    Heterocyclic aromatic amines in doner kebab : quantitation using an efficient microextraction technique coupled with reversed-phase high-performance liquid chromatography

    The safety of doner kebab as a traditional Middle East tasty food can threaten via the formation of dangerous compounds such as heterocyclic aromatic amines during heat process. In this regard, the current investigation was devoted to measuring of 4 HAAs (2-amino-3,4-dimethylimidazo[4,5-f]quinoline (MeIQ), 2-amino-3,8-dimethylimidazo[4,5-f]quinoxaline (MeIQx), 2-amino-1-methyl-6-phenylimidazo[4,5-b]pyridine (PhIP), and 2-amino-3-methylimidazo[4,5-f]quinoline (IQ)) in doner kebab samples with an innovative microextraction technique combined with high-performance liquid chromatography. The limit of detection was in the range of 4.8 and 5.3 ng/g, while relative standard deviations were between 6.5% and 8.3%, and recoveries were calculated in the range of 89%-97%. The most and the least total mean values of HAA levels were 13.30 ng/g for MeIQx and 5.0 ng/g for IQ. The proposed method showed a high capability to extract trace amount of HAAs from a complex matrix such as doner kebab.     [EN] Helicobacter pylori (H. pylori) is a notorious, recalcitrant and silent germ, which can cause a variety of debilitating stomach diseases, including gastric and duodenal ulcers and gastric cancer. This microbe predominantly colonizes the mucosal layer of the human stomach and survives in the inhospitable gastric microenvironment, by adapting to this hostile milieu.     Multi-objective day-ahead scheduling of microgrids using modified grey wolf optimizer algorithm

    YesInvestigation of the environmental/economic optimal operation management of a microgrid (MG) as a case study for applying a novel modified multi-objective grey wolf optimizer (MMOGWO) algorithm is presented in this paper. MGs can be considered as a fundamental solution in order for distributed generators’ (DGs) management in future smart grids. In the multi-objective problems, since the objective functions are conflict, the best compromised solution should be extracted through an efficient approach. Accordingly, a proper method is applied for exploring the best compromised solution. Additionally, a novel distance-based method is proposed to control the size of the repository within an aimed limit which leads to a fast and precise convergence along with a well-distributed Pareto optimal front. The proposed method is implemented in a typical grid-connected MG with non-dispatchable units including renewable energy sources (RESs), along with a hybrid power source (micro-turbine, fuel-cell and battery) as dispatchable units, to accumulate excess energy or to equalize power mismatch, by optimal scheduling of DGs and the power exchange between the utility grid and storage system. The efficiency of the suggested algorithm in satisfying the load and optimizing the objective functions is validated through comparison with different methods, including PSO and the original GWO.Supported in part by Royal Academy of Engineering Distinguished Visiting Fellowship under Grant DVF1617\6\4

    Determining the amount of Acrylamide in Potato Chips Using Xanthydrol as a Derivative Representative with Gas Chromatography-Mass Spectrometry

    Background and Objectives: In the production process of foods rich in carbohydrates and some other foods containing precursors of acrylamide formation, there is the possibility of acrylamide creation, which is a mutagen and carcinogen material. This study aims to introduce and optimize a new method for determining acrylamide in potato chips using xanthydrol as a derivative representative with gas chromatography-mass spectrometry. Materials and Methods: Important factors in the derivatization and measurement processes were optimized using the one-factor-at-a-time method. The peak areas were assumed as the GC-MS response to evaluate the extraction efficiency of acrylamide, and optimization for all tests was performed two times. Figures of merit of the proposed method were evaluated. The amount of acrylamide in four potato chips samples, obtained from the market in Tehran city, was determined using the proposed method. Results: The optimum amounts of effective parameters, including derivatization temperature at 25oC, derivatization time (40 min), xanthydrol volume (40 µL), extracted solvent volume (500 µL) and pH=7 were determined. The figures of merit for the proposed method were at the ideal range. The maximum and minimum amounts of acrylamide in the chip samples were also measured. Conclusions: The performance and reliability of proposed method as a simple, efficient and rapid method for determining acrylamide in potato chip samples were demonstrated

    The Anti-inflammatory Effect of Ginger Extract on the Animal Model of Multiple Sclerosis

    Background: Experimental autoimmune encephalomyelitis (EAE), as an autoimmune disease in the central nervous system (CNS), is an animal model for multiple sclerosis (MS) mediated by T lymphocytes.Objective: To investigate ginger extract’s effect on reducing inflammation and improving the symptoms in the EAE model.Methods: The EAE was induced by injecting MOG35-55 and pertussis toxin into eight-week-old female C57BL6 mice. The mice were treated with an intraperitoneal injection of 300 mg/kg/day of hydroalcoholic extract of ginger for 21 days. The disease severity and weight changes were measured daily. Then, the mice spleens were removed; the gene expressions of interleukin (IL)-17, transforming growth factor beta (TGF-β), interferon-γ (IFN-γ), and tumor necrosis factor α (TNF-α) were analyzed by Real-time PCR and the percentage of regulatory T lymphocytes (Treg cells) was determined by flow cytometry. Serum nitric oxide and antioxidant capacity were measured, and brain tissue sections were prepared to investigate the leukocyte infiltration and plaque formation.Results: The severity of symptoms in the intervention group was lower than in the control. The gene expression levels of inflammatory cytokines, including IL-17 (P=0.04) and IFN-γ (P=0.01), were reduced. The Treg cells increased significantly, and the serum nitric oxide level was lower in the ginger-treated group. There was no significant difference in lymphocyte infiltration in the brain between the two groups.Conclusion: The present study indicated that ginger extract could effectively reduce inflammatory mediators and modulate immune responses in EAE
