restaurants.This study also seeks to determine which restaurant ambience elements highly influence customer satisfaction.The elements of spatial layout, interior design, colour and music were measured. Quantitative data were collected from 411 respondents in Shah Alam, Selangor. It was found that colour is the element that is
significantly and mostly influences customers‟ satisfaction. More detailed findings and implications are also discussed
Scope Of Research on Sojourners in The Field of Tourism Studies
This study conducts a comprehensive review of the current body of literature in order to elucidate the origins of sojourner studies, provide a clear definition of the sojourner concept, a concise summary and description of the four primary discourses within sojourner-related research, critically examine existing studies, and offer insights into potential avenues for future research. Narrative review method was used to systematically compile and analyse all sojourner-related articles published in English-language research journals up to 2023. Using Google search and Science Direct, a preliminary literature search and a thorough search on the research topic were conducted, respectively. To ensure the validity of the study, the relevant literature was tagged using a "snowballing" approach. Then, the relevant articles in core journals were read one by one and the literature in the field of tourism was intensively read. Finally, the relevant information was annotated and categorized by topic. The conclusion focuses on identifying research gaps in the field of tourism studies in the four areas of research perspectives; content, methodology, and theory on the research theme, and argues that more interdisciplinary perspectives are required to advance research in the areas of identity construction, cultural identity, and cross-cultural well-being of sojourners. This is the first systematic review of research on sojourners. It synthesizes the findings of 52 relevant research papers by analyzing publication trends. Key research gaps are identified and directions for future research are provided
Restaurant's Atmospheric Elements: What the Customer Wants
AbstractThe purpose of the study is to examine youth customer behaviour due to the restaurant's atmospheric element environment. It also explores the environment of the restaurant and the use of atmospherics by the restaurateurs through the reactions of the customers. The dimensions of colour, design, lighting, and restaurant layout, among others, were measured. Qualitative data taken from 300 youth customers were analyzed, and interpretations of the relationships were made. It was found that atmospheric elements contributed significantly in each representation of customer behaviour
The role of management commitment of service quality through job embeddedness on service recovery performance / Norhamizan Hamir
Service recovery is a corrective action that is carried out immediately by the service provider if the service offered went wrong. The employee is responsible to handle the situation in order to ensure that the customer who might not be satisfied with the situation that happens turns to be satisfied. One of the concepts of the service recovery that have been discussed in the literature is related to service recovery performance. The researcher defined that service recovery performance is to focus on the performance of frontline employees. Service recovery performance is not about a strategy or action to handle a service recovery situation which among others are an apology, giving discounted price and compensation but more towards the behavior of the frontline employees getting engage in resolving the situation. Past researchers have identified that the management commitment to service quality which represented by several indicators may lead to the service recovery performance of the employees. However, the relationship has a missing link. The objective of this conceptual paper is to further discuss the relationship between management commitment to service quality and service recovery performance with the present mediating role of job embeddedness among frontline hotel employees in four and a five-star hotels. The proposition suggested in this paper may require support with further empirical findings to be carried out

Businesses are made up of many sub-structure of activities. One particular activity that demands high attention is procurement. In the hospitality industry, the procurement department plays a major role in ensuring supply of raw material and goods are planned, purchased, distributed, and consumed efficiently. An influx of activities such as requisition, acquisition, and quality check is done in this department. In estimating the total cost of acquiring goods and services, it is important for organizations to identify unit costs and other costs associated with operations and maintenance that occurs during purchasing and conserving of goods. Recent studies have reported the usage of an Electronic Procurement System (EPS) that replaces the conventional procurement system typically used in Hotels. This paper aims to explore the current practice, effectiveness and efficiency of the procurement systems used in Malaysian hotels through in-depth interviews. Findings of this study will assist hospitality businesses to analyze their procurement activities and develop proper strategies that enables them to reduce costs, increase efficiency, and most importantly, improve their bottom line

The objective of the present study was to use a questionnaire on knowledge, attitude, practice (KAP) to assess food safety culture in government hospital kitchens. Four different government hospitals kitchens with food safety management system (FSMS) in place located in Selangor and Federal Territory of Kuala Lumpur were evaluated. The questionnaires were used to assess the basic food hygiene knowledge, attitude and practice of the hospital food handlers and samples were collected from the selected critical sampling location (CSL). The results suggest that food hygiene and safety control is always considered as important and prioritized in most of the hospitals. Attention needs to be given to KAP on time and temperature control that are indicating a lower score to have a total positive prevailing FS-culture
Fermentation Time in The Tape Making Process Affects the Chemical Quality of Corn Tape
Consuming fermented foods to increase microbial diversity and high-fiber foods will provide more significant synergistic benefits. The purpose of this study was to analyze the chemical quality of corn tape with different fermentation times. This research was an experimental study using a completely randomized design. The treatment in this study was the length of fermentation in making corn tape, including five days, six days, and seven days. The analysis results showed significant differences in the protein content, lactic acid bacteria, pH, antioxidant capacity, and flavonoid content of fermented corn tape at different times. The longer the fermentation, the higher the protein content, lactic acid bacteria content, and flavonoid content, the stronger the antioxidant capacity and the more acidic the pH of corn tape. The conclusion is that the fermentation duration can affect corn tape's chemical quality

Measuring organizational commitment through its relationship with organizational identity, organizational citizenship behaviour and organizational employer branding / Hashim Fadzil Ariffin
The main objective of this study is to investigate the structural relationships between organizational identity (OI), organizational citizenship behaviour (OCB), organizational employer branding (OEB) and organizational commitment (OC) among Malaysian hotel employees. The aim is to identify the perception of employees concerning the OI, OCB, OEB and OC that they have perceived at their workplace. This study also assesses the mediating effect that OCB have through OI on OEB. Systematic sampling was used in this research. The data have been collected through sets of questionnare answered by 624 respondents who are hotel employees in Malaysia. The result of this study reveals that OI, OCB, OEB and OC are perceived as valid constructs. Findings also show that there are relationship between OI and OCB, between OI and OEB, between OI, OCB and OEB, OEB and OC, and the relationship between OI, OCB, OEB and OC is confirmed through Structural Equation Modeling. Respondents perceive that the more they possess OI, OCB and OEB, the more they are committed to their job. These findings are important to the organizations to develop programs through employer branding that could retain the employees working with them. Limitations and future research directions are also discussed.

EXAMINING MALAYSIAN HOTEL EMPLOYEES ORGANIZATIONAL COMMITMENT BY GENDER, EDUCATION LEVEL AND SALARY
The purpose of this study is to investigate the Organizational Commitment (OC) among Malaysian hotel employees. The aim is to identify the perception of employees concerning OC that they have perceived at their workplace and, how gender, education level and range of salary affect them. The data have been collected through sets of questionnare answered by 624 respondents who are hotel employees in Malaysia. The dimensions of OC which are affective, continuance and normative have been analysed using exploratory factor analysis (EFA). The data then been analysed using t-test and analysis of variance (ANOVA) to find the significance differences between gender, level of education and salary scale with the three dimensions of OC. The result of this study reveals that there is no significant diffrences between three dimensions of OC and gender. Findings also show that there are significant differences between education level and three dimensions of OC. Similarly, the results also display significant differences between salary scale and, affective and continuance commitment but not with normative comitment. Managerial implications, limitations and future research directions are also discussed
