased the sales of those starters by 10.2 pp., and of those mains by 6.2 pp. When a low emissions symbol was added to the menu to replace the symbols for vegetarian and plant-based dishes, it did not affect sales. However, when the same nudge was made transparent through a statement explaining its purpose on the menu, the sales of those starters increased by 14.1 pp. This result suggests that nudges can be used ethically and still be effective. Overall, these findings support the use of nudges as cost-effective interventions to tackle the issue of unsustainable food consumption in the hospitality sector

    The impact of salient labels and choice overload on sustainability judgments: An online experiment investigating consumers’ knowledge and overconfidence

    Previous research suggests that contextual factors can affect the perception of food products, however, we still know little about how consumers evaluate these items in terms of sustainability. This research investigates how well shoppers can rate food items in the matter of their environmental impact, whether they are overconfident in their knowledge of food sustainability, and whether labels on packaging and great availability of choice can affect their judgment. Through an online behavioural experiment, we test the impact of salient truthful and untruthful green labels, and of choice overload on people's perceptions of the environmental quality of food products. We find that choice overload is detrimental to consumers’ judgment, but that truthful labels can help shoppers correctly identify sustainable items. However, untruthful labels can negatively impact consumers’ judgments with choice overload, even if shoppers have greater prior knowledge of sustainability. These findings suggest that truthful and untruthful salient labels and choice overload can have an impact on shoppers’ perceptions of food products. We find that overconfidence in one's sustainability judgment is negatively correlated to judgment accuracy. Hence, great care should be taken in presenting food products to consumers to make the most environmentally friendly items stand out

    New approaches to ultrasensitive magnetic resonance

    Spectroscopic methods tend to exhibit an inverse correlation between sensitivity and the ability to discriminate between similar structures. Were they obtainable with adequate sensitivity, magnetic resonance spectra could resolve structural controversies involving the nature of clusters, ions, semiconductor defects and catalytic intermediates. This paper describes several novel approaches to magnetic resonance, which have in common that the spins are coupled to other degrees of freedom in order to obtain nonequilibrium polarization and/or greater detection sensitivity. The methods under development include single-ion electron spin resonance (ESR) detected by ion trapping frequencies, catalyst NMR detected by the branching ratio to different spin symmetry species, and semiconductor nuclear magnetic resonance (NMR) detected via the circular polarization of luminescence

    Decellularized aortic conduits: could their cryopreservation affect post-implantation outcomes? A morpho-functional study on porcine homografts

    Decellularized porcine aortic valve conduits (AVCs) implanted in a Vietnamese Pig (VP) experimental animal model were matched against decellularized and then cryopreserved AVCs to assess the effect of cryopreservation on graft hemodynamic performance and propensity to in vivo repopulation by host\u2019s cells. VPs (n = 12) underwent right ventricular outflow tract substitution using AVC allografts and were studied for 15-month follow-up. VPs were randomized into two groups, receiving AVCs treated with decellularization alone (D; n = 6) or decellularization/cryopreservation (DC; n = 6), respectively. Serial echocardiography was carried out to follow up hemodynamic function. All explanted AVCs were processed for light and electron microscopy. No signs of dilatation, progressive stenosis, regurgitation, and macroscopic calcification were echocardiographically observed in both D and DC groups. Explanted D grafts exhibited near-normal features, whereas the presence of calcification, inflammatory infiltrates, and disarray of elastic lamellae occurred in some DC grafts. In the unaltered regions of AVCs from both groups, almost complete re-endothelialization was observed for both valve cusps and aorta walls. In addition, side-by-side repopulation by recipient\u2019s fibroblasts, myofibroblasts, and smooth muscle cells was paralleled by ongoing tissue remodeling, as revealed by the ultrastructural identification of typical canals of collagen fibrillogenesis and elastogenesis-related features. Incipient neo-vascularization and re-innervation of medial and adventitial tunicae of grafted aortic walls were also detected for both D and DC groups. Cryopreservation did not affect post-implantation AVC hemodynamic behavior and was topically propensive to cell repopulation and tissue renewal, although graft deterioration including calcification was present in several areas. Thus, these preliminary data provide essential information on feasibility of decellularization and cryopreservation coupling in the perspective of treatment optimization and subsequent clinical trials using similarly treated human allografts as innovative heart valve substitutes
