    The winemaking industry produces large amount of byproducts, including grape pomace, stalks, and lees. Wine lees are a natural source of phenolic compounds, which have important antioxidant and biological properties. Due to the high quantities produced worldwide, this byproduct can be an ideal raw material for obtaining phenolic compounds that could be of interest in the food and pharmaceutical industries.     The Use of Grape Seed Byproducts Rich in Flavonoids to Improve the Antioxidant Potential of Red Wines

    The influence of adding seeds from grape pomace during Syrah wine fermentation in a warm climate has been studied. Seeds of Pedro Ximenez variety were rich in phenolic compounds, mainly flavonoids such as catechin and procyanidins. Changes in total phenolic content (TPC), total flavonoid content (TFC), and antioxidant activity of red wines were observed. These changes depended on the vinification stage and the amount of seeds (SW: 450 g or DW: 900 g seeds/150 kg grapes) applied. In general, antioxidant activity was greater when a simple dose (SW) was considered. Results indicate that seeds rich in flavonoids could be used as wine additives, which could improve the antioxidant potential of red wines in a warm climate.Ministerio de Economía y Competitividad AGL2014-58486-C2-2-

    Wine contains polyphenols that are responsible for its quality. Moreover, phenolic compounds have antioxidant properties and benefits on human health. Cyclic voltammetry (CV) was the first electrochemical method used for polyphenols characterization and determination of polyphenols content in wine products. Electrochemical behaviour of standard solutions of phenolic compounds has been investigated and evaluated the importance of the phenolic concentration and pH. The electrochemical parameters extracted from the voltammograms have been correlated with the antioxidant potential in wine products. In addition, CV allowed establishing differences in the antioxidant activity of wines with different addition of grape seeds. In winemaking by-products, different Ipa and Q500 values were found depending on the state of maturation of the grape pomace. On the other hand, the total flavonoids and phenolic acids contents were significantly correlated to the electrochemical parameters. Differences for the electrochemical parameters were found between by-products, being pomace and seeds which presented the greatest values of Q500. Simple regression analyses showed that voltammetric parameters are correlated to their values of lipid peroxidation inhibition by thiobarbituric acid reactive substances method. Our results open the possibility of CV as a promising technique to estimate the global antioxidant potential of wine products rich in phenolic compounds

    Extraction of antioxidants from winemaking byproducts: effect of the solvent on phenolic composition, antioxidant and anti-cholinesterase activities, and electrochemical behaviour

    Extraction solvent is a very important factor in the recovery of antioxidants from natural matrices. In this study, the effect of three solvents (ethanol, ethanol/water and water) on the phenolic composition, antioxidant and anti-cholinesterase activities and electrochemical behaviour of four winemaking byproducts (seeds, skins, stems, and pomace) was evaluated. Phenolic composition was determined by the Folin-Ciocalteu method and ultra-high-performance liquid chromatography (UHPLC), antioxidant activity by the capacity to scavenge 2,2-diphenyl-1-picrylhydrazyl and hydroxyl radicals, anti-cholinesterase activity by the Ellman's method, and electrochemical behaviour by cyclic voltammetry. Eight phenolic compounds were quantified with higher content in water/ethanol extracts (e.g., epicatechin in pomace: 17 mg/100 g vs. 7 and 6 mg/100 g in ethanol and water extracts, respectively), although there were some exceptions (e.g., gallic acid in seeds was most abundant in water extracts). Moreover, the highest total phenolic content (TPC) and antioxidant activity were found in ethanol/water extracts (between 2 and 30-fold the values of the other extracts). Overall, the most active extracts in inhibiting both acetylcholinesterase (AChE) and butyrylcholinesterase (BChE) enzymes were ethanol/water and ethanol extracts from seeds (between 31.11 and 53.90%). The electrochemical behaviour allowed for differentiating the extracts depending on the solvent and the byproduct. Our findings indicate that winemaking byproducts represent a source of phenolic compounds with antioxidant and anti-cholinesterase activities and suggest that cyclic voltammetry is a promising technique to evaluate the phenolic extraction process from these byproducts.FCT: DL57/2016/CP1361/CT0022.info:eu-repo/semantics/publishedVersio

    Determination of phenolic substances of seeds, skins and stems from white grape marc by near-infrared hyperspectral imaging

    Background and Aims:Winemaking generates a large quantity of grape marc that causes environmental and economic problems, which could be minimised by exploiting and adding value to these by-products. Marc is composed of seeds, skins and stems that are an important source of phenolic substances, which have antioxidant properties and potential benefits to human health. It is necessary to develop novel methods for assessing the composition of marc because conventional analyses are destructive and require lengthy preparation procedures and chemical reagents. Methods and Results: Near-infrared hyperspectral imaging has been used for evaluating 27 individual phenolic substances in the components of grape marc after freeze-drying, the only sample preparation step. By applying partial least squares regression to the spectral data, values of R2 up to 0.98 were obtained even for estimating some minor compounds. Conclusions: This methodology arises as an attractive alternative to analyse the phenolic composition of grape marc because of its speed and simplicity.     Potential of Cooperage Byproducts Rich in Ellagitannins to Improve the Antioxidant Activity and Color Expression of Red Wine Anthocyanins

    Cooperage byproducts are an important source of phenolic compounds that could be used for wine technology applications. The effects of the addition of two types of oak wood shavings (American, AOW, and Ukrainian, UOW) on the antioxidant activity and color of red wine anthocyanins, in a wine model solution, were evaluated by spectrophotometric and colorimetric analyses. Phenolic compounds from shavings, mainly ellagitannins, were determined by ultra-high-performance liquid chromatography/mass spectrometry (UHPLC/MS). Antioxidant and copigmentation effects varied depending on the type of shavings (AOW and UOW) and the phenolic concentration (100, 400, and 500 mg/L). Phenolic compounds from shavings improved the color characteristics (darker and more bluish color) and the copigmentation effect of red wine anthocyanins, being UOW a better source of copigments than AOW shavings. The best antioxidant activity was found for the 400 and 500 mg/L model solutions for both types of shavings.     Assessment of white grape pomace from winemaking as source of bioactive compounds, and its antiproliferative activity

    The antiproliferative effects of a purified white grape pomace extract (PWGPE), as well as of some phenolic standards on colon cancer cells were examined. The phenolic composition of the PWGPE was determined by rapid resolution liquid chromatography/mass spectrometry (RRLC/MS). The PWGPE had 92.6, 43.3 and 6.01 mg/g of flavanols, flavonols and phenolic acids, respectively and, along with pure catechin, epicatechin, quercetin and gallic acid, they were all found capable of inhibiting cellular proliferation. PWGPE (100 lg/ml) inhibited the proliferation of cells by 52.1% at 48 h, whilst catechin, epicatechin, quercetin and gallic acid (60 lg/ml) inhibited growth by 65.2%, 62.2%, 81.0% and 71.0%, respectively, at 72 h. The PWGPE is an interesting source of phenolic compounds with antiproliferative properties, that could be of interest in the food and pharmaceutical industries

    Valoración del nivel de actividad física y aptitud física en una muestra de universitarios: Comparativa tras la pandemia de covid-19

    The transition from secondary education to university education has become a critical moment for the lifestyle of young people, especially for the practice of physical activity. Therefore, the main objective of the present study was to assess the levels of physical activity in university students, by correlating the results of the IPAQ-SF and the different physical fitness variables (Eurofit). The sample consisted of 194 students of the Primary Education Degree, with a mean age of 21.37 ± 2.66 years. The main results obtained reflect the direct relationship between the practice of physical activity in general, and vigorous physical activity in particular, and optimal physical fitness of university students, linked above all to the strength component. As for the comparison between pre-pandemic (18/19) and post-pandemic (21/22) university students, the increase in physical activity after the pandemic did not show substantial differences in the physical fitness components. In conclusion, these results should lead us to reflect on the influence of an active lifestyle on physical fitness, which has an impact on overall health status and quality of life.El tránsito de la educación secundaria a la enseñanza universitaria se ha convertido en un momento crítico para el estilo de vida de los jóvenes, especialmente para la práctica de actividad física. Por ello, el principal objetivo del presente estudio fue valorar los niveles de actividad física en universitarios, mediante la correlación entre los resultados del IPAQ-SF y las distintas variables de condición física (Eurofit). La muestra estuvo conformada por 194 estudiantes del Grado de Educación Primaria, con una edad media de 21,37 ± 2,66 años. Los principales resultados obtenidos reflejan la relación directa entre la práctica de actividad física en general, y la actividad física vigorosa en particular y una óptima aptitud física de los estudiantes universitarios, vinculada sobre todo con el componente fuerza. En cuanto a la comparación entre los universitarios del curso prepandémico (18/19) y el curso pospandémico (21/22), el aumento de la actividad física tras la pandemia no reportó diferencias sustanciales en los componentes de la condición física. A modo de conclusión, estos resultados deben conducirnos a una reflexión sobre la influencia de un estilo de vida activo en la aptitud física, la cual tiene repercusión en el estado de salud general y la calidad de vida

    Conservation and Use of Latin American Maize Diversity: Pillar of Nutrition Security and Cultural Heritage of Humanity

    Latin America is the center of domestication and diversity of maize, the second most cultivated crop worldwide. In this region, maize landraces are fundamental for food security, livelihoods, and culture. Nevertheless, genetic erosion (i.e., the loss of genetic diversity and variation in a crop) threatens the continued cultivation and in situ conservation of landrace diversity that is crucial to climate change adaptation and diverse uses of maize. We provide an overview of maize diversity in Latin America before discussing factors associated with persistence of large in situ maize diversity, causes for maize landrace abandonment by farmers, and strategies to enhance the cultivation of landraces. Among other factors, maize diversity is linked with: (1) small-holder farming, (2) the production of traditional food products, (3) traditional cropping systems, (4) cultivation in marginal areas, and (5) retention of control over the production system by the farmers. On the other hand, genetic erosion is associated with substitution of landraces with hybrid varieties or cash crops, and partial (off-farm labor) or complete migration to urban areas. Continued cultivation, and therefore on-farm conservation of genetic diversity held in maize landraces, can be encouraged by creating or strengthening market opportunities that make the cultivation of landraces and open pollinated varieties (OPVs) more profitable for farmers, supporting breeding programs that prioritize improvement of landraces and their special traits, and increasing the access to quality germplasm of landraces and landrace-derived OPVs
