    Parametrização das condições de obtenção do extrato do café verde e torrado com CO2 supercrítico

    The production and consumption of coffee in Brazil comes in an increasing considerably in recent years, accounting for 33.60% of world production. Roasted coffee contains high amounts of volatiles which provide their characteristic flavor and aroma, which are found mainly in their oil. Already, the oil obtained from green coffee is a material rich in unsaponifiables compounds and sterols. Facing the technologies used for the extraction of essential oils, the supercritical technology emerges as a clean and free of organic solvent remnant technique, when using supercritical CO2 as solvent, which presents characteristics: non-toxic, non-flammable and relatively low cost. Through the extraction kinetics (50ºC and 220 bar) it was possible to determine the extraction time of 3h 30 min for roasted and green coffee. By means of the Statistica 6.0® software, it was found that only the pressure variable had significant influence on the yield of extraction with supercritical CO2 for roasted coffee. For green coffee, it was found that none of the parameters was significant. The yield obtained for green and roasted coffee were 3.68 and 7.52%, respectively.A produção e consumo de café no Brasil vem em uma crescente considerável nos últimos anos, sendo responsável por 33,60% da produção mundial. O café torrado contém alta quantidade de compostos voláteis que proporcionam sabor e aroma característicos, os quais são encontrados principalmente no seu óleo. Já o óleo obtido de café verde é um material rico em compostos insaponificáveis e em esteróis. Frente às tecnologias utilizadas para a extração de óleos essenciais, a tecnologia supercritica surge como um técnica limpa e sem resquícios de solventes orgânicos, quando se utiliza o CO2 supercrítico como solvente, que apresenta caracteristicas: atóxicas, não inflamável e de custo relativamente baixo. Através da cinética de extração (50ºC e 220 bar) foi possível determinar o tempo de extração em 3 h e 30 min, para os grãos de café torrado e verde. Por meio do software Statistica 6.0®, foi constatado que somente a variável pressão teve influência significativa no rendimento da extração com CO2 supercrítico para o café torrado. Para o café verde, constatou-se que nenhum dos parâmetros foi significativo. O rendimento obtido para o café verde e torrado foi de 3,68 e 7,52%, respectivamente.

In this multiauthor review, there is a comprehensive analysis of the situation for infectious diseases, non-communicable diseases, their impact in the Americas region, given the migration crisis as well as the comparative status of the SDG 2030. This discussion can provide input for prioritizing emerging health problems and establish a future agenda

    La renovación de la palabra en el bicentenario de la Argentina : los colores de la mirada lingüística

    El libro reúne trabajos en los que se exponen resultados de investigaciones presentadas por investigadores de Argentina, Chile, Brasil, España, Italia y Alemania en el XII Congreso de la Sociedad Argentina de Lingüística (SAL), Bicentenario: la renovación de la palabra, realizado en Mendoza, Argentina, entre el 6 y el 9 de abril de 2010.     TPACK (Conhecimento pedagógico de conteúdo tecnológico): relação com as diferentes gerações de professores de matemática

    A atividade do professor exige alguns saberes, tais como conteúdo e conhecimento pedagógico. O desenvolvimento da tecnologia de informação e sua influência no processo de ensino tornou o saber tecnológico algo necessário ao professor. O modelo criado por Mishra e Koehler (2006) denominado TPACK (Tecnological Pedagogical Content Knowledge - Conhecimento Pedagógico de Conteúdo Tecnológico) propõe uma base de investigação das relações desses três saberes. Atualmente as escolas contam com professores de diferentes gerações. As gerações mais atuais, denominadas de gerações X e Y vivem em um contexto onde a tecnologia da informação é parte integrante do dia-a-dia. Para essas gerações, ocorre uma integração desses três saberes. Este trabalho teve por objetivo investigar e caracterizar as relações desses dois saberes (o Conhecimento do Conteúdo Tecnológico - TCK e o Conhecimento Pedagógico Tecnológico - TPK) em diferentes gerações de professores de Matemática. Para isso, foi realizada uma pesquisa com abordagem quantitativa com a aplicação de um questionário, mensurado utilizando a escola tipo Likert, cujo objetivo foi o de indentificar as atitudes de professores de matemática com relação aos saberes do TPACK e também quanto às gerações. A amostra foi constituída por 71 professores que lecionam aulas de Matemática no Ensino Fundamental e/ou Médio de 32 escolas, sendo 23 públicas e 9 particulares, da Diretoria de Ensino de Jaú. Com o teste t para realizar as inferências estatísticas, foi possível identificar que a principal diferença entre esses professores de Matemática não se refere ao que eles conhecem sobre tecnologia e sim em como eles utilizam ou não a tecnologia em seu dia a diaTeacher's work requires some knowledge, such as content and pedagogical knowledge. The development of IT and its influence in the teaching process has become the technological knowledge something necessary to the teacher. The model created by Mishra and Koehler (2006) called TPACK (Tecnological pointed Content Knowledge, pedagogical knowledge technological Contents) proposes a research base of relations of these knowledges. Currently the schools are composed by teachers from different generations. The current generations, called generations X and Y are living in a context where information tehcnology is an integral part of day-to-day. For this reaoson, a research was conducted as a quantitative approach with a questionnaire using a Likert scale. The objective was to identify the attitudes of teachers of mathematics related to TPACK and the generations. The sample was composed of 71 professors who teach classes in Mathematics in Elementary School and/or middle of 32 schools, 23 public and 9 private, the Board of Education of Jau. T test was used to perform the statistical inferences.     Evaluation of the stability of thighs and drumsticks boneless chicken under different conditions of industrial storage

    Abstract The sensory, physical-chemical and microbiological characteristics of boneless chicken thighs and drumsticks stored at different temperatures were evaluated. Samples stored at −6 and −12 °C, in natura and cooked, presented changes in sensory characteristics from the sixth and fifth month of storage, respectively. In natura samples kept at −18 °C presented sensory modification from the eighth month, and cooked samples did not show alterations during 12 months of storage. For lipid oxidation, differences were observed between −6 and −12 °C by the third month and between −12 and −18 °C after 12 months of storage. Related to protein oxidation, samples stored at −18 °C did not differ from the standard (0 days), showing values of 6.03 nmol carbonyl/mg protein after 12 months of storage. Samples under freezing at −6 °C for 12 months presented an increase in psychrotrophic count. This behaviour was not observed in the samples stored at −12 and −18 °C. Considering the different analyzes, the maximum storage period was 6 days at 4 °C, 8 months at –6 and –12 °C and at least 12 months storage at –18 °C
